OK. Saison is for interpretation. Our range typically stretches from the over-herbal to the balanced to the wild.
XV Saison is a walk on the wild side. (I'm a stodgy old man, so wild is not my thing.)
But XV is an appropriate rendition within the saison's wide playing field.
Sour fans will like this more than me, but I appreciate the thought that went into XV.
My biggest disappointment is XV did not make want more of my world-famous ratatouille. (That's OK, it's better the next day.)

Had it on tap in a tall snifter. A slightly cloudy yellow with a thin head and lacing. Very fragrant fruity smell, mostly of grapes and lemons. The taste is of white whine and lemon, sweet and tart with a bit of earthy funk. Nicely refreshing!

A cloudy, yeastie,wheat gold color. Still very active. A very nice, light foamy cover, thin but effective.

A lemmony, zesty golden wheat, wild yeast. Awesome aroma.

The flavor is very wild, farmhouse supreme. Zesty, earthy and sour yeast bite! Wonderous, simple but complex as well.

The feel is very crisp, exciting light but smooth and slightly dry finish.

a: pale gold, hazy, little to no head with just a bit of lacing

s: funk, pepper, apple cider vinegar, a slight astringency/malt vinegar quality (think sarsons) definitely an astringent pinch, also fresh sliced apple

T: immediate pepper and lime notes, not quite lemon, slight hoppy bitterness (nondescript), some suggestions of pear and almost like a pineapple but without the sweetness, a definite juicy quality, the sensation of biting into a sweet tart

m: a tad oily but not in a bad way

o: decent but underwhelming, has some of the surface sour character of bon chien but not amazing, would buy at a bar if the price was right which i can’t help but imagine it wouldn’t be, kind of odd because it does not taste like a saison, a BPA or a belgain blonde but it borrows slightly from all of them, decent not remarkable, you don’t have to have it but you don’t have to turn it down if offered either

Slightly hazy dark golden color with beige head. Aroma has intense farmhouse notes like fermented fruits, wet hay and other rustic notes. Taste starts with a hint of fruit tartness but gets more balanced and fruity, slightly malty with farmhouse flavors throughout and finishes quite dry with a slight amount of bitterness. Medium body and carbonation. A really rustic, well made, elegant farmhouse ale.
