The Wolf - Pistachio, Cocoa Nibs And VanillaThe Wolf - Pistachio, Cocoa Nibs And Vanilla
Notes: This Wolf variant has a smooth, round finish thanks to the pistachios, plus tons of fudgey goodness from the single origin cocoa nibs.

Canned on 6/15/21; consumed on 8/26/21

Pours a thinner, jet-brown body sporting an audible effervescence and topped with just over a finger of soapy, tan/pale mocha foam; head fades quickly to sparse, paper-thin islands of cap, a thin, bubbly collar, and minimal-no noticeable lacing holding to the walls of the glass.

Aroma opens with expressive raw cacao accented with a dusting of pistachio shells; melted dark chocolate conforms to oak barrel and a toasty vanilla quality over the middle as boozy heat lightens into more defined pistachio to close.

Taste features charry, fresh cacao nibs into roasted malts and rounded undertones of toasted oak, proceeding toward tinges of burnt caramel over the mid-palate and finally culminating with sliced pistachios and a rounded, nutty vanilla imbued with boozy bourbon and further hints of of oak barrel.

Mouthfeel brings a medium-light body with a lower carbonation, a slick texture holding consistency despite threatening an advancing thinness over the mid-palate; a light char is subdued beneath of a boozy warmth encompassing the back end, fading slightly through a fairly innocuous finish.

A subtle adjunct presence shows a nicely integrated interplay between sweeter nuttiness, roasted malt, and a deeper, evolving chocolate profile intertwined; the profile is there and prepared to deliver, though the thinness and more dominant barrel-forward character hold the final product from truly flourishing in a more cohesive manner.
