Notes: √225 saison historically is the little sister of the Bon-Chien, a slightly sour and bitter rustical saison aged in oak barrels for about 4-5 months.

It is also a answer to the 10 milions tons of «traditional Belgian» farmhouse ales and saisons 14 % abv with Curcuma, prawns, sea salt, lemon and aged in Tequila barrel that have nothing to do in the the saison style, but the excuse of being something totally unbalanced. 200 years ago, before pasteurisation, the saisons were not sweet because of the alcohol and bitter at the same time, there were brewed by Farmers, not Brewers, they had no stainless steels cylindro- conical tanks and caustic for cleaning them.

Those old kinds of beers were made simply, with few raw materials to be drunk quickly after fermentation. Most of them turned bad, they became sour and were blended with a fresh one of the new « vintage ». We took this last idea, too. We blend the saison « badly turned » after 4 months of aging in old Bon-Chien's barrels with the same, but fresh beer to get a sour and bitter, easy drinking but complex at the same time.

Poured from swing top 33cl bottle into glass. Label is marked as "Batch 4". Labeled as an "18th Century Historical Ale". For ABV bottle label is 5%.
Very slightly cloudy, pale gold colored body. Slight white head settles to a couple of islands and a bubble fed ring. Left behind are a few spots of lacing.
Aroma of lemon and farmyard funk, plus oak.
Taste is sweet grape and lemon, with an overlay of yeasty funk that stops before the full after taste is over. The last after taste is again lemon and sweet grape, but drier than the initial taste. The funk stays in the nose. Oak barrel is there but minimal.
Thin to medium mouth feel. Very good carbonation.
Full bodied saison with the moderate nudge of funk. Very refreshing and moderately dry. Overall a very tasty beer.

L-Hazy beautiful golden colored beer with a nice white cap at the top. Some floaters are present.
S-Sweet lemon grass and funk as well as a slight hoppy undertone. White grape juice.
T- Slight sweet grape, sour lemon, funkiness and a nice hoppy bite at the end. A bit of a minimal finish to be honest. A little watery at the end.
F- A pretty dry finish for the most part. Not too bad.
O-A solid saison for sure. Very funky and solid flavor wise. Dry enough. Not too bad.

On tap at moeder Lambic.

White head. Golden orange color.

Lots of tart and refreshing grapes. White/green grapes. Saison spice and zest. Citrusy and earthy.

A bit too sour and tart for a saison, but otherwise enjoyable.
