Notes / Commercial Description:
Warp refers to the threads that run north-south in fabric, while Weft refers to the threads that run east-west. They are woven together to create cloth, something altogether greater than the sum of its parts.

Weft & Warp is a mixed fermentation ale that utilizes lactic acid bacteria and saccharomyces, in addition to several strains of brettanomyces, then aged for 12 months in Chardonnay barrels.

Lightly hazed pale golden colour, ring of white head, no lace to speak of though. Smell is full of white wine, tart fruit, green apple and lemon, a subtle oak is there but the wine continues to linger around even after taking the glass away from my nose. Taste starts with a sharp tartness, acidic fruit flavours come in with more of that apple-lemon combination in the nose, citrus, white wine aftertaste, finishes dry. Medium drying carbonation, medium bodied. solid stuff here, very easy drinking, I would say this is certainly quite an offstyle berliner but it is still rather tasty.

Looks more like a saison. Straw. Hazed. Carb trails. Smells funk and winey and tart- a slight hop smell and hint of citrus. Nose will salivate the glands. Tastes great- carries the nose but tartness speaks more than straight sour. Very wine like flavors. Grapes and some wood. Feels fuller than 5.5 with perfect carbonation. Bery pleased. Some to go as well please.

Bottle: Poured a clear golden color ale with a fizzy white head with almost no retention and no lacing. Aroma of tart and sour notes with little else to report. Taste is also somewhat one-dimensional with tart and sour notes with light funky yeast and very subtle Chardonnay flavours. Body is about average with low carbonation. Lacking complexity with average drinkability.

A - Translucent yellow with one finger of bright white head that quickly reduced to a thing ring around the edges of the glass.

S - Tartness and breadiness at first with big oak and grape must aromas. Lighter peach and apple notes in the background.

T - Tart and crisp up front. Big wine barrel qualities come through - oak, grape must, apple and apricot are all present. A slightly sweet breadiness is present in the background. The finish is tart and very dry.

M - Light body. Dry. Light to moderate carbonation.

Bottled January 9, 2014 (labelled 2013). This one is aged in chardonnay barrels.

Beer is clear straw gold with a moderate-to-large sized white head. Head fades steadily.

Nose is quite fruity. Lemon, peach, grape, lime. A tart scent, a lactic acid scent. The wheat gives off a bit of a dry cereal scent, but mixed with the tartness.

Taste is quite tart, with a blast of lemon and a bit of lime. A lactic acid flavour. Other fruit flavours as well, light and a bit tropical. Crisp wheat. The chardonnay barrel is present, resulting in some green grape and (likely) some of the light fruits, but it is not nearly as strong as the tequila barrel in the Warp & Weft. Finish is sour, but with a lingering barrel flavour in which the chardonnay flavours come out nicely.

Light bodied, very strongly carbonated. The tartness dries out the mouth. Carbonation is too heavy for me.

Overall, very nice. Definitely a step up from the berliner weisses Bellwoods has brewed in the past - even without the barrel, I expect. The barrel blends very well with the beer - a noticeable flavour but one that blends so well well that it almost seems subtle. Good stuff.

Poured a clear light gold with no head to be seen anywhere. Nose is tart and sour, I pick up a touch of the wine barrel, but just barely. The taste is quite nice with a sweet and tart character. The white wine barrels do influence the flavor, bringing a sweet crisp grape to the party. The brett is not overpowering, but it works well with the barrel aspects and the final result is a very enjoyable beer. The feel is light with a below average carbonation.

Quite nice, glad to have had this, and I would recommend it happily to others.

Though aged in barrels once containing Chardonnay, there's no way Weft & Warp could pass for one. Its frail yellow colour and clear complexion looks unmistakably like beer (albeit not a very good one given it's entirely devoid of beer's most distinguishing characteristic, a proper foamy head).

You don't have to be a wine expert to know whether or not you like barrel-aged Chardonnay; they aren't your typically light, friendly, and easily dismissed white wines. People tend to either love or hate the notoriously bold buttery, oaky, vanilla-laced qualities; unfortunately, I don't get any of those. This doesn't smell barrel-aged. Nor does it smell like a Berliner Weisse.

So far there's not a ton to distinguish Weft & Warp from its tequila barrel-aged counterpart, Warp & Weft. Both beers feature gum-numbing acidity, a soft, sweet malt backdrop, and light salinity. As in the aroma, the presence of the wine is disappointingly little - ditto for any malty, hoppy, yeast or bacterial derived flavours. I can imagine what Bellwoods was aiming for - this isn't it.

While easily enjoyed, any kind of dissection begs a few questions: Where's the lactic sourness? Where's the presence of Brett? Where's the influence of the wine grapes and barrel? This style is all about sourness, acidity and refreshment, yet this offering is only mildly tart, negligibly citric, and has next to no carbonation. It dries out the mouth without fair exchange of flavour.

Berliner Weisse aged in Chardonnay barrels is, on paper, a genius pairing; I expected the typical granny smith apple sourness and grainy wheat notes of the beer to be right at home with the orchard fruit and vanilla notes of the wine and oak. A little life lesson however: not everything works out the way it should. This experiment was cool but had better intentions than results.

500ml bottle from brewery.

Slightly orange gold with next to no head. Sweet white wine on the nose. Similar taste with some Brett character. Mildly tart. Effervescent. Another good one from Bellwoods.
