This funk jam began in stainless as a mixed fermentation with Vermont Ale yeast and Brett D from our friends at Escarpment Labs. After primary, it was transferred to a single new (to us) red wine foeder where it spent a year developing heavy pineapple and leather funk notes from the Brett, as well as some subtle oak and wine character. The whole batch then went back into stainless where it conditioned on top of 1,200kg of apricot puree, followed by a generous Mosaic & Citra dry hop. Unlike our most recent Barn Owl releases, this version is not a sour — it is heavy on brett induced funk, paired with a heavy blanket of fresh apricot skin.

This one pours with a huge head, and lots of lacing, atop a golden and slightly hazy orange body.

This smells like candied apricot fruit leather, grassy hops, white wine, intense barnyard Brett aromatics, and grape skin.

Even with the age, this "IPA" has held up well. The Brett has developed into a funky beast at this point, with loads of floral, herbal, and sweet funk characteristics, with that distinct earthy barnyard funk. The apricot provides a dry-ish sweetness, and there's some wine and oak as well.

This is light bodied, with a fluffy and smooth mouthfeel, with a pretty good drinkability to it.

This probably was a bit more balanced, with good hop character, when it was released - but it's developed into something super funky and delicious all the same.

Appearance - Pours a warm peachy gold with three fingers of foamy white head.

Smell - citrus hops, apricot, earthy yeast, pineapple, other stone fruits, light bready malts, and a hint of vinous aromas.

Taste - citrus hops then quickly goes into the stone fruits of apricot and pineapple. The earthy yeast blends in nicely with the apricot and pineapple aromas. The light bready malts and hint the of the vinous characteristic help to finish off the brew.

Mouthfeel - Medium bodied with moderate to high carbonation. Finishes sticky with the stone fruits and especially the apricot lingering.

Overall - A flavourful brew that displays the really shows off the brett and apricot flavours. A brew that is definitely worth seeking out for!

Bottle: Poured a hazy bright yellow color ale with a large white foamy head with good retention and some lacing. Aroma of apricot with tropical fruit undertones with light subtle tart notes. Taste is a complex mix of apricot with some tart and funky notes, dry Brett undertones with some tropical hops flavours also noticeable and some woody notes are also apparent in the aftertaste. Body is full with good carbonation. Nice complex beer with good drinkability but maybe a tad too much oak presence.

a wild ale with brett drie aged in red wine vessels with apricots! how good is a beer like this after a little break from beer?! well, thats rhetorical of course, because its superb! taking several minutes to pour, the white airy head rises right out of the glass, looks belgian and living and gorgeous, with a pale orangey rust colored body and a ton of carbonation. this is the kind of life i like to see in brett beers. the yeast really flavors this more than anything else, its funky and dry, with notes of good champagne, green pear, and a floral summery element. the apricots are more prominent in the nose than the flavor, adding a little bit of cooked sweetness to this is all it seems. the wine aspect is there too, but more woody than winey, dried berries and tannins are present. there is a sturdy hopping on this too, maybe mosaic, tropical fruity and something very new and fresh against the patient and mature brett, not quite vegetal but new tasting to me, really nice. upbeat carbonation here is awesome, and overall this seems rustic, complex, and really well dialed in. bellwoods really impressed me, and this was my favorite beer i had there!

Golden and hazy with a little carbonation and topped with 3 fingers of yellowish head.

Smells of green, dry leafy hops almost like green tea. Slightly fruity of stone fruits, Brett, funk, dust and barnyard.

The taste follows the nose, and its really dry with very little sweetness. Lots of sour, funk and Brett, as well as macaroni and earthiness, tart peaches, apricot and pure almond extract.

Medium, tart, dry, puckering body, with moderate carbonation.

Tried this at the brewery, and got a bottle to take home. Excellent brew. Drinking Jan 28th, 2018 in Muskoka.

Really hazy yellow color with a bit of off-white foam. Aroma is really brett forward with nice fruity esters and fermented stonefruits. Taste is really fruity and juicy with the brett funkiness giving it an extra layer of flavors, everything really well integrated. Medium body with medium plus carbonation. I'm not a big fan of brett beers but this one is really enjoyable.
