Four months passed as the wild yeast strain, Brettanomyces Trois, fermented this beer within the confines of fresh brandy barrels. Born was Paradiso, a zymurgic journey toward heavenly flavors. Look for hints of green apple, guava, vanilla, and nectarine as you sip. It’s bright, smooth, and tropical – an imaginative, ultimately divine experience.

bottled 7/26/13, poured into a snifter
A- pours a clear bright golden color with a small foamy white head that reduces to a small film, leaving some lace behind
S-green apple, guava, floral notes, vinous, brandy, alcohol, funky Brett, wet hay, earthy notes
T- sweet honey malty base with some floral notes, light funk with some dried hay, boozy brandy on a dry finish
M- med-light body with some low carbonation, leads to a foamy mouthfeel and a dry finish
O- nice sweet boozy notes mixed with some funky Brett

Thanks to jdiddy for the opportunity to try this. Pours a burnt orange hue with a slight haze to the clarity. Head is bright white and dissipates towards the shoulders into a creamy froth and a soapy slick. Nose reveals apricot and a medicinal quality most likely attributable to the brett. Taste follows nose with the addition of a slight lactic quality. Mouthfeel is light and lively with a mild acidity. Overall, not overly sour but an interesting American Wild nonetheless.
