Dark brown color with a very large head that was slow to settle to a thick cap. Some sticky lacing is left down the glass. I can definitely smell cherries with notes of chocolate, vanilla, figs, prunes, and smoke. Interesting that the cherries are not as prevalent in the flavor as it is in the aroma. Much more well rounded flavor. Dark fruit, chocolate, cherries, vanilla, with subtle wood and smoke notes. I felt the body lacked enough heft as it felt thin. The carbonation did not seem to be an issue. Interesting and complex beer that was not quite executed as well as it could of been.

this has been collecting dust in my cellar a little while now, and may have developed the slightest tartness to it, beyond the cherry, from a strange yeast element, but it doesnt taste like a classic infection to me, just a neat maturity and development trajectory. a very dark belgian dubbel with cherries. it has a deeper roastiness to it than many of these as a base beer, some chocolate and chateau type malts, molasses and raisin notes, but not the added sugar remaining that a lot of them have, perhaps dried out over time in the bottle, its probably close to two years old now. the cherry is deep in here too, cooked almost, not intense, but strong, dark cherry, like those brandy soaked cocktail cherries, a touch sweet but not at all overly so. the yeast is cool too, its got this faint tartness, slightly oxidized too now, but that always works in a beer like this, belgian esters, mild spice, anise and clove notes to this, picking up some chestnut and dark bread from the grain, great layering of flavor, good full body, and a bit of finishing bitterness from a dark toasted element. smooth and bubbly at the same time, not quite rich, but fancy feeling. a really delicious beer, the right amount of cherries, and overall a really cool twist on a classic belgian style. yum!

This beer pours a murky amber color. The taste is of light cherry and raisin covers in cardboard. The taste is of more cardboard. The mouthfeel is medium bodied with very high carbonation. Overall, this beer is a mess. It tastes both oxidized, and infected at the same time. I don't think I've encountered that in a beer before.

L: the glass is 90% foam - rich, mousse-like and persistent. The carbonation is very active and it takes 20 minutes to get a glass that is half foam and half dark chestnut colored beer.
S: cherries and the Dubbel yeast - fruit, dark dried fruit, malt, and dark cake but I don't get much oak. The fruit and yeast aromas dominate. Malt aromas are medium and hop aromas are low.
T: Mon Cherries has a biscuit tending towards cake to soft brown sugar cookie malt backbone with dark sugar flavors, traces of dark molasses, cherries, a hint of chocolate and some light spice. It finishes with a light bitter accent and a light tartness. I do not get a lot of the oak either in the aroma or the flavor.
F: This is a very creamy beer with a medium light body and above average carbonation even after waiting 20 minutes to get enough to drink in the glass.
O: Despite the foaminess, it is a very good beer.

This is the foamiest beer I've ever seen ... even with a careful pour, my glass has a head that's 3 times as much as the beer itself. The head lasts quite a while, and there's huge lacing all around. Very dramatic.

The aroma is pretty mild. The taste is a tangy fruit, combined with a bit of cocoa, some smoke, and a good amount of Belgian yeasty flavor. The fruit is a little undefined to me ... I guess it's the cherries, although I wouldn't argue with someone who said it's raisins or plums.

Mon Cherries has a thinnish body, much thinner than usual for a dubbel. There's a good bit of carbonation, no surprise when you look at that head.

Overall, I'm impressed by the originality of this beer, the way it combines tart fruit, Belgian yeast, and a medium malty beer. It's not like anything else I've had. The brewer has produced an unusual beer that's a very fine thing to drink.

From a 750 ml bottle, purchased in Duluth a few weeks ago. The date code is mysterious.

Initially I did not like this. Realized it was too cold and let it warm up. Some very complex flavors came to the surface. Not much cherry, but certainly some dark fruit, a bit of smoke and oak, some malt and a little chocolate. This is not the kind of beer you want to throw at a newbie. But let it warm and sip slowly and you will enjoy.

The pop of the cap produces gunsmoke. A soft pour produces a near perfect head of creamy, frothy beige foam atop a coffee brown body. The head is dense, thick, and everlasting, being constantly re-energized by lively carbonation. Lace clings to the glass in chunky sheets that will have to be scrubbed off. Mon Cherries is one of the better looking beers I have come across in a long while.

The nose is big, rich, and expressive. Now it's been a while since I've drank a dubbel, a long while, but this one follows a different path and I like it. Big notes of chocolate kick things off, both bittersweet and dark, and run throughout. There's a smattering of dark fruits, fig and plum mostly, a little leathery in fact. Dark caramel and a tendril of smoke wrap it up. Oddly enough I get no cherries but that's OK in this case. It's unique and complex.

The flavor profile runs a little more along the dubbel lines I had in mind but with a unique twist. Plum and fig are more dominant along with leathery raisins. There's a softly herbal hoppiness mid-palate that balances out some of the sweet and before you know it the bittersweet cocoa pops up on the backend. A solid, dark caramel base runs throughout. Last but not least is that faint smokiness on the finish. It really adds a welcomed touch. Again, no cherries, or oak for that matter, but still damn delicious.

Borealis nailed the mouthfeel on this beer, it doesn't get much better as a matter of fact. It's moderate bodied with a carbonation so frothy, so plush, I feel like a king drinking it. A soft herbal bitterness adds some character and the finish dries up quickly. Drinkability is high with this one. Nearly perfect.

Borealis Fermentery produced a gem when they came up with this beer. The funny thing is that the two selling points seem to be nearly nonexistent, the cherry and oak. Instead it's a dubbel with porter tendencies and a tendril of smoke. The outcome is bold, unique, and most importantly, delicious. I wouldn't hesitate on this beer in the future.
