Midnight BourbonMidnight Bourbon
Notes: This beer is the culmination of our recent series of 10% Imperial Black Wheats. For the first time, we fermented it with Belgian yeast before barrel aging. This adds some nice sweetness to balance out the bourbon notes. We then aged the beer in barrels for just enough time to allow the bourbon and oak character to accent the beer, rather than overpower.

Here's a beer/style you don't come across every day. Not a stout, qualifies as a dark wheat ale (imperialized no doubt). Pours a dark color, but the viscosity is such that keeps it out of the porter or stout category. Tan head on top, 2/5". Aroma was weird, you get the banana like notes from the belgian yeast, and a dunkel kind of wheat roasting sensation. Then comes the booziness that is kind of like bourbon. A unique nose to say the least.

I keep getting banana in the taste and the body of the beer makes you think cola at times, so you get this banana split chocolate with cola and a boilermaker like shot of alcohol to boot. Just when you think you can't take anymore of the banana clove interplay, more and more of the brown sugar and cocoa aspect comes in to help push you to the finish line with this beer.

I wouldn't want to dome an entire bottle to myself, but you can get by with a little help from your friends to power through and look back at it and appreciate it a little bit. I dug it in small quantities.

650ml bottle, served in a snifter.

Pours a dark cola brown body, one finger offwhite head, no lacing or much retention. Smells of banana, dark chocolate, a bit of earth, milk chocolate, yeast. It's like a chocolate covered banana. Flavour is similarly banana-forward with the yeast, packing the iso. A bit of milk chocolate and cocoa rounds it out. It's bananas foster minus the caramel. Mouthfeel is medium-thinner bodied, a bit of heat, good carbonation, a sipper. Overall, it was a nice beer to taste in small quantities, but I wouldn't want a ton of it.

This is an interesting brew. If one didn't know any better, they'd say it was an imperial stout. Pours black like a stout with a light tan head that dissipates quickly but leaves a nice ring. Smell is of some bourbon but not overpowering as well as typical stout aromas. Taste is of slight bourbon barrel, some fruity banana from the Belgian yeast, and again the typical roasty stout (actually wheat) flavor. Mouthfeel is medium bodied, slick, oily that coats the tongue, and smooth. Overall, a really sweet (in a good way), tasty brew that's definitely worth a try. 3 Sheeps continues to amaze me with what they can do with a wheat beer. Well done!

Another homerun by 3 Sheeps. This was their first foray into a bourbon barrel "stout" and it was fantastic. Their black wheat base beer offers a few different tastes than a regular imperial stout would. That combined with the Belgian yeast went well with what was a nice, sweet bourbon flavor.

Poured 22oz bottle into snifter. Midnight black like a starry night with a 1 finger tan head that leaves small spotty lacing on the glass. A chocolaty, banana, vanilla, and bourbon aroma. Taste is much like the nose with the bourbon and Belgian yeast giving it almost a banana split like flavor. My brain kept thinking it would taste like a BB stout, but this is so much different and a nice change of pace. The bourbon and vanilla are mellow and there is some chocolate and oak. Feel is very smooth and rich with no heat from the alcohol. I really enjoyed this one and can only imagine how some of their other offerings would taste after spending time in a barrel.
