Saison with lavender
Matisse is our way of showing that modern independent beer needn't shy away from the canonical styles that brought us to where we are today. This classic saison is inspired by traditional French and Belgian farmhouse beers, and we chose a name that echoes the same origins. The French artist Henri Matisse captured lively scenes of the same French countryside where the rustic saison’s flavor profile was pioneered.

L: Golden, light haze, light head retention
S: Sweet, lightly fruity. Lots of dry malt, straw, grass, Light barnyard funk and yeast
T: Barnyard comes through heavier here. This is a dry saison primarily, yet it has a light funk. Malts are dry and clean too, straw, small phenol spicy note. Sweet yeast breadiness.
F: Light and somewhat easy to drink. Dryness adds balance. High carbonation.
O: Great saison along more traditional lines. Light and refreshing yet complex and flavorful

T: Barnyard comes through heavier here. This is a dry saison primarily, yet it has a light funk. Malts are dry and clean too, straw, small phenol spicy note. Sweet yeast breadiness.

Poured into chalice: color is straw, slight haze, huge 2 inch head off the initial pour that lingers quite well, head color is off white with fine bubbles; good effervescence rising from the glass bottom.
Smell is lightly malty, some residual sweet notes, hints of yeast byproducts - phenol, pepper, clove.
Taste is similar with pleasant maltiness, though a bit neutral, very light bread and biscuit notes; yeast flavors are peppery, phenolic, feinter clove and other spice.
Mouthfeel is moderately carbonated, light sweetness in the middle then drying on the tongue. A little on the sweeter side for saisons.
Overall a simple, moderately malty saison, a lighter yeast spiciness and hint of residual sweetness.

A slightly hazy golden color, very active with a white foam cover that slowly spreads out but leaves plenty of coverage.
A seriously sweet and funky nose here....dense wild fruits, chemmy yeast thing, sweet 'n sour style maltiness. A bit too sweet and sour style aroma from the yeast. The traditional French and Belgian style saisons have a major, earthy and herbal kick to the wild funky yeadt thing. Most American versions, like this one seriously lack the dry, earthy effects from both traditional old world hops and wild style yeast.
The flavor has a rather odd, "sweet tarts" candy like sour apple and sweet berries thing happening. A bit of cherry cough syrup, herbs and only minimal spices. There really isn't anything that traditional about this Saison. This has a rather light and juicy feel and flavor, not at all earthy, no spice kick Nd no real wild funky complexity to the yeast strain. A very juicy but jazzy, carbonated feel, but lacking any dry-earthy bite or spice kick.
Not exactly sure why 80% of American "Belgian "styles" fall so far from the actual, traditional versions. The yeast strains or execution of, falls WAY short in complexity or depth of charecter. The hops should have a nice dry, earthy punch, light and crispy, but smooth style malt effect....It's just not happening for me unless it's from Belgium or France.

Poured into a snifter. A hazy yellow straw color with a modest white head. Lemon/lime, peppery spice, faint farmhouse funk, and bread on the nose. The taste was fruity up front with the above flavors, then yielding to a slight peppery and floral funk. A nice spiciness lingered on the finish. Clean and dry. Carb level was above medium and it was light on the palate. Very nice.
