From a 355 ml bottle (bottled May 19, 2016) to a snifter. Reviewed from notes dated November 28, 2016.

A-The beer looks thin coming out of the bottle and somewhat flat. A short, brown head fades immediately and leaves no lacing on the glass. The beer is opaque and nearly black. Uninspiring.

S-The aroma is much better than the appearance. I sniff roasted coffee beans, bakers chocolate, a lot of cinnamon, some caramel, lots of vanilla, and hints of fruity alcohol. The chilis have fallen off a bit on this bottle, but there is still a little tickle of heat, especially as the beer nears room temperature.

T-The taste mostly follows the smell. Lots of cinnamon spice, vanilla, and caramel. The beer is pretty sweet and the cinnamon doesn't do much to dry it out on the palate. I am not picking up much pepper flavor or heat, but I can feel just a little hint in the back of each swallow. Alcohol is well hidden.

M-The beer is on the thin side, especially for Avery. Carbonation is chunky.

O-Avery's entry into the spiced/chili/chocolate BA stout isn't quite as good as I would have hoped, mostly because of the thin mouthfeel, but this is still a tasty beer. I would like to have tasted it fresh when the chilis were at full strength.

Poured from a 12 oz. bottle into a chalice.

Appearance: Pours midnight black with a moderate amount of bubbles. Slight finger of tan head that settles into a thin creamy patch.

Smell: A rich and roasty dark malt driven aroma with a scent of bourbon, chocolate, and peppers. Barrel scent of bourbon whiskey, vanilla, oak, and wood. Dark roasted malt with a scent of cacao nibs, coffee, vanilla beans, toast, biscuit, and caramel with yeast. Spice scent of chili peppers and cinnamon. Sweet hints of molasses. Also some hints of tobacco and leather along with some anise. Subtle hints of dark fruit. A very good complex aroma.

Taste: Like it smells, a rich and roasty dark malt forward taste with notes of bourbon, chocolate, and peppers. Barrel notes of bourbon whiskey, oak, vanilla, and wood. Dark roasted malt with notes of dark chocolate, cacao nibs, coffee, vanilla beans, caramel, toast, and biscuit with yeast. Hot notes of chili peppers along with some cinnamon. Sweet taste of molasses. Some notes of tobacco, leather, and anise. Light undertones of dark fruit. A really good taste.

Mouthfeel: Medium to full bodied with a moderate amount of carbonation. Slick and somewhat syrupy. Fairly boozy but it isn't overwhelming.

Overall: A really good Barrel Aged Imperial Stout. Good mix of roasty chocolate notes with the spices and bourbon.

2016 vintage
~ 4 months from bottling date

Appearance- Pours a black color, opaque, brown hues at surface when swirled. Half finger thick, light tan colored head, soapy. Lots of alcohol legs coat glass, some spotty head lacing.

Aroma- Rich roasted malts. Sweet chocolates, creamy vanilla and caramel. Mild cinnamon spice, earthy peppers w/ some noticeable spicy heat. Mild bourbon and drying oak, slight barrel char and spice.

Taste- Roasted malt, cocoa, sweet chocolates, creamy vanilla, caramel. Dry oak barrel, spice, dash of cinnamon, earthy peppers, spicy heat builds into the finish. Hints of bourbon and alcohol throughout.

Feel- Medium bodied, slightly thinner at times though. Spicy heat is moderate, fairly dry throughout. Moderate carbonation.

Overall- Nice representation of the style, good amount of vanilla and cocoa, and the spiciness from the peppers is noticeable but well balanced into the beer. Cinnamon is fairly subdued, only get a flash of it once the spiciness hits. Bourbon and barrel characteristics are mild, but there is a good amount of alcohol heat.

Mexican Chocolate Stout Tasting with D.C.
Best tasting yet.
All 6 beers were anywhere from very good to magnificent.

**Avery Xolotl
Bottle to snifter.
LOOK: thinnish look, dark black, beige head.
AROMA: Vanilla and Cinnamon and prominent, tuoch of pepper.
TASTE: Vanilla and Bourbon. Pepper comes in late and settles, then gets stronger as you drink. Strongest pepper in the group.
FEEL: Carbonation is about medium. Thinner body allows more bubbles.

On tap and bottle:
Tap seemed smoother and more dessert-like. But I've bee sipping on a bottle pour for a while.

Head sustains and actually provides lacing on a hotel plastic cup.

Nose shows a bit of chocolate, but the cinnamon spice note actually stands out. Subtle tang (maybe the pepper note), and spice fares fast.

Taste is initially chocolatey and a sweet marshmallow note to it. This is how I felt about the tap beer (that was a sample). The bottle, once warmed, features the pepper more. The heat, which may be caused by both pepper and cinnamon, is evident, though I actually successfully ignored it for half the beer.

My initial impression reminded me of Birthday Bomb! This beer did end up more spicy, and strayed heavily from the dessert-ish category I originally put it in. Pepper spice, though nicely integrated, is much more noticeable than I get from Prarie, though.

Well balanced. A real tingle on the tongue which I presume has to come from the chiles. However, the flavor is not hot or overly peppery. Though the beer is brewed with vanilla, I didn't find it offensive as is true in so many stouts that have vanilla added.

Black in color and impenetrable to light. A fingernail of brown surrounds the rim. I smell chocolate, cinnamon, vanilla, and sweet bourbon. I'm tasting bourbon, then cinnamon, chocolate, vanilla, and dark roasted barley. The mouth provides a bit of heat from the chiles and warmth from the bourbon.

12 oz. bottle. Black body with no head. Smells of alcohol and cinnamon. Sweet with a little chocolate. Tastes boozy. Cinnamon. Heavily sweet. A little bit of chocolate hidden by alcohol. Rough and tough to drink. This is too much.

Pours like motor oil with a thumb of tan head. Stellar lacing & above average head retention

S: Vanilla, a little Bourbon,

T: Follows the nose, some coffee, red pepper & cinnamon up front. Heat picks up as this warms, vanilla & cinnamon have strong presence as well, some cocoa too. Finishes with cinnamon, heat & a little raisin & vanilla

MF: Fairly thick, slight carbonation; thins out as it warms

Pretty good, but a little too much heat for my liking, I also want them thicker

Bottled May 19, 2016. Very dark black color but with an odd, fizzy carbonation like soda. A finger of head forms and settles to a thin film. A little bit of lacing is left down the glass. Aroma of oak, alcohol, bourbon, vanilla, earth, and chiles. This stout is still contains a lot of alcohol heat. I love the chile heat. Does it really work with a stout with this much alcohol heat however, not so much. Nice earthy chile flavor as well. The vanilla and cinnamon are a bit muted. There is also a little bit of bourbon flavor. This beer is dominated by the adjuncts as I am not picking much from the base stout. Surprisingly the carbonation is not out of control or it all dissipated during the pour. Nice smooth texture to go along with the large body. Nice feel. Obvious why this beer is still sitting on the shelf almost a year latter. Definitely not worth the price of admission.

This beer doesn't drink nearly as big as the ABV would lead you to believe. A little on the thin side actually. Initially the flavor profile is a bit muddled, with earthy spice dominating. Then the bourbon makes itself known, along with dark chocolate and cinnamon. Becomes a little more cohesive and nuanced as the beer settles. Much more chocolate and sugar come out too. I really dig the level of spice.

12oz bottle poured into an oversized wine glass
Bottled 5/19/16

A- pours deep black in color with a thin foamy khaki colored head that reduces to a ring around the edges of the glass

S- lots of bakers chocolate and confectioner sugar up front, almost pastry-like. Undertones of pepper skin, cinnamon and vanilla cream. The bourbon is subtle but noticeable

T- very chocolaty up front with a cake-like emphasis, followed by vanilla whipping cream. Mid-palate brings out notes of cinnamon and pepper skin. The finish brings out subtle bourbon barrel notes and lingers of cocoa and pepper burn

M- medium body with moderate carbonation leads to a slightly foamy mouthfeel and a creamy finish, pepper burn on the linger

O- sweet cocoa dominates the other adjuncts, its good but needs more barrel character
