Notes / Commercial Description:
This is an unapologetic beer. Dark, viscous, bitter, and rich — it's a dangerous elixir of love. Originally developed by English brewers in the 18th century for export to the court of Catherine the Great in Russia, our interpretation of the style would surely make lady C proud. We’ve waited our whole lives to brew a beer with such bravado, and it always sells out faster than we can supply the next batch. Some people claim that imperial stouts are only for the dead of winter, but we feel that this sidekick is there for you, anytime you call.

The beer pours extremely dark with a very thick dark brown head. Seems viscous visually and the feel is fairly thick as well. Lots of molasses on the flavor profile. Nice roasted malty thing going on as well. Rich beer. Very robust with a slight malt sweetness that accents things wonderfully. Very easy to drink and would probably be a good base for barrel aging or some type of additions.

Bottle Date: 2012; Poured Feb 2015

(L) Pours a deep and black with 1-2 fingers of creamy mocha head, great retention and leavinf nice lacing as it fell to a thick, creamy cap.

(S) Big RIS notes here, lots of dark, roasted malt, espresso, dark chocolate, a whif of char but still some residual sweetness there. No hop profile comes out, but that is most likely due to the age of the bottle.

(T) On the palate, the taste follows suit with lots of roasted notes, dark chocolate, espresso, char but also some grainy sweetness lingering balancing things out a touch.

(F) Full bodies but not heavy or oily and enough carbonation to keep it very drinkable.

(O) A really great example of the style that holds up very well to a bit of age. Looking forward to a fresh bottle some day!

Purchased at Bellwoods bottle shop for around $8.00 or a bit less on a 500ml bottle. Served at 8deg C in a tulip

A- Opens well and pour a high brown head that lasts forever. Super dark and rich looking.

S- Has a lot of malt here. Not a lot of chocolate or coffee notes. Very subdued as far as a RIS goes.

T- Very good. Has a nice balance with little heat at all. Good blend but there is nothing that jumps out at your nor gives this beer any wow factor at all. Just a good beer

M- Nice creaminess but a touch chalky though

O- Pretty good beer. Bought one for the cellar but kind of wish I had something else as this is not a special beer in the least.

Food Pairing

This nice little beer went well with.... Samosas! Nice light sugary sauce with a pretty hot samosa with this nice thick beer.

Bottle from the brewery, released October 2014. Served in a Cantillon tulip.

A - Dark mocha foam settles to a thin cap, thicker collar, and minimal lacing. Very, very dark brown body that verges on black.

S - My previous experience with Hellwoods was an aged bottle from Grub (I will integrate those notes once I dig them up). This fresh bottle reminds me a lot of Ten FIDY; roasty, with a hefty dose of baker's chocolate, coffee, and green hops. Perhaps a faint whiff of alcohol as it approaches room temperature.

T - Taste is similarly heavy on roasted malts and semisweet chocolate, with a mild cake-like sweetness creeping in. Hop and anise bitterness show up late but doesn't get overly fatiguing until well into the 500ml bottle.

M - Full bodied, with tons of residual stickiness. Medium-low carbonation keeps things from getting too syrupy. Texture starts a bit roasty but smooths out as it moves over the palate. Well-hidden alcohol.

D - This new batch reminds me a lot of Ten FIDY, which is a surprise as the older bottle was super smokey. In any case, both of them were quite good. Bellwoods seems to have the Imperial Stout category dialed in. Slowly worked through a bottle while watching working on my Python chops.
