FIrst off, let me say I typed in a long review and hit the delete or back key by accident. (I'm drinking doppelbocks - give me a break.)
So, this could be classified as an American doppelbock. Meaning hops and bitterness. My understanding of the style is malt and sweetness. Right now I am tasting a Spaten doppelbock next to Consecrator. Not too close. As mentioned before, hops and bitterness in the Consecrator. Spaten is more malt and sweetness. And Spaten is not, imho, as good as Ayinger doppelbock - talk about malt!
In summary, Bells is still one of the best breweries out there. And Larry Bell is one of the outstanding craft brewing advocates. Consecrator is a good American interpretation of doppelbock. But some things should not be interpreted.
Larry, if you read this, my review has nothing to do with the fact that my wife's favorite beer is Bell's Two Hearted! Thanks for all YOU do. "Stay Two Hearted" - your autograph to my wife.

A - pours a deep ruby reddish brown. Nice off white fluffy head that reduced quick. not much Stick.
S - Figs, malts, bread dough.

T - Malt forward, bread dough, figs, raisins, balanced with some dry hops in the finish.

O - Solid brew from Bell's. Drinks really easy and is nice on the palate. Definitely worth a drink.

This beer needs to become more popular. Well done Bell's on a difficult style that doesn't seem to jump the Atlantic very gracefully. This beer is best about 20 minutes before it's allowed to warm all the way to room temperature if that makes sense?

Bought last June at Philadelphia's Craft Beer Outlet.. Bottled 1/23/13, so it's just over a year old. Kept cellared at 55 degrees until recently, then refrigerated at 48 degrees.

Liking the label graphic of twin goats. Double Bocks?

Poured from the 12 oz. bottle into a Samuel Adams nonick.

a: Clear ruby-copper with a three-quarter inch offwhite head which receded to thin even surface foam but virtually no lacing.

s: Vinegar. Hope I didn't wait too long to drink this!

t: Mild caramel malt with some slight bitterness. There is also an underlying vinegar tinge, but not enough to be particularly objectionable. High ABV is well hidden. Mellows out with a little fruitiness later.

m: Light to moderate. and smooth.

o: Tasty enough, but I fear this particular bottle did not age well. The vinegar aroma hangs on, as does some similar flavor. As long as I don't inhale it's at least drinkable, but if I do inhale I have to put it down and cough.

- pkg. 1/23/13. Consumed 11/6/13.

A: A coppery-orange pour appears garnet red in a chalice. No head formation, no lacing, and a very quiet demeanor of carbonation.

S: Malt forward nose, sweetness residual of cystal malts, soft toasty dryness with a light mention of fresh green hops.

T: Grainy, worty, with a light toasted dry nature, but still shows a lot of fresh wet grain character and flair. Soft hay and greenery hops, dry sweetness, dark crystal raisiny sweetness comes in flashes. Nobel hop variety more noticeable in flavor then nose, herbal, but finishes with a spicy bite.

M: Malty mouthful, chewy thickness, easy going carbonation with a warming toastedness and alcohol spiciness detected on inner cheeks.

O: Overall a nice malty depth, very good flavor, definite try per style.

Appearance- dark orange-red, beautiful, light carbonation reflected in a whispy head

Smell- nice malt-forwardness, aromas of dark fruits (cherries, plums) and slight hop spice

Taste- wow, brilliantly complex. Starts with some of the softer caramel and toffee notes and hits the heavy malt guns mid-tongue with some grains to boot, fades with some of the sweet characteristics it started with

Mouthfeel- medium/full body, velvet on the palate, low carbonation with malt forwardness gives in to a sweet silkyness

Overall- a great beer, I'm don't normally seek out German styles but this is one to behold.

12oz Bottle from the Tampa FL Total Wine for $3

Appearance - Hazy brown colour with an average size frothy beige coloured head. There is a low amount of carbonation showing and there is some fair lacing. The head lasted for around 2-3 minutes before it was gone.

Smell - Malts, caramel/butterscotch, anise, dark fruits, an earthiness

Taste & Mouth - There is a below average amount of carbonation and I can taste malts, caramel, and dark fruits. There is also an earthiness and some anise.

Overall - Not as good as I was hoping for. Still a decent brew but lacking in the mouthfeel and a little too earthy for me.

12 ounce bottle into tulip glass, bottled on 1/22/2013. Pours slightly cloudy reddish copper color with a 2 finger fairly dense khaki head with good retention, that reduces to a small cap that lingers. Slight foamy lacing clings on the glass, with some moderate streaming carbonation. Aromas of big caramel, brown sugar, pear, apple, raisin, toast, brown bread, floral, toffee, and yeast earthiness. Very nice aromas with good balance and complexity of malt and yeast ester notes; with good strength. Taste of caramel, toast, molasses, raisin, pear, apple, brown bread, floral, light pepper, toffee, light nuttiness, and yeast earthiness. Lingering notes of caramel, molasses, toast, toffee, raisin, pear, brown bread, light pepper, and yeast earthiness on the finish for a good bit. Very nice balance and complexity of malt flavors with moderate fruity esters; with good robustness and zero cloying flavors after the finish. Medium carbonation and medium-full bodied; with a fairly creamy and slick mouthfeel that is good. Alcohol is very well hidden with only a light warming noticed after the finish. Overall this is a very nice doppelbock style. All around nice balance and complexity of malt flavors with moderate fruitiness; and very smooth to sip on. A very enjoyable offering.

Poured down the center of a Left Hand balloon glass from a 12oz bottle.

Appearance: A ruby amber pour settles with less than half a finger of khaki head. The head quickly recedes and leaves a small halo of foam. Very little lacing.

Smell: Sweet malts, caramel, crusty wheat bread, a touch of honey, lager yeasts, and a hint of dark fruits.

Taste: Plenty of caramel, toasted wheat crust, roasted nuts, a hint of hop character. Big malt flavor throughout.

Mouth: Medium bodied with little carbonation. Incredibly smooth and no real heat despite the ABV.

A fairly decent doppelbock but nothing to scream and shout about.

A-Clear ruby, not much carbonation or head for that matter.

S-Very malty, lots of caramel, some cherry, syrup some dark fruits.

T-Not quite balanced, very malty, mainly caramel, candied sugar, tad too sweet, syrup and tad bit of dark fruits.

M-Lighter fro the style, not much carbonation, on the watery side.

O-Maybe because it wasn't fresh that hurt it, but an 8% doppelbock should hold up for a few months. Just a miss by Bell's.

A- Pours a viscous murky amber brown color. Little head to speak of.

S- Massive caramel. A ton of fig and raisins. A german yeast strain. A syrupy smelling beer.

T- A big caramel flavor at first. A candy sugar flavor and a yeasty undertone. A huge dark fruit profile to this beer. A lot of figs, and plums in the beer. A grainy, yeasty spicyness under the beer main flavors. A fairly simple flavor profile but well balanced.

M- A thick beer. Syrupy in the mouth. Medium carbonation, semi sweet. Surprisingly easy to drink for me.

O- A solid Doppelbock, nothing more. A fine example of the style but not one to seek out.

Poured into a snifter.

A: Hazy red-brown with one-finger, fizzy, off-white head that lasted half a minute. Not much lacing.

S: Caramel malt and fruit.

T: Moderate to high sweetness and light bitterness. Caramel malt. Figs and other dark fruit. Toasty finish.

M: Medium bodied with fizzy carbonation. Thin feeling.

O: Pretty good Doppelbock. There are better ones out there.

Pours a clear reddish amber with a half inch cream head that leaves minimal lacing and dissipates fairly quickly.

Notes of deeply caramelized malt and nutty toffee are accented by toasted breadcrust and slightly fruity undertones. There's a bit of floral hop presence.

Flavor is nutty and sweet, with cola notes, almost ginger-like, adding complexity. Malt dominant, a bready, toasted, nutty quality hits mid palate to dry up the finish a touch. Underlying specialty malt fruit character surfaces at the brining, but is overtaken by caramel sweetness.

Body is moderate to slightly full, with carbonation a touch on the prickly side, and moderate alcohol warmth.

Definitely a malt forward beer, with enough character to keep things from being too cloying, but lacks the complexity of more traditional doppelbock melanoidin profiles.

We pour a brew of clean reddish honey. It holds a tight two finger head of caramel colored bubbles, showing nice retention. Drippy sheets of lacing are left around the glass. No haze or sediment is noted, and carbonation appears to be light. The aroma gives adjuncty metallics, roasted caramel dryness, black breakfast tea tannins, moderate buttery diacetyls, banana esters, dark wheatiness, biting booze, light lemon freshness, and fusel phenolic medicinals. Our first impression is that the flavoring is cloyingly sweet, but does dry and roast by the end, making for a pleasant balance. The taste opens with chalky dryness of pale and caramel grain, mild roast, liquid honey sweetness, salt water taffy, and stark medicinal phenols. The middle comes to a peak with sweetened iced tea, soft citric hops, continued caramels, white sugar sweetness, and pear fruitiness. Finishing the sip we get bright banana esters, warmed wheat and raisin breadiness, melted brown sugar, metallics, faint lemongrass bite, and mineral water. The aftertaste breathes of light earthen hops, chalky caramel malts, dry roast, big brown sugar sweetness, apple fruitiness, and black pepper spiciness of alcohol. The body is medium, but heavy with sugar, while the carbonation prickles on the light side. Each sip gives okay froth, slurp, and cream, with the mouth otherwise occupied by more oily, coating slickness and sugary stickiness. The lightest astringent dryness is palpated, but little else. The abv is appropriate, and the beer drinks easily.

Overall, what we liked best about this beer was the nicely inclusive aroma, and its ease of drinkability. From the first look at this beer things seems a bit light. The coloring sits lightly, but never offensively so. The aroma and the taste, too, are on the simplistic side, and are definitely out of balance. While each gives big sweetness through the caramels, esters, and cloying fruity sugars, the roast never quite comes up to meet or even it out. While this is a decent representation of the style, we usually look for something that shows more depth and roast to the malts, and more darkness throughout.

Poured from a 12 oz bottle into a snifter glass.

Color is ruby amber. About one finger thick head with good retention. No bubbles. Not much lacing either. Translucent with good clarity.

Aroma is of caramel malts. Lager yeast. A lot of malts. Little bit of sweetness. Roasted malts. Strength is moderate to slightly good.

Taste is very much like the nose. Strong roast element throughout. Heavy at certain times. Good warmth. Strong malts. Caramel. Sweetness. Finish is semi sweet.

Mouth feel is medium bodied. No astringency and low on carbonation. I would have loved a more carbonated and bubble doppelbock.

A very average stuff from a good brewery.

A - deep caramel amber with absolutely no head to speak of

S - faint nose; baked apples, caramel

T - toffee, caramel, apples, faint citrus, a tad grassy, earthy, spicy alcohol in the finish, lager-y

M - medium bodied, well carbonated, a bit warm

This beer is pretty solid. I was worried at first because the appearance and nose weren't what I was expecting but the flavor is everything I want from a doppelbock. It has a deep flavor, it's easy to drink, but the alcohol is present enough to warm you up on a chilly early spring day. Well done and worth a try.

On tap at Eccentric Cafe. Been wanting to try this forever in bottles, glad I just held off and was able to have it on tap, nearly right at the source. It pours some weird mix of brown, copper, and amber - a strangely unique color with decent clarity and a substandard, off-white head that fades quickly and leaves no lacing behind.

The aroma is full of that crispy, lager-style yeast that I typically always love to see (or smell, I guess) in my lagers. Very clean, uplifting, and refreshing, and I'm glad it makes an early appearance here. It's got a sweet and steel-tinted caramel aroma going on, too - this one is certainly heavy on the malts, as most doppelbocks are. Some light fruity sweetness in the background, although it's hard to pinpoint a specific fruit. Maybe plum or raisin? Caramel malts certainly steal the show here with a little bit of molasses - but as nice as they smell, the aroma isn't as robust as I'd have hoped for.

Bouts of caramel and toasted bread wave across my palate after taking a sip. Consecrator has a big "toasted" feel to it, through and through. Malts not only provide heaps of caramel, toffee, and molasses, but good amounts of bread and crackers, too. The lager yeast is strong in the taste as well, and really comes alive on the back end of the sip. Some lighter candied fruits eventually poke their heads in; plum, raisin, and dates, lightly coated in brown sugar and served with molasses. I was about to say "where are the hops?" when all of a sudden they rush in at the very end - musky, leafy, and almost ashy leaving a resounding bitterness in the aftertaste to balance the sweetness perfectly. Medium bodied, not sticky but a little oily and coating on the palate, medium carbonation.

Very nice and easily drinkable doppelbock. It started off "just okay" but I really enjoyed the latter half of the glass quite more than the first half. Maybe the warmth helped it to open up a bit - that's usually how it goes, yeah? I haven't had an insane amount of doppelbocks to compare to, but this one was pretty damn good. As good as Celebrator? Probably not, but a great take on the style nonetheless.

Nice brownie like coloring and strong bubbly head.

Weak aroma but after concentration I get sweet dried fruit and touches of malty chocolate.

The taste is quite sweet, with thin date, prune and candy fruits. Hints of chocolate, even a bit of malty toffees are disguised by the fruitiness.

I love a Doppelbock but find this slightly weak in taste despite the obvious bulk of malt used to achieve 8 percent ABV. No alcohol feel but easy and smooth this is good just not great.

Appearance: gorgeous clear copper with ruby highlights. Dinged a little for just about no head to speak of.
Smell: pleasant if mostly average malty doppel. Nice but a little plain.
Taste: better than the nose. Full and malty.

We need more doppelbocks in this world.

Poured into a tulip glass, head presented very thick, 1+ inch, color is light tan; body color is copper to amber, more amber, nicely transparent.

Smell is subdued, light caramel, raisin and toasty malt, some other fruity notes present.

Taste is very clean, light, can't believe its 8%, so exceptionally smooth. Flavors are similar to the nose, clean, light nice caramel, raisin, toast, other fruity notes.

Mouthfeel is very smooth, this is not a sweet doppelbock, not cloying. light flavors and sweetness balanced by solid hop bitterness. Subtle carbonation to keep flavors present.

Overall, this beer is very good, solid doppelbock. Clean flavors, not too sweet, maybe more helles bock than doppelbock, but the lighter doppelbocks are a good balance to the heavier ones.

12 oz. bottle poured into a NB snifter.

A – Pours a golden copper-brown into the glass. Loose one-finger head of light tan foam disappears almost instantly, leaving a very thin island of lace in the middle. Beer is a dark rosewood and moderately opaque.

S – Very soft nose that really requires coaxing out of the glass, even after letting it sit and warm. Rich caramels and toasted malts. Hints of cherry amaretto. Alcohol in the nose suggests a light brandy.

T – Deep, rich caramels with a bit of brown sugar and a touch of toffee. Toasted malts in the background. Rich, dense, dark bread. Alcohol is very well muted. Just enough floral bittering hops on the back end to be detectable and give it balance, but remain anonymous. Pleasant, but unremarkable.

M – Rather smooth, with just a bit of carbonation. A tad thin, but not watery. Components are nicely integrated. Short finish that doesn't cloy.

O – With no shortage of malts available, the lack of a nose in this beer disappoints. It's a straight-ahead doppelbock that's enjoyable to drink, but doesn't offer anything to separate it from the pack. Malt profile could be mistaken for a Scotch ale, which is fine by me. This would be a great candidate to barrel-age and add those characteristics to give it more complexity. All-in-all, this beer is one that I'd order because I wanted to take a break from tasting really distinctive brews and just wanted a solid but unchallenging malt-forward beer, and the menu lacked an exceptional option that couldn't be missed. One thing to note: priced in the high-teens for a six-pack, there are much better options in this style for the same amount of money.

Bottling date 1/23/13. Had this at the Tavern on Liberty in PA. Consecrator is a beautiful auburn color, with a very healthy 1.5" head. Quite fizzy carbonation going on here. The aroma is very powdery and candy-like. Lots of fruit esters coming up in both the aroma and flavor - apricot, plum, purple grapes, and raisins. The taste is smooth and bready, coating the mouth fairly well, and despite the 8% ABV, it's not too boozy. Overall, this is just like the best German Doppelbocks I had tasted the times I spent visiting there. I can't believe how smooth this is... Another stellar brew from Bell's!

Batch #: 11667.

Appearance: Pours out a clear, deep, dark amber-hued body with just under an inch of ecru foam that dies out rather quickly.

Smell: Sweet-scented, caramelly, fruity nose of ripe cherry and robust plums which, when adding in the brandy-like alcohol, gives it a slight cordial quality.

Taste: Breadcrusts topped with brown sugar and a few addition drops of golden syrup. Subtle nuttiness. Pop of fruitiness of cherry and plum, mainly. Medium-high sweetness throughout. Lightly herbal hop character, low, light bitterness. A little warming alcohol slides on it. Fruity, fairly sweet finish with a sustained alcoholic quality (not quite hot, though).

Mouthfeel: Medium-bodied. Medium-low carbonation.

Overall: I haven't had this in nearly seven years. I thought it was a likable, above-average d-bock then and now.

Appearance: Deep copper color. Perfectly clear. A thin tan head that fades quickly to nothing. Could be a bit darker.

Smell: a bit sweet. bread and malts

Taste: bread, some malts and sweetness, followed by an alcohol kick. A tad to strong and unbalanced on the alcohol

Mouthfeel: medium bodied. I wish it had a bit more body

Overall: Good beer, not great. A few steps away from being great. Glad I tried it and also glad I didn't pull the trigger on a 6-pack like I initially wanted to before I knew it was 17 or 18 bucks.
