330 mL bottle from the LCBO; best before Mar 31 2026 and served at cellar temperature. Listed at 10.5%. This has been a long-time want, and although I've had this bottle for the better part of a year, I wanted to save it for a milestone review. #3333, here we go!
Pours deep, ruddy chestnut brown at a glance, taking on more of an effervescent ruby-red hue when held to a light. One finger of loose, soapy, light tan-coloured head seeps away within a couple of minutes, swiftly reduced to a bubbly, frothy collar and some filmy wisps on the surface. The aroma is rich, malty and boozy - I'm getting treacle & brown sugar, with big notes of fig & plum. There are also lesser hints of overripe banana, licorice root, red licorice candy, chocolate syrup, date square and a slight smoke/roastiness.
Its rich flavour profile hits many of the same notes: fruity, malty, boozy. Dark fruits such as fig, raisin & date are immediately apparent, but I'm also getting orchard fruits, e.g. sweet, ripe apples, plums & cherries; these flavours are layered atop notes of brown sugar, honey & treacle that simply do not relent. Overripe banana, licorice, nutmeg and clove develop on the back end, with honey and raisin lasting into a boozy aftertaste. Medium-full in body, with low carbonation and a smooth, fulfilling mouthfeel appropriate for the style. A fine sipper - this serving size is just about ideal for an individual.
Final Grade: 4.01, an A-. Gregorius is an unorthodox quad, but it still retains most of the qualities about this style that I adore. The sweeter dark fruit and sugar flavours are a little overdone for my tastes, but overall I still really enjoyed this Trappist ale. It's easily one of the best Austrian beers I've had so far - though I suppose Samichlaus is the only other legitimate competitor in that category, at least for the time being. A worthy pick for my 3333rd BA review - try it for yourself if you can find it! Cheers!

Taste: As the aroma suggests with an additional touch of acidity, both golden and medium reddish caramel, and a cereal grain sweetness similar to “Ovaltine”. Moderate background hops are leafy and herbal.
Feel: Full bodied, gently crisp with a fine- bubbled seemingly natural carbonation, and smooth.

Taste: As the aroma suggests with an additional touch of acidity, both golden and medium reddish caramel, and a cereal grain sweetness similar to “Ovaltine”. Moderate background hops are leafy and herbal.
Feel: Full bodied, gently crisp with a fine- bubbled seemingly natural carbonation, and smooth.

Poured a 330ml bottle into a pint glass. A thin bubbly tan head on a cloudy amber brown. The head diminishes to a ring.
Dark fruit smells. Fig and nutmeg.
Chocolate and raisin flavours. A slightly bitter finish. Unusual for a Quad. Pretty boozy.
Medium body. low carbonation.
A serviceable Quad. Not as complex as some but worth a try.

Shared bottle at local tasting. Hazy dark brown colour. Moderate malty aroma with a hint of smoke. Rich and pleasant malty flavour. This is a doppelbock, not a Belgian strong ale! Not very sweet though, and the high ABV is well hidden. Hints of salt and smoke.

Aged since March 2013. Pours clear, dark brown in color with minimal head. Taste is dark fruit, prunes, earthy hops, dark bread. Heavy body, sweetish with a bitter backbone, low carbonation. Would be curious to try this fresher, but it is not bad. I like the dark fruit but have had more complex examples in the style. Not used to bitterness in the style.

Pours a murky dark-brown color with a medium top off beige head that dissolves quickly.
Aroma is of toasted malts, bread, coffee, caramel , raisins, prunes, spices and brown sugar.
The taste is toasted and malty with nice bready caramel notes allong with notes of dried fruits and spices. Aftertaste is long and strong in the flavour. Soft and creamy mouthfeel with a medium carbonation and a medium body.
A great and tasty sipper with a nice malt profile.

T: Follows the nose. Starts off with a mix of fruity and spicy easters from the yeast along with some caramel maltiness. Finishes with lingering esters
M: Medium-full bodied with low-moderate carbonation
O: A solid quad that is on the easier side to drink. A good mix of yeast vs sweet. Worth a drink

Smell: Raisins, plums, Christmas spice and malt.
Taste: Prunes and figs. Earthy on the front and middle, giving way to a sharp medicinal twang at the end. The alcohol is prominant but not pleasantly warming.
Feel: Full bodied, and rich. Coats the back of the tongue with a slightly oily residue.
Overpowering tastes of figs and prunes. This beer lacks the subtle intermixing of tastes and sensations that I've come to expect in the style. It earns a B.
