Presentation: You really have to give this beer credit for the presentation. It is a cool unique stubby little flip top bottle. When Bob flipped the top open it popped like a gun shot and the whole room turned to see.

Appearance: Pours a hazy yellow with very active carbonation bubble rising rapidly.

Smell & Taste: The flavors in the beer are complex and I only had a share of this beer so I will need to re-visit it if I ever get the opportunity. I got a very spicy ginger and sage character, earthy grassy hops and a significant amount of dryness. The variety with in the Belgian Pales continues to impress. Every beer is so unique.

Mouthfeel: Highly carbonated creamy medium body beer.

Drinkability: I am definitely going to seek this out again. My share went down way to quickly.

Bought a 33cl / 11.2 FL.OZ. bottle of this from The Wine & Cheese Place in Clayton, MO for $5.19. Poured from the bright yellow labeled bottle w/ the BFM lizard & a swing-top cork into a 0,47l New Belgium Oversized Snifter Glass. Has ???? on the top label.

Aroma- Very complexed and malt dominant. Has tons of citrus at the beginning and then musky and a good goaty note at the finish. Light spices are in here too.

Appearance- Pours a easy going, 1 finger head that dies quickly. Has a white, cloudy body but then glowing orange background! Cool! Tons of sediment hang out in the bottom of the glass. Leaves belgian style lacing afterwards (tons of suds and lace but fades after time).

Flavor- Overpowers the mouth with grapefruit and sweet malts from the beginning. A nice marriage of spices, fruit, and hop then come in mid-drink. A medium-high bitterness level hangs around in the complexity of the drink.

Mouthfeel- Light-Medium Bodied, Medium Carbonation, Gritty, and then sweet fruits stay on the palate with some light spices.

Overall Impression- What a challenging brew to wrap your head around... Everything hit positive for me and would recommend trying this (especially for the price!). Many other brews from BFM are around $15-20 for a bottle but this is reasonable and has nice complexity! A Belgian spiced Ale I would call this one.

Served in my new Sam Adams Boston Lager glass (thanks to SA and BA), the beer pours a gold/orange color with pretty much no head at all. It smells like some citrusy/grassy hops, honey, lemon and a herbal smell that I assume is the sage that the bottle says the beer is brewed with. It tastes like I'm drinking liquid Ricola. The taste is very herbal, with some honey and yeast too. It's not bad tasting, just very herbal and a little bit bitter. That's the best way I can describe it. Mouthfeel is light/medium, finishes dry and with a good amount of carbonation. Drinkability is good, the beer is very smooth and surprisingly very easy to drink. It's a unique tasting beer, very hard to describe but definitely worth a try. I'd buy this again sometime.

A- Pours a murky light brown pine color, with a one finger head. Froth falls quite quickly, and only a slight ring remains.

S- Very interesting how this changes as it warms. Smells exactly like boiling wort when it is fresh out of the fridge. As it slowly warms to about 50°, the aroma begins to change to spicy sweet sage. The aroma almost tickles the inside of your nose like the fuzz on a sage leaf. A bit one sided, but quite nice.

F- Up front, the flavor is dominated by malt sweetness and honey flavors. Actually it almost tastes like a few gravity samples that I've taken. The flavor does a 180 in the middle, switching over to pure sage waves, and a relatively firm hop bitterness on the finish. I'd be willing to bet that the sage is added a few times in the boil, because it is quite complex. This isn't the typical sage you taste when cooking, but round, green, spicy, smooth, and interesting. Yeast phenols linger like black pepper on the tongue.

M- Actually, pretty bad. Low carbonation, and terribly thin mouthfeel. I think yuengling may have more mouthfeel than this.

D- pretty good, but still a bit of a sipper. Tastes mighty good outside on a hot summer day though.

Overall, I'd buy it again, and I'd definitely serve it with saltimbocca. It is not quite a sublimely delicious or earth-shatteringly complex and different as Bon Chien, but it still holds its own. Any fan of wierd, different, experimental beers should seek this one out, along with all the others from BFM.

33cl swingtop bottle, including a paper seal marked '1-9' along the left side and 'A-F' across the top. A red mark above the 'C' means...uh...something...

Swiss Golden Ale brewed with sage, poured to a pair of small 'Millevertus' tasting glasses and shared with my wife as an apertif.

A: A hiss of air and a little carbonation fizz escape when uncapping. Thick layer of white yeasty sludge on the bottom of the bottle. Pours cloudy golden-wheat with tiny yeasty floaters. Head is almost 2 fingers tall, a cloud of puffy white bubbles. Bits of sticky, meringue-like lace.

S: Slight 'barnyard' wild yeast aroma, malty bread, apple, pear, and definitely sage/herbal dashes.

T: Loads of crushed apple, herbal spice, floral/meadow grassiness. Some mild sweetness of pear and melon with clover honey. Then there's the spiciness: sage is present, zest and finishing very dry. All very fresh tasting and reminiscent of the rustic farmhouse ales of Belgium & France. Quite good.

M: Medium to high level of carbonation gives a spritzy mouthfeel. Body stays rather light; crisp and dry finish. A little grainy but generally clean on the palate.

D: This beer made a wonderful warm-up prior to dinner. We both really enjoyed the dry herbalness of the flavors, the spritzy mouthfeel and the light ABV. This may not be a beer I'd have all the time, but in the right setting it borders on perfection. I hope we get to enjoy this beer again sometime and definitely recommend it.

This beer is an essential one to try because it will give the reviewer a clear indication of what the spice sage tastes like in a beer. I have tasted and smelled hints of this in other beers and didn't know what it was and could not properly identify it. Now I know, and so will you because it is overpowering in this beer. The beer pours a rather light golden color with a white soapy head, some retention and lacing. The carbonation is modest and the mouthfeel watery and crisp. It is a refreshing beer to an extent. The aroma is all about the sage, but there is also an unpleasantness to the smell as well, similar to household cleaner or detergent. In any case, the aroma is pungent and unmistakable. The taste is all about the sage. There is a tart lemon or lime rind and citrus to the beer too. The finish is mouth puckerish, tart, with some bittering hops, tea like in quality. The aftertaste lingers a bit long and the dry puckerishness continues. The beer is worth a try if you want to know what sage tastes like in a beer. If not, and you don't care, than I wouldn't be recommending this beer in its own right.

Picked up this odd fellow from Sam's Blue Light in Durham for a pretty penny but was intriqued by the bottle and origin. I remember being mostly unimpressed with the brew I drank when a visited Switzerland several years ago but I've got a feeling this one is different from the Rugenbrau I guzzled all those yars ago.

Body is an extremely pale golden with an immense bubbly white head and drippy lacing. The nose is laced with coriander and the advertised sage along with crystal malts over alcohol. Other unidentified spices are also evident and the overall aroma is somewhat sour.

Interesting, layered taste with surprising bitterness and an oily finish that offsets the overcarbonation. Alcohol is a constant presence and could be better masked. Initially, a powerful tartness of herb and fruit takes over, causing me to pucker and bear it. Finish is satisfying but still nakedly astringent.

Overall, although this is a well made beer, I found it fairly difficult to drink due to the herbal bitterness and high alcohol tones but can see how others woulld enjoy it, just not so much for my personal taste.

S: Spicy and funky. Smells a bit of gym socks - I thought this was infected, but a couple people also mentioned some funkiness, so I'll put this review in.

T: Very herb-y - I assume from the sage - with an astringent, dry bitter finish. Some funky flavors in the taste too. Maybe it's infected, maybe this is just how it is supposed to taste (I'm thinking this is just not a great recipe). Regardless, not very good.

M: Well carbonated.

D: Not very, considering the smell/flavor.

Not recommended.

Had this for the first time at a tasting with the brewer, Jerome Rebetez at My Place Restaurant in CT.
A hazy deep gold with a frothy white head that settles down to a film.
The smell is really interesting....nice sage and hop aroma....a bit unusual.
There is a good malt background ...some honey, but barley sweet...a bit of funk and menthol and a great combination of hops and sage. I had my doubts about a sage beer , but this is really tasty stuff. Dry in the finish...a nice lingering bitter.
Mouthfeel on the light side of medium.
Pretty drinkable.

Trying to get some flip tops for homebrewing, picked up at the foodery.

Poured into by konings hoeven trappist glass, presents with feint white head that dissipated immediately, but the color and body is very nice, golden with flecs of yeast. Definitely a unique look to me.

Smell is lightly lemony, hint of mild malt biscuity note with sage lightly there. I like this too.

Taste is a bit different than the scent, a more malt presence, less sage and lemon flavors, but pretty smooth.

Mouthfeel is good, well balanced, good flavors throughout.

A very good unique beer, but not extremely drinkable.

Recently purchased at Oak Tree in S. Plainfield, NJ.
Flip-top bottle - had a label that looked like a possible freshness date with numbers and letters - the 6 and the A were marked in red, whatever that means. It gave a loud "pop" when opened.
Poured a hazy golden with a great deal of small-bubbled fast and steady carbonation and a very large towering white head that became a patchy white head after a few minutes. It left plenty of lacing.
The smell was of floral herbs and spices, especially sage.
The sage taste was up-front. It had bitter, earthy tones. The alcohol was well-covered. It had a slight medicinal taste. Outside of a slight fruity (orange-like) hint as the drink is near the finish, the taste was fairly constant.
It had a bitter, earthy feel. After the head settled, there was a slight water thinness, but a leafy, sage-like aftertaste was dominant in the aftertaste. A sharp dryness was left in the end.
Overall, it had a sharp, unique taste. It was like a cross between a Belgian ale and an herbal tea. It's something you really have to be in the mood for. It's certainly not a session brew, though I did grab a second one after a while. But, one or two in the right mood is enough. It's largely a "something different" brew - a bit too much sage for me, personally.

Swing-top 33 cl bottle from Knightly Spirits in Orlando. Aroma is sweet and fruity with a potent spicy note that I rather enjoy. The body is a dull yellow/gold and holds a three fingers thick bubbly white head that is very lasting. Bitter and herbal at first with some dry sweetness and lots of floral spice and bitterness. Very crisp mouthfeel....nice drinking feel to it. Very nice brew.

Poured from a 33cl/11.15oz flip-top bottle into a Loterbol tulip.

The flip-top popped, loud, like a champagne cork. On initial pour, the glass was filled from stem to rim with foam. After a couple of minutes the foam settled and left nice sticky lace all down the sides of the glass.

A: Honey colored and hazy. Nice and unfiltered.

S: Floral earthiness from the sage. Peppery and mildly fruity (pear and/or apple).

T: Hints of spicy Belgian Pale Ale flavor. Deliciously musty funkiness brought out by the sage. Minute hints of cinnamon or cardamom. Nice dry, peppery finish.

M: Pleasantly oily thinness. Carbonation settled right down and became rather still, compared to how it initially poured. Just right for the style, IMO. Peppery dryness lingers on the tongue for ages.

D: Quite refreshing. Could easily see spending a day with a few of these.

p.s. I swirled around the dregs from the bottle and poured them into a seperate shotglass. It poured the color of pear nectar, light brown and opaque. Much fruitier nose than the rest of the bottle. Exceedingly dry, must be all the sage in the sediment. A nice way to compliment a fine beer!

Sampled 1-9-2007. Pours a cloudy straw gold with a big off white head. Nose is yeasty, but gently floral as well. Flavor is quite unique. Starts off like a milder Belgian style brew and then you get an acrid flowery edge to it that leaves a plant-like aftertaste in your mouth. Feel is carbonated but light in punch from ingredients. I think it is drinkable, but for people who are not into this style, I can definitely see them not liking this at all since it is such a unique production. But for me, I'd probably give it a go again. Even though the price is a bit high.

A: The beer is cloudy light yellow in color and has lots of visible particles floating in suspension. It poured with a thin white head that consistently covered the surface and has a light to moderate amount of carbonation.
S: There are strong aromas of sage in the nose, which smell very reminiscent of a gruit beer.
T: Like the smell, flavors of sage stand out prominently in the overall taste, which also has flavors of spices.
M: It feels light-bodied on the palate and has a light amount of carbonation. There is some spiciness in the finish.
D: The beer is actually quite easy to drink and I would consider trying it again due to its unique taste.

Poured from a 11.15 oz, flip top bottle

A: Pours a hazy deep golden/peach color under a fingers worth of white head. Some lace, some retention.

S: Some fruity undertones with obvious spice from the sage. The spice reminds me of a marinara sauce, like for a pizza. That may sound wierd, and it is a little, but it isn't bad.

T: Again, spices are prevelant with hints of the yeast that is floating around. Still seems to take on an Italian spice type note that is very unusual, but again it's not bad. Mostly dry in the finish with some of the spices sticking aroound.

M/D: Mouthfeel is very nice, creamy with a fullness that surprises a little, but still on the light side. Drinkability is a paradox for. Would I sit here all night and drink a bunch? I could, but the spices would wear on me. However, the way the spices present themselves to me, I could easily see having a nice Italian or Mediterranean dinner and going through a bunch of these. An unusual beer for sure, but very good.

11.15 oz. bottle,

A: Pours a cloudy yellow with a small white head, some lines of lace. Turbid, rustic, unfiltered look.

S: Heavy on the sage, herbal, grassy smell. Pungent Provencal style notes.

T: Lemon and yeast flavours hit immediately, with a light acidity. Sage and woody herbs are big on the back end, with a light hoppy finish mixed with the herbs.

M: Spritzy and lively, rather light-bodied, a bit too much carbonation for me.

D: Love the flavours of sage, it complement hops well and always makes for interesting beer, though it gets rarely used. Love the experimentation of these guys, really solid ale right here. Good buy.

Pours a murky wheat color with tons of floaties and no head nor lacing to speak of. Honestly it's a sad looking beer which makes me think twice about putting the glass to my lips.

Surprisingly when I put my nose to the glass the aroma isn't bad at all. Very herbal smelling with a nice lemon accompaniment. I kind of like this. Too bad the beer is still showing chunks and flecks, otherwise I'd be anxious to have a taste of this.

Eventually my lips meet the glass and the taste is still somewhat lemony with sweet malts playing a part as well. Not very complex, nor especially delicious, but it's not awful either.

Mouthfeel is thinner than the chunky appearance would suggest. Very slick, but with a somewhat dry finish.

Man, if this beer wasn't so ugly I'd have rated it higher. It's still only an average beer at best, but jeez, it looks like golden pond scum. Maybe worth a try if you come across it. Maybe.
