This one pours out to a dark brown in the glass with an average-sized head. The aroma is of spice, almost clovelike. The taste is quite good. This beer is like a hybrid of a porter and a hefe' in my opinion with flavors of roasted malt combining with a light banana. Better than the six and maybe a touch better/on-par with the 2 and 4.

Blackened Sienna. Minimal to no head.

Smells like a mixture of kibbles and alphabets cereal with some swiss miss on top.

Super English muffinish. Roasted, toasted, and plain old burnt. Tar with a splash of coffee.

Mouthfeel. Nice finish! There is a deeply hidden rumraison icecream lactic acid twanf going on in there. I dig it. Medium body. Little carbonation, needs more. Esters attack in the after taste.

Drinkability is average.

Overall this seems a bit discordant. The parts are all here but they don’t fit together…much like this entire wheat experiment.

The Bell's Wheat 8 pours from the bottle a murky dark brown with red accents and a bone colored 1/2 head of bubbles. Spotty lacing..this one looks good in my glass. Aromas begin with sweet roasted malt and wheat husk along with mellow cocoa powder, burnt coffee and a hint of clove. Bready yeastiness as well.

First sip brings roasted toasty wheaty maltiness along with a mellow mix of cocoa and burnt coffee tones. A nutty flavor moves in along with some dark fruits. Yeasty spiciness with clove begin again noticeable in the flavor. Goes down a bit dry on the finish.

Mouthfeel is a bit light with a somewhat chalky aspect as if flows down. I could see having a few of these as it's probably my favorite out of the four so far. An interesting brew that's worth a shot if you come across it.

Final one in the series...thanks to AKSmokedPorter for the fourth time...

Pours much much darker than the other three. This one is a dark brown color with some orangish highlights. Head was actually reasonable on this one and only came up to a quarter inch, but it went away.

Smell is some lightly toasted malts with a good wheat and yeast background. A bit of nuttiness comes though. Very weak though. Smells fairly good.

Taste is more forthcoming than the aroma. Spiciness comes one when it hits the tongue, as has been with the rest of the series. A bit of nuttiness and some biscuity malts work their way in. The wheat is evident in the finish.

Mouthfeel is a bit thin again, but this probably chimes in near medium bodied. Very crisp on the tongue, but not near as much as the six. Much better drinkability than the previous two. This one is pretty refreshing.

12 oz bottle pours a cloudy, dark brown body that is close to being opaque. Small khaki head is shortlived, and leaves minimal patches of lace. Looks like a porter, as other reviewers have noted. Aroma is very toasty, somewhat like burnt wheat bread. Notes of clove, choclate, and tobacco add to the very interesting nose.
Mouthfeel is unremarkable, with a medium body and restrained carbonation.
Taste is much like the aroma, with burnt wheat toast, chocolate, tobacco, and some earthy hop bitterness. A vague fruity component never fully emerges. Some dark roasted, burnt coffee like, bitterness comes into play at room temperature.
I like this one and consider its drinkability to be good. Tasty and complex, but rather odd for style.

The color of this beer rules out its classification (at least as of when I reviewed it), a Dunkelweizen would be closer to the mark. Dark muddy chocolate appearance, nice creamy flat head of a tan color. Laces in isolated punctuation marks. Funky aroma, acrid and sweaty with yeast and some wet paper. Mouthfeel is interesting, seems thicker to start but with an evaporating qualitiy to it. Flavor has some elements of instant black coffee to start out, not bad, but slightly odd. Lemony backdrop, brown sugar of a dark variety and yeasty esters with a bit of a candy impression. Like the mouthfeel, the flavor starts bigger and then diminishes. Looks dark and intriguing but the smell of this edition puts me off, and the flavor is not big enough to bring it all the way back.

Pours a chunky tan head over a dark brown, nearly black, body. Head recedes leavinga few lone bands of lace. Aromas of tart fruit, cloves and touch of yeast. More clove in the flavor, as well as a bit of peppar, some vinous fruit, a judicious dose of chocolate and a touch of roasted malt-like flavor. A subdued sweetness in the background. Little to no hop flavor, with a mild to moderate bitterness. Moderate body and carbonation. Smooth in the mouth with a bit of a bite at the end.

Not the greatest of the Franken-wheats, but not the worst either. In spite of some of the curious flavor combinations, I found this ale to be quite drinkable. Still, it’s a bit of a puzzler for the mind/tongue.

A- This beer pours a thick opaque dense brown body with a tan head that is thick and creamy. A few bubbles of carbonation at the bottom but the body is too dark to see through.

S- The smell of dark coffee roasted wheat with a strong yeasty smell hits you at the beginning. There is a slight tartness and earthiness to the roasted wheat aroma that is very unique like a funk note from a wild beer but much softer.

T- The taste has a strong roasted malt flavor with a slight bitter note that adds nice complexity. The end has a little fizz taste with a faint hint of bitter hops but no real sign of alcohol. As it warms there is a very faint note of cola without the sweetness.

M- This beer has a medium mouthfeel with a fizz texture that is a bit watery in the middle.

D- This was a fascinating beer. It had a little stout quality from the roasted wheat. It had a little Wild Ale decomposing leaves funk, mostly in the nose. It is a good beer with lots of character.

About the closest that burnt sienna gets to absolute black under a trim ochre rimming.
Smells of breakfast cereal, cocoa powder, and old burnt coffee.
It begins with a roastedness that is primarily bready -- like toast, or kilned grain-- then dives deeper into espresso and tar. Perky fruitiness persists with green raisins, plantains, and red grapes. Glimmers of vanilla, peppercorn, and clove esters, along with a doting spiced rum esteriness. The close is bright with citric-leaning hops, only partially offsetting the ongoing oily chocolate and weizen-yeast blanket.
Medium+ in the mouth with a minor but perky carbonation giving spark to the yeast-slurred body.
Of all the Wheats, this comes closest to nailing a cohesive malts/yeasts/hops equation...but not necessarily harmoniously. Honestly, this is cacophony, but I generally like it. And for more honesty, I'd say that the whole Wheat experiment itself was not all that successful (Wheat Love excluded, so far). But this gets my nod as clangingly pretty solid.

Picked up a single at Riley's here in Madison. 8 yeasts and 8 wheats? This stuff had the potential to be a real circus.

Pours a nearly opaque dark ruddy brown, like a root beer popsicle, with a finger or two of khaki foam. Nose is a mixed bag of spicy belgian yeasts, some clove/banana, and sadly a hint of that Wheat Four barnyard. Taste is shockingly subdued much like Four as well - sour wheat, some belgian strong dark spices, a hint of fruit perhaps and the slightest chocolate note in the finish. Mouthfeel is smooth and slick, very drinkable. Overall, I was shocked how neutral this beer was. It's as if the 8 yeasts and wheats somehow cancel each other out. In the case of this series, slightly less is more, as the Wheat Six was by far my favorite and most flavorful of the series. Can't wait to try the Wheat Love, surprise surprise.

Opened after a long day of flying back to Madison from Charlotte

appearance: very dark, appearance similar to a cola, some faint ruby hue, muddy. creamy tan head forms, lacing is fair

smell: baked grain, dark wheat, clean and crisp yeast characteristic, slightly musty, earthy...i'm not getting the marijuana characteristic in the aroma(not like i would know what that smells like!, ha)

taste: rich, dark wheat, baked grain, touch of clove, slight chocolate, clean yeast flavor, barley, slight bitterness, dry toasted malt

mouthfeel: medium-full body, smooth

drinkability: pretty drinkable

Cool, dark pour. Surprising. Nice tan head.

Smell is pretty much dominated by yeast. Maybe a little chocolate. Too yeasty.

Roasty flavor. Very full and yeasty mid tongue. Leaves yeast flavor in the mouth for a long time.

Sharp carbonation. Ouch. Not too nice.

The 2468 concept is cool, but the beers are just so so, although this one isn't very good. Just way too much yeast.

Pours a very dark brownish black with a thick pillowy head with decent retention.

Smell is has a nice roastyness with strong wheat and grain smells as well.

Taste is a nice roasted malt flavor with hints of wheat and a nice spicy clove taste in the ever so slight hop finish.

Mouthfeel has a nice carbonation to it and the mouthfeel is clean and light.

Overall a very drinkable beer, in fact I have enjoyed this one the most out of the series.

This Bell's Wheat #8 pours with plenty of carbonation that slowly falls leaving a loose rocky head. The aroma is pretty funky and not really in a good way; the best description is of slightly musty, wet grain (basically what's left in my compost bin after I make some homebrew). I get past the nose and it tastes better than it smells. There's some toffee-ish malt flavors and maybe a hint raisins and grape skins; tannin I guess. The balance is about right between the hops and malts. The malt flavors have a definite toasted quality to them. There's a slight bit of plum-like fruitiness adding to the complexity. The tannic nature of this beer detracts from the otherwise smooth mouthfeel. The finish is just a touch tart. A highly sessionable brew. An interesting beer, but one that I think more brewers would appreciate, than beer geeks, especially given it's place in the series of Bell's wheats.

Wheat Eight pours like a stout..I am not kidding...this stuff is extremely dark brown with light amber tinges on the edge but it looks very, very stouty. The head is small and white, and fades back pretty quickly. Smell is very similar to 6, yeast and malts, but it actually seems slightly subdued.

The flavour on this again, starts out sweet...it then fades into malt. The caramel aspect from 6 combines with the chocolate added in this batch. The esthers are still lending a twinge of oddness (in a good way), the toasted sprouts are further squashed down (a good thing) but do add a certain earthy / grassy sensation. There is also another new sensation present from the extreme yeast combination that I can't pin down. This culmination of the Wheat Project is very complicated...I like it but I think 6 was the best of the four beers for me...this just adds a shade too much complexity for a wheat beer IMO.

Mouth on this is still good and creamy. It's still very thick for the style, and it's still quite full. I like it. The drinkability, also good. A pretty smooth finish, easy drinking...just plain tasty.

Overall, this finale in the basic beers of the Wheat Project is quite solid. I think 6 was my favourite for its extremely creamy and malty profile, but the complicated flavours that Eight brings to the mouth are also worth checking out. Kudos to Bell's for this interesting series of beers and I look forward to trying out the Wheat Love Ale soon...

The beer pours brown with some ruby tints, and a small off-white head. It smells like chocolate, roasted malt, some dark fruit, a bit of wheat and some banana too. I get all kinds of tastes with this. It tastes like chocolate, bananas, peppery spicyness, along with a bitter hoppy aftertaste. It starts off a bit sweet and finishes bitter. The mouthfeel is medium and relatively smooth. The drinkability is pretty good as well. It's not what I expected from a wheat beer, but I thought this one was pretty good. I think it's better than the Wheat 4 and 6. Hopefully Bell's will try another Wheat series in the near future.

A surprisingly dark brew for a wheat ale. Hosts a nice deep tan head. Shows nice carbonation in the body . Smokey sweet wheat hits, the nose after a pass, like molases and sausage. Enters the mouth thinner than the color and nose would have lead you to expect. A little smoke and watered down malt on the palate. A slight rechness develops tword the end and then sours a bit on the mouthfeel and finish. Comes off kind of like a weak porter. Easy to drink but not desireable.

Pours a deep, cloudy brown with a medium tan head that, unexpectedly, doesn't last long. Aroma is full of raisins & cloves, and has a thick bready character that reminds me of Oktoberfest. The first sip is markedly different from the smell; a crisp roastiness combines with a round, fruity-raisiny sweetness to remind me more of a Doppelbock than anything else. The end of the sip features a pleasant hop tingle. In the aftertaste, after a strong wave of espresso, is just a trace of the sharp, clovey phenolics I would've expected to dominate this brew. The body is somewhat awkwardly light for the heavy roast and dried fruit notes, but I'm of two minds about this because it also improves the drinkability.

This beer is a little all over the place; calling it a wheat beer, while perhaps technically accurate, is a bit deceiving. German porter? Weizenbock? At any rate, I'd come back for the espresso finish alone. Mmmm.

appearance: The pour into my imperial pint creates a 1" tan head that slowly dies down. A creamy layer of carbonation remains on top. The beer is a very dark brown in color, the only light that escapes is around the edges.

smell: I first notice the old coffee like smells of roasted malt, and it is pretty considerable. Aromas of wheat toast, nuts, and old banana are also present. There is a strange aroma of old green vegetables, kinda musty. Hop presence is moderate.

mouthfeel: The carbonation is a medium and smooth, the body creamy and somewhat heavier than medium.

taste: Alot of toasted malt and a slight coffee flavor. A touch of cocoa. An earthy nuttiness is present. Some yeastiness is in there. The finish is of a slight bitterness and lingering toasted flavors, and is dry.

drinkability: i could have a few of these, not bad

The batch # 7133 printed on the back label indicates a bottling date of November 7, 2005. Received from CRJMellor in SS '05.

Seems I liked this more than the average bear. Even for a dark wheat, this was surprisingly dark in color. Rich, roasted malt flavors up front that immediately called to mind a porter. After a second, some muted, slightly fruity yeast notes eased through the flavor. Quite robust and a bit different, I wouldn't mind seeing this as a regular offering.

It poured a dark amber to brown and was topped by a thin tan colored head that receded quickly. The aroma is banana/clove like most of this series with the clove more pronounced in this version. Just a little toffee on the finish. More clove, very little banana in the flavor. There’s also a little toffee, and a touch of sherry in the finish. Just a hint of alcohol and bitterness. Thin mouth feel, and just an OK drinkability. When I saw the color of this beer, I was anticipating a really nice beer, unfortunately this was a little disappointing.

Picked up a six pack of this for 5.00 at Martha's the other day.

Pours a dark reddish brown and hazy. It has a thin tan head that dissapates quickly with almost no lacing.

Scent is of sweet malts, toffee, burnt coffee and yeast.

Taste is pretty much as the nose goes with initially sweet malts, nutty with just a hint of mild dark fruits. It finishes dry and leaves me with a heavy metallic taste that lingers.

Mouthfeel is medium to full bodied creamy, smooth and a bit light on the carbination IMO.

Drinkability is average at best. I couldn't sit down to a bunch of these, they would get old after 2 or three. Will I drink the six pack? Yes, eventually just not all tonight.

Not bad but not great either. Nothing really stands out or makes this beer better than any other dark wheat. Glad it was so cheap.

Thanks to orbitalr0x for this one.

Poured a cloudy, murky brown hue with a two finger tan foamy head. There was good retention and lacing.

The smell was heavy with toasted grain aroma. There were elements of coffee and cocoa as well.

The taste was essentially a combination of a roasted coffee and yeasty wheat flavor. Good coffee bitterness and a nice biscuity aftertaste.

The mouthfeel was full and extremely dry.

A good drinkable wheat ale. My first experience with Bell's with many more to come.

On draft at the Eccentric 11/16...
Appears a dark unfiltered murky chocolate brown with a thick tan head. Scattered lacing is left around the glass.
Smell is or rich, chocolate, yeasty as hell disaster, and malt craziness. There seems to be too much going on with something a tad bit unsettling and bizarre. Even the folks sitting next to me had it at the same time and the one guy said he thought it smelled like actual crap. Mild amount of a plastic smell too.
Taste is similar to the crazy aromas with an almost wine like taste lingering. Lots vinous and medicinal stuff going on that I don't want to finish. Seems to be borderline "fishy".
Mouthfeel is funky and wierd. Can't say it's good at all. It also seems over carbonated.
Drinkability...not overly appealing. It's just really odd with some odd chocolate and wheat notes coming through. A mad scientist mix that seems way too raw at the moment. It would probably still be fermenting in the keg if they didn't put this one in the cooler to tap. 8 wheat malts, and 8 yeasts! Insane! I have heard that it is much more settled in the bottle but that has yet to be observed by me. I know it was a fresh keg b/c it was at the source itself. I'll check it out again in the bottle.
