Notes: 100% Brettanomyces Fermented Dark Farmhouse

Inspired by Brabant (remember that one?) and the goodness of its marriage of Brettanomyces fermentation and Belgian dark malts, we’ve crafted this celebratory wild ale using three strains of Bretts. Our house strain, Brettanomyces drie, brings loads of ripe stone fruit aromas to the mix. Brettanomyces bruxellensis lends the classic horsey and rustic aspects of a traditional wild ale, while Brettanomyces custersianus delivers massive tropical fruit essences to the flavor party. Add some beautiful, dark and robust Belgian specialty malts for caramel, chocolate and fig elements and you have this — our rendition of a Dark Farmhouse Ale.

22 oz bottle. Pours brown with a medium fizzy tan head that goes to a thin film that leaves little lacing.

The aroma is sweet sugary chocolate malt with tart funky dark fruit and some brett and acidic roast.

The flavor is sweet sugary dark fruit and some chocolate malt with some tart sourness and funky brett. The mouthfeel is medium to full bodied with smooth carbonation.

Overall, interesting but a bit too sweet for me.

Appearance: dark brown to black, pretty clear with some light shining through. Nice rocky head

Nose: sour cherries, malty sweetness, some clean Brett funk, citrus pool, bitter orange, minerals and rubber/band aid

Taste: follows the nose but with a serious complexity and drinkability. The beer has very low carbonation IMO, cherry candy, vanilla, light on the Brett funk, super delicious and drinkable, slight minerality and a herbaciousness to it as well. Slight sourness in the beginning that leads to a delicious sweetness later on and a crisp, dry but lingering finish of light Brett funk.

Overall: very impressed with the beer. Avery really knows how to make something funky. I wish they would not pasteurize their barrel-aged and sour/funky beers. I think it detracts from the overall drinking experience.

Appearance: pours a deep garnet to mahogany color. a finger or so of a tan head with lower retention and leaving little behind. dark and opaque but a small amount of brightness when held to the light.

Smell: chocolate, pineapple, dark fruit. light toffee.

Taste: opens up with some tart cherry, followed by fig and raisin. some light vinous character peaks through. a rich maltiness along with some notes of chocolate, toffee and a tiny hint of espresso. returns to fruity with pineapple. more earthiness and slight oak character.

Mouthfeel: low carbonation. low acidity. stickiness left behind. fairly dry. little to no bitterness.

Overall: a nice beer overall but nothing too special at this point. hard to say what is the brett and what is malt and hop. the brett seems young and it would certainly be interesting to see this develop.

Brewed with Chateau CaraRuby, Caraamber, Dingemans Chocolate, Special B and 2-Row. Hopped with Hersbrucker and Bravo. Fermented with Brettanomyces custersianus, Brettanomyces drie, Brettanomyces bruxellensis.
7.9% ABV.

Pours out to a near black, very dark mahogany, forming a nice poofy medium tan head with very good retention and moderate lacing. The nose is sour cherry pie, horse blanket and funky basement. Mouthfeel is lightly tart with a medium light body, slick and smooth mouthfeel, not overly carbonated, more towards 2.0 carbs or so. Very nice. The taste opens with sour cherry pie, then followed by a little brown ale caramel and mild toast, but no roasted flavors per say. Subtle dark fruit. Watery finish. Very mild to minimal bitterness. No appreciable off flavors.

This is an interesting beer. Most farmhouses are way to carbonated for me, so this is a nice surprise. I dig the cherry pie flavor, but was hoping for a thicker mouthfeel and a little more roast character. A nice beer.

22oz bomber: This one pours a dark brown color. There was a thin tan head that went away quickly, with no lacing. Good nose. Brett, earthy and some dark fruits are predominate. Good flavor. Some sourness, but not a lot. Dark fruits, a hint of chocolate and some breadiness. Very nice!

The beer poured dark brown to black in color, and formed a beige colored head that was about one finger thick. The smell was a mix of sweet molasses, ripe cherry, and green apple. There was a definitive note of Brett, but not as much as I was expecting from a 100% fermentation. The taste was more like a diluted quad, than a farmhouse ale, as I could detect raisin, green apple, vanilla, fig, and toffee. The funk from the Brett was quite subdued. The beer was very light on the palette, hid the alcohol very well, and was easy to drink. Decent sour ale, but not very farmhouse evoking.

Appearance: A one inch head of ecru foam settles on the coffee colored liquid and dribbles a few spots of lacing

Smell: Chocolate, funk and a range of fruit tones; very earthy aromatics

Taste: A layer of chocolate appears at the outset and sets the base as the other flavors develop; fruit flavors of grape, peach and pineapple edge into the flavor profile without drama and in the mid-palate, the wild yeasts take over, bringing the funk and balsamic vinegar drizzle; dry, woodsy and increasingly leathery/funky, through the finish

Mouthfeel: Medium body with moderate to high carbonation

Overall: 23 skidoo - Avery has nailed this one, bringing an interesting combination of flavors to a surprisingly easy to drink farmhouse ale

22 ounce bottle - $8.99 at Total Wine & More in Kennesaw, Georgia.

Appearance: Pours a very dark brown body with a short-lived, sandy beige head that fades fast.

Smell: A taint of bile burps, with chopped cherry, raisin drizzled generously with vinegar. Potting soil, baker's chocolate and store-brand cola.

Taste: A sweetish chocolate-cherry cola vibe and a steely-eyed acetic bent with a soiled sourness about it, hinting pointedly of coughed up bile. A few drops of old coffee. Earthy, oh, heck, let's just wrap this up, I'm throwin' in the towel on these 22 ounces of 23.

Mouthfeel: Medium-bodied. Relatively low carbonation. Slight mouth-coating quality about it.

Overall: Just dreadful, couldn't finish the bottle by a long shot.

Year number twenty-three is a year of reflectance for Avery brewers, one of getting reacquainted with old friends, old flavors and old memories- many of those found in their one-off sour ale, Brabant. This milder, maltier and safer taste is all that Brabant was reincarnate.

Dark brown with faint tawny bronze margins, a creamy sand-stained head begins to mount. Charging with dark fruit aromatics of cherry, plum, blackberry, fig and musty red wine, a scent of cocoa and horsey funk adds décor. Underneath, the initial taste is bready-sweet with toast, chocolate, caramel and dates.

Lighter on the palate in its intensity, a sense of wood rot pulls from the malts and captures the soilish, weathered wood, attic-like earthiness that's sweet, mildly gamey and of light mushroom. Dark vinous fruit carry a red currant, cider and cabernet character along with dried pineapple and mesquite while the earthen counterparts are peppery, medicinal and souring.

Creamy and drying, the beer's medium body trends watery and faintly cola-like as its wood and pepper balance masks the fruit in finish. Its this woodsy, spicy, tart character that awaits a return of funk and fauna that simmers gently in a warming afterglow.

Pours a chestnut tinged mahogany with a pinky of mocha colored head. Bleak lacing & head retention

S: Sourness & funk, a little apricot. Cherry & horse blanket as this warms

T: Figs, raisin, funk, apricot, & a little grassiness up front. Concord grape, cherry & funk as this warms, a little herbal hop & woody dryness as well. Finishes with cherry, funk, woody hops &

MF: Medium body, slight carbonation. Carbonation picks up once warm

I really enjoyed this one, very drinkable and a nice balance of funk & flavor

Black in color with the slightest hint of light seeping through. There's just a faint trace of beige head around a third of the rim. Aroma is a complex blend of fig, Brett, stone fruit, plum, and dark malt. I taste a very fruity and tart blend of plum, stone fruit, dark grapes, tart Brett, and fig. The mouth is highly carbonated, lightly chewy, and slightly alcoholic.

Poured into a chalice a very nice dark brown color, very nice carbonation, with a pretty nice small foamy/fizzy off-white head, which leaves some sticky lacing behind. The nose is malty, yeasty, very nice funky note, slight tart, kinda chocolately. The taste is malty, yeasty, very nice funkyness, slight chocolate, very slight tartness. Medium body, ABV hidden very well, nice little dry/bitter finish. Overall, this is a pretty tasty brew, quite a different take on the style. Recommend.

Poured out of the 22 oz. bomber bottle into one of my tulip glasses, this beer pours a dark brown, almost black color with a tan colored head that's about an inch thick when first poured that eventually settles to a thick film layer of foam on the beer's surface along with a thick ring lining the inside of the glass and pretty decent lacing. Aromas of bready, roasted malts and hints of chocolate and esters of cherries , plums, and figs are all certainly present along with a nice bit of yeasty barnyard funk. The taste is pretty much the same, with roasted, bready caramel malt sweetness with a nice hint of chocolate that gives way to the aforementioned fruits, a hint of pepper, and some barnyard yeasty funk notes that has a touch of tart sourness. One of the most sour saisons I've ever had, and I very much like this here. Good balance of flavors. Has a crisp, yet smooth, medium bodied mouthfeel with moderate carbonation. Has a clean and dry finish and a fairly dry aftertaste.

A: This poured a clear black cherry with moderate tan head.
S: It smelled like earthy wheat bread and grassy hops, with some sour cherry and sweet prune.
T: It tasted like whole grain bread and creamy wheat, with some grassy hops and sour cherry and sweet prune. It had a clean sweet tart aftertaste.
M: It was watery with moderate carbonation. Decent body.
D: This was an interesting brew with complex scent and taste. Well balanced, but not that well integrated. The body was nice, and the finish was really smooth, so it was quite easy to drink. Age may help this beer gel into something more impressive. Fresh wasn't bad, but it wasn't memorable either.

Pours a black color. 1/4 inch head of an off-tan color. Slight retention and slight lacing. Smells of strong bacterial funk, sweet malt, syrup, slight roasted malt, alcohol, slight liquor, and wood (a fresh, earthy, moist sawdust aroma). Fits the style of a Saison / Farmhouse Ale. Mouth feel is sharp and clean, with an average carbonation level. There is also a slight dryness. Tastes of syrup, sweet malt, hint of roasted malt, bacterial funk, strong wood, slight liquor, slight alcohol, and slight dark citrus. Overall, weak appearance, complex aroma and body, blend is a little off (too syrup and liquor concentrated), but the wood aroma is particularly appealing.
