12 Fl Oz bottle
Served in a snifter

This beer pours black and is topped with a fleeting head.

Dark chocolate and coffee aromas. Chilis seem conspicuously absent.

The taste follows the smell. I get dark chocolate and coffee. I get hints of peppers. I get a slight tickle in the throat.

Full bodied with a smooth mouthfeel

I liked the vanilla better. Good stout though.

A - Dark pour with thin toffee colored lacing and no carbonation.

S - Chocolate malt roast with a slight bit of peppery presence.

T - Chocolate roast with light chili

M - Big body that's silky smooth and light burn in the back of the throat.

O - It's still a stand up beer with some burn but probably a shell of its former self. Shame on my for letting this sit for two years.

Difficult beer to review. I know some people really like the chili beers (I don't), but the chili taste is feint. I adds a dryness to the back end, but otherwise this is just a really good stout. I can only imagine that advertising the chilis will keep people from trying it.

12 ounce single bottle acquired at Mack's in Cleveland in November 2018.
Pours a deep black with scant dark tan to reddish brown head.
Aromas of chocolate malt, caramel, vanilla, some spice - cinnamon - perhaps a hint of pepper but honestly think this is strictly subliminal suggestion....
Tastes of smooth milk chocolate, vanilla, again I get some cinnamon, bready malt, sweetened cafe au lait, and just a subtle note of chili spice at the back.
So smooth and rich, though not thick, mouthfeel - mildly sweet chocolate and vanilla with a gentle warming pepper heat at the finish.
This is the Bomb!

I've had this bottle aging in my cellar for a few years now. Decided tonight was finally the night to drink this. Poured into my snifter glass, this beer pours a very dark brown, practically black color with a tan head that's over an inch thick when first poured. Head settles eventually to a medium sized ring lining the inside of the glass without any lacing. Aromas of toasted malts, chocolate notes, and certainly come chilis. Also a bit of lactose/milk sugars are found here as well. Some earthy, just slightly piney hop notes close out the nose there. The flavors follow suit, with toasted caramel and chocolate malt sweetness, milk sugar/lactose sweetness, and a bit of chili pepper spice. The chili pepper spice is pretty subtle here, and in fact I sure wish it was a bit more pronounced. Rounded out with a slight earthy and just slightly piney hop presence. Has a smooth, slightly oily, also somewhat creamy, slightly crisp, medium to full bodied mouthfeel. Has a long finish with a fairly sweet and spicy aftertaste.

$9 bottle. Brewed with chili peppers. Deep dark brown upon the pour but very little head, it disappeared quite quickly. Rather sweet smelling, I’m getting raisins, cherries, cocoa, and slight chili. A lot of chocolate on the tongue. Very warming sensation across the palate, probably from the higher abv. Dark cherry tastes in there too. It’s almost like a chocolate covered cherry. Yes. That’s how I would describe this beer. There is a slight hint of chili but not nearly strong enough for my liking. I think if it’s going to be advertised as a chili beer then the chili flavor should be heavier in the flavor profile, and this was not. Not a disappointing beer at all, in fact it’s quite delicious, but not chili enough for me.

Love their stouts! Chili was different but not overwhelmingly an issue. Not one of what I expect but nonetheless good.

Poured from a bottle - dark as night with thin quickly dissipating mocha head leaving scant lacing. Nose is very mild sweet roasty malt with whiffs of chili pepper. Taste follows with hints of coffee , cocoa and more chili spice. Finish is on the thin side with a mild chili aftertaste. Pretty damn tasty.Better than any chili beer I've tasted.

Pours pitch black color with a 2 finger thick foamy brown colored head that was packed with microscopically small bubbles. The head faded slowly and left a little bit of lacing.

Smells of milk chocolate, dark chocolate, a penny or metallic notes, cocoa powder, burnt coffee grinds, chili peppers, caramel, brown sugar, toffee, piney hops, spices like rye and pumpernickel bread. Some hints of dark fruit with smoked grains and trailing charred aspects. The chili peppers faded with the age of this bottle, but this was quite complex and was very nice to inhale.

Tastes like it smells with milk chocolate, dark chocolate, faint soy sauce, cocoa powder, burnt coffee grinds, chili peppers, toffee, brown sugar, toasted grains, smoked malts, spices like rye or those chili peppers, bakers chocolate, and toasted pumpernickel bread. The spices from the peppers are light and the flavor has notes of trailing dark fruit, herbs and a rich mocha. A touch of heat adds that expected sensation from the chili peppers and this brew was smoother than anticipated and well balanced. Another fine member of the BOMB! family.

Pours a viscous black with a half finger of khaki foam atop. Head retention is okay. Aroma is roasty, toasty, nutty and caramely malts with sprigs of chili pepper over the top. It adds a little spice and zest with bell pepper rolling in at the finish. Flavor profile is roasty, toasty, nutty, caramely malts with light chili peppers starting at the midpoint and lingering through the finish. Notes of chocolate and toffee add further depth. Mouth feel is thick with a crushed velvet texture. Overall, thick stout with some quality chili pepper zest to it. The bell pepper finish on the nose is a bit odd.

Served in a 15.5oz Spiegalau tulip from a 12oz bottle.

12oz bottle. No dating information found.
Black colored body, with a very thin back lit mahogany edge. Active small bubble tan head. Leaves behind a scattered pattern of lacing spots.
Aroma of vegetal chili peppers. Chocolate malts.
Taste of milk chocolate malts, with a slight addition of chilis. With continued sips the tongue does get a gentle chili burn.
Medium to thick mouth feel, and quite smooth. Good carbonation.
There is not much complexity here, but the beer is tasty with milk chocolate. Higher ABV% is well hidden.

Bottle aged 18 months.

L: Dark espresso brown to black. With a short head fading quickly to a long lasting thick tan ring with some temporary lacing.

S: Base brew of dark roasted malts and chocolate blasted with cherry tartness and warm red chilies!

T: Follows the nose with the ABV perfectly hidden and a nice warming presence of chilies. These start a touch stronger than the standard but do fade quickly.

F: About the same weight as the traditional BOMB! Carbonation is good but mouthfeel could be creamier.

O: This one is just fine. Far superior to the vanilla deconstructed IMO.

Picked this up as part of the Deconstructed four-pack in October from the Happy Valley BevMo for $34. Bottled in March 2018; consumed 8-9-19.

Beer poured black with a very small head that dissipated quickly.

Nose is chocolate with some licorice.

Taste is chocolate and light chili peppers over a large malt body. Finishes a tad sweet.

Mouthfeel is medium bodied and very smooth.

Overall a pretty good beer but nothing special.

L: Has this beer on-tap at Brewmasters - Wilson, poured into a snifter glass. Had a coal black color and a thick, opaque consistency. There was a half inch of creamy, tan-colored, long-lasting head. Very good lacing.

S: A solid aroma of malt, dark chocolate, chili peppers, vanilla, and caramel.

T: Tasted of a good amount of dark chocolate (a big component), light caramel / toffee notes (not too sweet), a hint of vanilla, some chili peppers (less than expected), and a good shot of malt (present throughout). Not quite as much heat from the chili peppers as you would think, but the other ingredients make up for it. Pretty tasty.

F: An average amount of carbonation with a smooth finish. Medium-bodied.

O: A solidly made, balanced stout. Worth a try.

From the 12 oz bottle in a snifter. This "deconstructed" ale pours a pitch
black with a light head of tan foam that subsides to a thin ring and light layer
with scant l;acing. Nose of chocolate and coffee with subtle smoky pepper
notes....rather light for being such a big brew. Flavors far exceed the nose
with chocolate malts and mild coffee with a background smoke and char
characteristic over a light balanced jalapeno note with some subtle touches
of vanilla cream. Nice mouth feel; full body, smooth, warming, low carbonation,
coating, and a sweet lightly spicy finish.

Overall, another nice brew from a solid brewer.

Cheers

A 12 fl. oz. bottle with no clear bottled on or best before date. Poured into a snifter glass.

Appearance: A dark dark brown to black in colour with a near one finger mocha brown head that dissipated quickly and left only sparse to no lacing.

Aroma: Roasted malts, chocolate, toffee and light chili spice.

Taste: Roasty malts, light sweetness, chocolate, light lasting chili spice and bitter finish.

Mouthfeel: Medium to full bodied with soft carbonation.

Overall: The chili spice had a nice kick to it, but I was missing the nice stronger coffee notes that were present in the original Bomb!.

12 ounce bottle, couldn't read the date stamp on the bottle but I think this was a 2018 release. Served in a snifter, the beer pours dark brown/black with a half inch tan head that stayed around for a while. There's also a decent amount of lacing. Aroma is subtle but nice, the brew smells like roasted malt, chili peppers and bittersweet chocolate. The brew tastes like chili peppers, roasted malt, cocoa, coffee and caramel. Chili pepper heat is mild. Mouthfeel/body is medium/full, it's slick and a little creamy with a moderate amount of carbonation. I liked this stout, but still think regular Bomb! is noticeably better. Worth a try, purchased as part of the Deconstructed Bomb! 4 pack.
