How to make the most out of the funk? Answer: let it wait for seven years. That's nearly the time that's expired since its bottle date. Avery's Depuceleuse has shed most of its brazen sourness in return form refinement, earth and smooth taste and texture.

The vintage ale pours a tawny ruby with a light translucent veil. As a whisper of foam swirly about the collar, it trails into a most brandy-like appearance. The earthen funk of brettanomyces and extended age rewards the nose with the pungency of weathered oak, cork taint, dry attic, and a gentle waft of the barnyard. Even a kiss of parmesan cheese catches the nose as the first sip hits the tongue. Faint biscuit, wafer and residual wine-like sweetness grazes the tip of the tongue for the start of a complex culinary show.

Trending much more earthy than sour, the ale has dried beautifully and its aggressive sourness has mellowed. Its woodsy, gamy and rustic roots have firmly taken hold and its middle palate is alive with peppercorn, tannin, almond, vanilla and strong vinous spice. Its sourness carries a dry balsamic tone that lies on dry cider and rose wine. Finishing with the mild tannin balance of oak, a marzipan and leathery taste concludes.

Light, oaky and dry, the beer holds a savory and nutty succulence that makes the flavor register richer in texture, but the smooth acidity and wine notes glide along the mouth with a feathery lightness and a whimsical earth. Sea brine, cured leather and cherry provide echoes of taste that resonate in a short musty aftertaste.

Glad I got to try this. Bottle poured to tulip, small amount of creamy head. Dissipates quickly on top of ruby and amber body with orange highlights.smells of tart cherries but with some complexity from the barrel, toffee and figs. Tastes like tart cherries, zin barrel flavor comes through. Subtle caramel and dark fruit undertones. Medium sour. Mouthfeel is the highlight. For the lack of head there is a great amount of carbonation and tight little bubbles that play on the palate. Medium body, very nice.
A very good beer, nice with 4 years of age on the bottle. Quite enjoyable.

Bottle served into an Avery stem-snifter as the Easy Tiger bar here in Austin, Texas on a special Avery night. Cost was a wallet-raping #30.00 USD (it was my birthday, so I paid it). 9.59% ABV. Bottled March 31st, 2010. "Barrel aged wild ale." Expectations were high. Reviewed from notes taken two nights ago.

A: No bubble show forms as it's poured.

Pours a half finger wide head which dissipates within 10 seconds. Body colour is a muted dull brown. Nontransparent and opaque.

Admittedly, it's not much to look at, but I'm optimistic.

Sm: Musty sour cherry. Zinfandel/white grapes. Some brettanomyces funkiness along with the mustiness. Lightly tat. Doesn't seem too sour. Depleted white wine. Not too tannic. A bit acetic. Fleeting hints of oak wood. No hop character. Quite appealing, though the age is noticeable - in a bad sense. Mild in strength. Luscious and attractive.

T/Mf: Luscious full grape notes. Nice fruity smacky tartness. Tame sourness. It's not puckering. Pleasantly sour, with some nice acetic character. Subtle timid brettanomyces funkiness. No hop presence. Malty base is seamless: red malts and Belgian malts provide a hardly noticeable foundation which doesn't intrude on the sourness. Rustic wood lends it a natural cohesion, but there's no identifiable oak. The grape is fantastic; I definitely get zinfandel when I search for it, but I'm not so pretentious I'd wager I could recognize it blind. The cherry notes could be more interesting; they're a bit shallow. The alcohol is dangerously well hidden. Well balanced, though it seems age has made it a bit reticent.

Smooth, wet, medium-bodied, almost refreshing. A bit too thick and imposing for the style and flavour profile.

I don't find any spices in the flavour profile. Below average depth of flavour. Below average intensity; quite mellow for a sour. Average duration of flavour. I like it.

Not oily, harsh, astringent, boozy, hot, or gushed. Has a decent presence on the palate. Not too acidic.

Dr: Quite drinkable. I think it'd be better fresh. Drink it now if you have one. At $30, I definitely wouldn't buy it again, but it's nice to try once. A tasty but not world class sour from Avery. Hides its ABV well. Will satisfy sour lovers but not blow them away.

12 oz bottle, bottled on 3/31/10. Pours slightly hazy reddish orange with a fizzy off white head that quickly goes to a thin film.

The aroma is woody lactic pie cherries and red wine.

The flavor is sweet and tart pie cherries with a nice sour twang with some wood, red wine and maybe a little oxidation and band aid in the finish. The mouthfeel is light to medium bodied and a bit watery.

Overall, a decent sour cherry beer. I wonder if I hung on to it a bit long though.

bottled march 31, 2010.

Appearance: medium red bodied beer with a small white head.

Smell: oak, vanilla, and sour cherries.

Taste: moderately tart cherries. nice oaky notes. A touch of vanilla. linger sour that is not over powering.

Mouthfeel: moderate body with low carbonation. gets syrupy as it gets to room temperature, but not distracting at all.

Overall: nice sour ale with cherries. i am really impressed with this wild beer. It showcases the cherries very well. Good job Avery's! I am becoming more and more of a fan!

Initial head turns to collar nearly right away. Murky dirty copper colored. No head or lacing after a bit.

Gave my nose a hissyfit. Wine note definitely come though, sour cherries all the way.

Woooo. Cherries in the forefront. "Oaky, vanilla." Mostly oak. Cherries melt into the wine characteristics.

Medium mouthfeel, low carbonation.

Good wine barrel aged beer here. Reminiscent of Gilgamesh. Boozil hit ya without warning. Avery.

12 oz bottle. Bought long ago for $8.99. Bottled March 31, 2010.

Appearance: Cloudy brown lakewater with a very short lived head and no lacing. Its not attractive, but it is an aged beer...

Smell: The cherries are very noticable and smell sweet like cherry pie more than tart. Other berry aromas, vanilla, and oak from the zin barrel. Obvious brett funk in there too.

Taste: Tastes much different than the smell. Smell is sweet cherries and fruit with oak, taste is strongly oaky, vinous, spicy, almost sharp. Lots of funk and some booze.

Mouthfeel: Appears pretty flat but feels adequately carbed. Smooth and a bit tannic on the end.

Overall: I think this was a success, but it could be better. All the flavors don't work perfectly, but its still a tasty beer.

Appearance: Pours a cognac color with a very modest head that quickly fades to a ringlet leaving a few dots of lace

Smell: Unsweet cherry and vinous Zinfandel barrel elements; after two and a half years it is still somewhat boozy

Taste: Cherry and Zinfandel barrel flavors building in tartness through mid-palate; the barrel elements arrive, after the swallow, along with a building funky character

Mouthfeel: Medium body with low to moderate carbonation; puckery

Overall: While an interesting effort, the flavors never really come together on my palate, as the fruit and the brett clash in the finish

This beer pours a dirty amberbish color, essentially somewhere in between an amber with brown highlights or the other way around. It poured with little carbonation and only a faint lacing around the glass. The nose is nice. It features a nice sour initially from the cherries, some oaking, nice funk, a touch of strawberry, funk, and a brett finish. I really like the nose. The flavors are nice and pretty complex. It is dry and funky. The cherries have a nice presence. The brett takes charge on the finish. If you swirl it around you can even get some earthy strawberry, indicative of a zin. I really like it. It's interesting and very drinkable. Overall this was a lot better than I anticipated and is better than the others I've tried. This one is worth your while.

Picked this up today at Healthy Spirits…a very random and pleasant surprise. Also, I have another in the cellar thanks to GRG1313. Cheers!

Appearance – Pours into my cool hotel glass with a murky dirty water brown with red mixed in. About a half finger of off white head comes and goes faster than…well you can finish that sentence. Zero lacing.

Smell – Yikes…smells very acidic. Lots of tart cherries, green apples, brett, barnyard funk. The aroma is “harsh” if that makes sense…hopefully not an Immitis repeat.

Taste – Hmm…oddly this is not nearly as acidic or in your face sour as the nose led me to believe. It is actually more sweet than anticipated. The cherry flavor is tart but has just a hint of medicinal flavor reminiscent of cherry Robitussin. Slight vanilla and oak…definite odd lactic flavors at the end. [edit] The more this beer warms the more tart and acidic it gets. It doesn’t really improve the beer….

Mouthfeel – Medium bodied, finishes tart and dry.

Overall – Now that I’ve had this, I will sit on my other for years just for the hell of it. Not the best by Avery by a long shot, though there is nothing horribly wrong with it either. Just kind of a blah beer.

Poured from the bottle into my Russian River Belgian glass. Huge thanks to Chris for this awesome extra!

A - Pours a blood reddish brown with a finger and a half worth of tan/cream head, which fades somewhat quickly to a thin lacing around the edge of the glass. Really a beautifully colored beer. The fading head is somewhat disappointing, but I can get over it.

S - Tart sour cherries, backed by a zinfandel finish. The barrels definitely took over on this beer, giving it the scent of a sour cherry infused white zinfandel. Really a different style of wild ale, and I must say, I rather like it. I do pick up some slight oak and vanilla notes as well, obviously from the barrel. A very complex and unique beer.

T - Starts of sour cherries, and hardly backs off. Vanilla notes and oak notes, but not as strong of a zinfandel presence in the mouth. It is still there, but merely a footnote. Almost a bit of a milky taste to it, which throws me for a bit of a loop. A nice taste, but not overly impressive, and a little bit of a mess.

M - A bit of a harsh bite, but it quickly fades. Overall feels fairly acidic, but not overly so. Seems to coat the teeth a bit.

O - Overall a solid wild. The nose was very nicely done, but the mouth, as I mentioned, was a little bit too much of a mess, and the flavors present in the nose didn't all shine in the mouth. Really glad to get to try it!

Enjoyed at a recent Northern Virginia tasting.

Red yellow pour with a small white head. Nothing remains after but a few seconds. Very vinegary smell. Sour but with a ton of tart cherries. Excited to taste the cherries, but the smell isn't that great The taste is all tart cherries and a bit acidic. Extremely tasty. Well
balanced, sweet, sour. Delicious. Light and carbonated well. Very dry aftertaste. I loved this and wanted to drink way more Than I had.

A- Pours a dark orange brown with less than a finger worth of off white head that stands due to tons of carbonation streaming up from the bottom of the glass. Really nice alcohol legs on the side of the glass after giving this beer a small swirl.

S- Tons of brett and funk! Acidic dark cherries, green apples, vinous grapes, and musty oak.

T- Sweet yet sour cherries up front and a good amount of funk and medicinal flavors from the yeast. The barrels don't really come through other than slight vinous flavors and a mustiness.

M- Medium bodied with moderate carbonation and a nice sour finish.

This poured out as a reddish looking brew with out many bubbles in it. The head came and went pretty quickly. The smell of the beer was really nice I thought. The taste of the beer was very tart and sour. The barrel aging on this brew was very noticible. The mouthfeel is dry and has a light body to it. Overall I thought that this was going to be a little better but I was a little disappointed.

A: Foams aggressively on pouring, but recedes almost as quickly. Brick-red and quite flat looking once the head disappears.

S: Cherry and earthy forest floor

T: Cherry and overripe plum, quite earthy. A little citric, but not very tart at all.

M: Very low carbonation detracts from this, leaving it too much like earthy cherry juice.

O: Bit of a disappointment, this seemed a somewhat muddy and indistinct. I think a bit more carbonation might have livened it up and brought the flavors out better.

12 oz into a pint

A - Pours a bright ruby color. Very thick looking but not very opaque. Head formation was about zero, but a little bubbling is obvious.

S - Super sour nose- very fruity, totally sour with a bit of earthy brett edge. Like black cherry and currants, even a little bit of tobacco.

T - Starts off super fruity, somewhat on the sweet side. Sourness comes in big time, lots of sour cherries and rasperries. The finish is very tart and puckering. Don't quite get the barrels off of this one - more of a uber potent sour.

M - Very solid mouth feel, full bodied and sugary. Clinging to the tongue big time. Missing much carbonation to balance it out - a bit of surprise on a brett beer. Alcohol is well hidden.

O/D - Interesting beer to drink (sip). Alcohol will sneak up on you easily. A bit filling form its full bodied nature. The sourness pretty much dominates the palette.

A: Pours a murky chestnut-orange with off-white head.

S: Smells very oaky, with a soft, buttery note to it. Tart cherry with brown sugar, red wine, and post-gym feet.

T: Buttery oak once more, with a mild lactic sourness and some tartness. Lots of brown sugar to give it a pronounced sweetness, finishing with vanilla.

M: This isn't dry at all; I'd call it underdeveloped. The beer hasn't finished fermenting.

O: Poor. This went into the drainpour bucket. There are many better American Wilds than this at this stage of the style's development. Skip.

Bottle poured into a tulip.

A- Pours a nice copper penny color. very minute head that dissipates rather abruptly. A thin lace holds for sometime after but eventually fades to nothing.

S- The smell is faint. At first I get the funk, followed by faint cherries and some pepper from the zinfandel barrels. Not to much oak on the nose.

T- Wow, a lot more present then the nose. Lots of funk and cherries, with a nice pepper and grape finish. Again the oak is mute.

M- I would say the mouthfeel is this beer's strongest point. The carbonation is present but not over barring, its not thin but not thick either.... its just right. It has a nice residual feel that lingers while my mouth salivates.

O- A good sour. I like the idea of using a spicy wine like zinfandel to accommodate the sour punch of brettanomyces. Wish there was more oak on this one though. All in all i can find myself sucking it up and paying the price tag on this one to enjoy again.

Pours a dark reddish brown with just a little layer of foam. Lots of coconut and vanilla in the nose with lots of horsey funk. A refined sourness with mild funky taste. The MF is creamy with a good finish. Very enjoyable.

A steady pour produces a two-finger thick, amber tinged, tan colored head that has some staying power but doesn’t leave any lacing. The beer is a dark, concentrated purple-red color that shows a brilliantly clear, light cherry red to gold hue when held up to the light. The beer smells of light cherry notes as I am visually inspecting this beer, but an actual look at the aroma has me noticing a tartness, a buttery oak note, a woody fresh cut wood character, some rotting fruit / ripe cheese combination, a diluted cherry fruitiness that is subtly noticeable in the finish. As the beer warms touches of phenolics / medicinal notes become noticeable in the nose.

Dry, perhaps a hint of sweetness, but more tart than anything, with a firm oakiness in the finish, a touch of buttery oak and a lightly astringent woodiness. The lactic tartness combines with the buttery oak notes, and both influence the texture, to give this a lushness in the flavor as well. This definitely has a medium’ish body to it, though it is still quite drinkable. The malt character is quite subtle, there is some oxidized hints of toasted malt and caramel that have morphed into a nuttiness and perhaps a hint of dry sherry. The Brettanomyces character here is quite subtle. This tastes more winelike than anything; there are lots of berry notes along with the subtle cherry notes and the oak definitely helps evoke the thought of an oaky red wine, though this is more like a simplistic red and not a big, powerful, complex one.

Somehow this is awfully bland, the malt character especially is quite weak, and even the cherry notes seem washed out. There is nothing bad about this beer though, it is perfectly drinkable.

Poured out a very nice and hazy muddy brown color right of the top. A good three finger high head leaving just a token film across it throughout the entire session.

sour. Lots of nice yeast likes smells coming off of here. A nice grain base was evident as was some fresh grass and a touch of light fruit. Nice sour cherry like smell coming off of it now. Nothing too heavy very nice light profile, some light fruit, maybe apples and pears, with a touch of some light peach and fig notes. A good bit of spices. Nice sour and tart fruit notes in the back now, really starting to dominate the closer it gets to the finish. Very nice long finish with a nice sour bite that helped walk you through the finish, but never got too out of hand or too harsh, with the flavor staying light right up until the end.

A - Dark brown with hints of maroon or purple. Pours with a very effervescent head which fades to nothing rather quickly.

S - Fruity funk. A bit of vinegar along with grapes, cherries, pears and some citrus.

T - A lot of the cherry character shows up here and it turns out to be less sour and funky than the scent reveals. However, this brew turns into a well-rounded drink when the factor of the refreshing wine-like character and tart fruit character come through.

M - Fairly light and bubbly, but it does stick around the mouth so I would call it medium bodied.

O - Very tasty, and quite refreshing for a sour. This one could be worth drinking again if it was brewed more than once.

I've had this a few times, most recently from Chris (spycow). Served in a Struise cervoise.

A - A finger of tan foam quickly dissolves to a collar, leaving behind no lace. Transparent reddish orange-brown body.

S - Cherries, vinous notes, oak, medicinal and slightly gauze-evoking brett notes, and some pie crust malt.

T - Taste reminds me of some other 100% brett fermented beers, complete with the mildly unpleasant lemon and medicinal finish. Cherries and oak made an appearance mid-palate. Not as vinous as the nose suggests.

M - Medium body, with well-hidden alcohol - there's no way I'd guess 9.59%. Higher carbonation for the style, and a tannic oaky finish.

D - It's one of the weaker Avery wild ales, but it's much better than Brabant. I'm not sure if mixed fermentation would have helped, as the gauze and medicinal brett character detracts from some other very enjoyable flavors. I'd drink it again, but I wouldn't pay for it again.

A - Hazy amber-red color with a finger of white head that had solid retention and left behind a bit of lacing.

S - Wood, funk, sour cherries, a bit of a vinous quality, and a little brett. The wood is present, but pretty light.

T - Pretty smooth, with some noticable cherry taste. Some apple, oak, vinous notes, gets nicely tart with some funk as well.

M - Pretty smooth, with softer carbonation.

O - Not a bad beer, there's a lot going on, but it tastes pretty good. Wouldn't mind having it again.

This was served in a New Belgium globe.

I found a couple of bottles of this one hiding at a new favorite store.

The appearance was golden brown with a white head.

The smell was sour with lactic acid notes and a bit of oak.

The taste started like the smell, sour lactic acid. This was not what I expected at first, but I came around to it. The oak was fairly dominant after the sour had faded a bit. The cherries and cab. sauv. notes never really came through in this brew. I am curious if they were stronger closer to the bottle date. As the beer warmed, the sour notes became more balanced.

Overall, this was a fun beer and I am interested to see what the other bottle tastes like in a year or so.
