Very light yellow beer with yeast in suspension and a quickly dropping white head.

Smell is wheat malt, yeast, floral hops, and lemon zest. The taste is very nice, with the malt, hops, coriander, and citrus flavors bouncing off each other nicely; less overpowering than some witbeirs, I think that this medley is very enjoyable. It works well.

This beer also has a nice mouth feel. Many Utah Brewers Co-op beers feel overcarbonated, but this feels just right where it is. Not watery, but very drinkable and refreshing. It is a good summer beer (as previous reviewer opined).

On tap at the SLC airport.

The beer pours a slightly hazy gold color with fair head retention and minimal lacing. On the nose I get a touch of clove and banana, but there really isn't a lot going on aroma-wise with this beer. On the palate, this beer is pretty light and watery, but with some light sweet clove, nutmeg and spice, and a hint of sourness in the finish. It really tastes more like a light hefeweizen then a wit beer, with a lot of "wheatiness" flavor going on. Mouthfeel is light and the alcohol seems pretty low (which of course, it is).

While not terrible, there are a lot better examples of the style out there. Oh well...

My friend from work brought me the Squatters sample pack back from Salt Lake City. I’ve tried all 4 beers so far and this one is by far my favorite. Drank from a generic pint glass.

Appearance- Pours a cloudy super light yellow with lots of carbonation and lots of little yeast floating about. Nice one finger soft white head forms leaving a really nice cap and collar for almost the whole duration of the beer. Not a whole lot of lacing is left but there is some.
Smell- Lots of musty yeast is the first thing that jumps out of the glass. A bit of lemon and some crisp spiciness is also present. The malt shows in the nose very gently but for the most part smells like a Wit should.
Taste- Nice banana like start with some light yeast tones. A bit of orange and lemon is present along with plenty of gently spice. Probably some coriander and orange zest is present but very subtly. Finishes with a slight bitterness and some lingering malt.
Mouthfeel- Very crisp and clean with a light body and nice zesty carbonation.
Drinkability- Sitting at 4% you could drink these things all damn day. This is a fantastic summer beer (says the guy who’s drinking it when it’s 15 degrees outside) that would really help beat the heat. I’ve been to Squatters in SLC and I’ve yet to have a bad beer by these guys.

This comes in the sampler pack.

Pours a cloudy pale yellow color, nice carbonation, nice white head, lots of lacing throughout the drink. Scents of malts, hops, yeast, floral, and spices. The taste is slightly bitter, slightly hoppy, very floral and spicey. Medium body, pretty complex brew. Drinkable, definitely recommended, especially on a hot summer day.

Pours a cloudy bright yellow color with a bright white head. Smell is slightly less then other wit's i've tried, but still with the typical notes of citrus, coriander, and malt. Taste is also less pungent than some other wit biers. Coriander is very noticeable, the orange peel less so. Fairly well balanced mouthfeel. slightly drying. Not my favorite example of the style, but still nice on a spring afternoon.

I was glad to see that Squatters had finally attempted a wit bier AND bottled it! Very pale chalk yellow. Hazy. Bright white head. Nose is mostly wittish with tangy wheat, yeast, coriander, and light orange. Taste starts with soft, tangy wheat. A little sweetness. Coriander and orange are faint. Finish is a little astringent and grainy (tannins?). Not bad, but I was hoping for a little better.
