Notes / Commercial Description:
Jacob Spears, our 6th Great Grand Uncle, is credited as the first distiller to label his whiskey “Bourbon.” He built his distillery in Bourbon County Kentucky in 1790 — 203 years before we began brewing. While obviously a bit too late to produce Uncle Jacob’s wash, we’ve instead created something far more complex. In his honor, we present this robust, silky smooth, full-bodied and altogether extremely American rendition of an Imperial Stout aged for 6 months in the very finest Bourbon barrels. This explains a lot about our penchant for big brews! It’s in our blood!

Batch 5, 4 months old. Balanced, lots of vanilla and dark fruitiness, bitter coffee finish, not hot despite abv. Surpasses the ten fidy baseline.

Appear : Reddish black with not much head. - 4/5
Aroma : A little bit of soy sauce, vanilla, bourbon, oak, malt, chocolate, roasted. - 7/10
Mouthfeel : Compared to the high alcohol, very drinkable. Full body and low carbonation but doesn't overwhelm my tongue. - 5/5
Flavor : Very smooth, bourbon, vanilla, chocolate, roasted malts, coffee, hints of black fruits. Not much booze. - 9/10
Overall : If it was like 8~9% and tasted like this, I wouldn't rate this high. But it's 17% imperial stouts and amazingly smooth and drinkable with almost no booze. Very pleasant alcohol warmth and bourbon-y taste. Great. - 16/20

2016 vintage
~3 months since bottling date

Appearance- Pours a black color, opaque. Half finger thick, medium tan colored head, creamy thick. Lots of sticky alcohol legs, coats glass. Streaks of spotty head lacing on glass.

Aroma- Rich roasted malts. Creamy, fudgy chocolates, lots of vanilla and caramel, burnt toffee. Tons of dry, spicy oak, dry astringency. Sweet bourbon, pungnant and strong. Fusel alcohol notes present.

Taste- Sweet fudgy chocolates, tons of sweet bourbon, creamy vanilla, toasted caramel and toffee. Rich roast, drying oak astringency, spicy wood. Some fusel notes on the finish.

Feel- Medium body, syrupy consistency and coats the mouth with thickness. Lower carbonation.

Overall- The barrel character is to the max, so much bourbon,vanilla, and dry oak. It makes you feel like it was emptied from a fresh bourbon barrel minutes ago. Definetly a sweet beer, loads of chocolate with only moderate roast. A treat to try and a really fun extreme beer.

Pours a completely opaque oil-black with a dense and creamy dark-tan head. Pours at 3 fingers but quickly dissipates to a thin ring. The nose is glorious: espresso, vanilla bean, extra dark chocolate, and burnt malt. Aside from the hint of characteristic bourbon-y vanilla, not a strong bourbon presence. The mouth is similar to the nose, but with added complexity. Lots of sweet molasses in front, raisins and smoked fruits in the middle, with more bitter notes of espresso and a hint of hops near the end. The mouthfeel is smooth but not creamy, nor is the body as heavy as one might expect. Medium with a slight dryness and alcohol warmth at the end. A fantastic imperial stout. Not strongly bourbon-y (at all!) for being bourbon barrel aged (compared to parabola, boulevard's variation or many others). I personally appreciate this as too many BBA stouts drown out the stout with bourbon. The high ABV really doesn't come through in the flavor (only in the effect if you're not careful). This is a wonderful imperial stout and I'll consider myself lucky if I get to have it again.
