Notes:
We have long struggled to determine the value of increasing hop saturation for the sake of greater appeal within our core family of beers. With each new rendition, we have pondered where the limit of enjoyability lies. As the saying goes, you don't know until you try, and thus, we will try!
We initiated this project to Find that Limit. With each successive batch, we will slowly ramp up our residual sugar content, alcohol content, and dry hop volume as an interactive endeavor whereby we collectively determine a reasonable limit of what is enjoyable.
The hope for this project is to have some fun, make enjoyable beers, and identify that diminishing returns are real at the extreme end of beer-making. We hope that this will enable us to value balance, elegance, and brightness of flavor with renewed vigor and satisfaction!

One month old. Can to pint glass.
Look: Pours a hazy dark yellow with a low but thick head. No floaters.
Smell: Grassy. A bit citrus. Subtle sweetness and some boozy notes.
Taste: Sweet mango accompanied by grassy and zesty notes. Tropical notes up front. Grapefruit bitterness is also there.
Feel: Thick and full. Low carbonation.
Overall: Very juicy DIPA which, to my taste, pushes the limit just a bit too far. A bit too thick and a bit overpowering flavorwise. However, it’s still a very nice brew and part of an interesting project. Haven‘t had the chance to taste number 6, but it might have just hit the spot for me.

L - thick shade of straight mango juice. Slightly pinkish orange paint with zero light penetration unless you really start to crank some lumens into that bitch. Leaves a touch of legs that is quickly washed away by the lacing dragging itself down the sides of the glass.
S - potent grapefruit and pineapple juice. Splash of raspberry Juicy Juice twang with vanilla and mandarin orange.
T - now that is an intense, long-lasting punch of upfront flavor. Ripe peach, bubblegum, and pineapple cream hit hard and fast. There are toasty overtones, likely thanks to the higher booze content than usual with TH DIPAs. Bready and zesty with a hell of a hop bite in the back. Simultaneously juicier and bitter..er than most TH beers I've had (and I've had a lot). Sweet vanilla and perhaps a hint of butterscotch when really diving into the flavor profile. Finish is dry and herbal, like embers from a fire.
F - mealy and viscous. Thick and creamy hop sauce with low carbonation that feels like a TH beer on steroids. Beautiful.
O - this one's a doozy. Pureed hops to the point where I think we're hitting that limit of enjoyability. Any more and this becomes a saturated hop mess. TH does a fantastic job toeing that line whereas other brewers would've easily slipped into undrinkable territory. I quite like this new angle since I'm a huge fan of experimentation and pushing everything to the limits when it comes to beer. Perhaps past the tipping point since I thought #6 was better and more lively.
