Sahalie is the flagship brand of The Ale Apothecary, brewed year-round of malted barley & wheat and Goschie Farms Cascade Hops. Hop bitterness and acid produced by our house lactobacillus culture provide the balance to the malt and oak structure of the beer. She spends up to 1 year in our oak barrels during a long, relaxed fermentation prior to a month-long dry-hopping (yes, in oak barrels!).
Our sensory experience is a tropical & citrus fruit nose of apricots, pineapple, and orange produced from yeast esters and hop oils. The palate is tart and pithy, combining earthy and herbal undertones that evolve as the beer warms & opens up within your glass.

Re doing the review since my first bottle was sadly spoiled.
Pours a nice colour somewhere between yellow and orange and has a nice small head that leaves a ton of lacing.
Aroma is wild yeast, funky acid, and tons and tons of fruit. So so much fruit it’s crazy. Some dark, some tropical, and everything in between. Some funky soil/pine here too and some malt bready character. Very complex aroma with a ton going on.
Taste follows the nose. Every fruit in existence it seems like with some acidic character, some breadyness, pine, and lots of funk. Cool flavour profile here.
The mouthfeel is quite pleasant. Not a ton of carbonation but nice full body with a resiny dry finish.
Overall, this is a super cool wild ale but at $55 per bottle where I am it’s definitely not worth that. I appreciate the complexity of this beer though, very interesting and enjoyable.

Wild ales not generally my style but this is a treat. Brewed June 1/17, bottled October 19/18. 1256 bottles, 10.05% ABV.
Split 375 ml bottle two ways - first half pour a brilliantly clear orange golden with short lived bubbly white head; second half ended up a cloudy apricot as got the dregs…
Aroma off the top funky and fruity - apple cider vinegar, citrus, tropical fruit with herbal and yeasty notes, grape, wine like.
Taste is up front sweet with a barrage of fruity flavours - citrus, apricot, pineapple, grape/white wine; a bit floral and again herbal, woody, with a distinct but not overpowering lactic tartness.
Sweet yet drying medium full mouthfeel, briskly carbonated with a lingering fruity tartness.
A very pleasant and refreshing diversion from my usual fare.

Musky perfume, dry cider, warheads sour candies, oaky tannins, white wine, wildflower honey, bit of booziness. Very fascinating and complex offering here -- unlike any wild ale I've had before. The sweetness of the malt bill really cuts through the lactic acidity nicely

Corked 750ml bottle. Batch October 18 2013
Pours a deep, dark rusty orange. Absolutely incredible funky, musty aroma, ooh yes. Big floral and apricot notes, some caramelised pineapple. Taste follows the nose. Sweet, not too tart. No heat whatsoever. Layers of mature, dried fruit. Peach and apricot. Slightly woody. Complex yet accessible, and delicious. Glad I saved it for this long but also feel like it was a well timed opening. Beautiful stuff.

L: Clear honey golden pour with thin fizzy white head. Modest ring of lacing.
S: Funk and fruit. Tangy apple cider vinegar mixed with sweets.
T.F: Complex. Honey sweetness up front. Fruit and funk with a bit of tartness. Not particularly sour. Strong oak... white wine, citrus, and peach. Pear and apple skins.. some herbal hops and earth. Smooth... well carbonated and medium bodied.
O: An outstanding and complex brew. World Class beer.... one to seek out.

L: Poured from a bottle to a snifter glass. Had a burnt orange color and a very cloudy consistency. There was a quarter inch of foamy head that lasted a below average amount of time. Not much lacing, though.
S: A very good aroma of citrus fruit, tropical fruit, wood, yeast, and apricots.
T: Tasted of a bit of tropical fruit (pineapple, in particular), some apricot notes (a surprisingly subtle presence), a decent bit of yeast (present throughout, though subtle), a little bit of oak, and a decent shot of citrus fruit (orange, especially). A slightly unusual, yet fruity and tart flavor. Pretty tasty.
F: A good amount of carbonation with a sharp finish. Medium-bodied.
O: A very well done sour beer. Worth a try.

Dark copper colored with excellent clarity and vibrant carbonation bubbles. There’s a fingernail of off white around the rim and covering less than a quarter of the top. The aroma is of merlot, brettanomyces, wheat, and oak. I’m tasting merlot, wheat, oak, and brettanomyces in phenomenal harmony. The mouth is moderately carbonated, dry, and crisp. It’s nearly like drinking champagne.
