Notes / Commercial Description:
Prairie Noir is our bourbon barrel aged imperial oatmeal stout. We brew this beer with a huge amount of oats to give it an ever so silky mouth feel. Notes of coffee, chocolate, and toasted marshmallow can be found in the flavor and aroma of this beer. Notes of whiskey and carmel are also packed into this beer.

Bottle poured into snifter at Brass Tap in Round Rock, TX. Pours midnight black with a dark khaki pencil collar that leaves minimal spotty lacing. Aroma is magnificent with burnt sugar, cocoa, molasses, raisin, hints of other dark fruit, bourbon. The flavor is balanced af - roasted malt, coffee, brown sugar, cocoa up front with a long, soft edged whiskey profile that finishes mildly bitter. The bourbon is ever present but mixed well with the other elements to form a great balance. Light mouthfeel with a slick finish, actually lighter bodied than I predicted based on the appearance and aroma. Would absolutely drink again.

enjoyed from a prairie Balcones glencairn. what can you say about his beer other than yum yum yum. really amazing silky stout wit great notes of barrel and coffee and vanilla and fairly oaty. great body great flavor. I haven't loved all of the Prairie stouts but this one is a home run.

Poured this into a Hill Farmstead stemmed wide tulip. Silk bomb! The look is dark, typical. The smell is of dark chocolate with that oak barrel sweetness. It tasted of dark chocolate with a silky, coffee, and bourbon barrel flavor that lingers in the back of your palate. This has been sitting for 3 years now so any booziness is mellowed out. So smooth! The feel is pretty nice. It's full bodied and has slight alcohol slickness but it's so minimal, almost not recognizable. Overall, I would recommend this to anyone who wants a great barrel aged stout!

this was a killer beer, probably the bottle i have been holding on to longest in my cellar. it might be batch one, still in the format pictured here, but listed at 9% abv on the label. Its aged well, a little faint oxidation on the nose beneath the fluffy creamy tan head. it smells more mature than anything though, no heat at all. flavor is very rich velvety molten chocolate thing going on. the whiskey is really influential here, vanilla and barrel char in with all the chocolate flavor, you would almost swear there is cocoa in this. the integration of the many layers is whats most impressive, and i wonder if this is a product of the time in the cellar or if its just that well done. caramels and toasted almonds go right in with the chocolate, and the wood is heavy and wet still. not a trace of the alcohol strength here, and despite a mild dusty, just inching past its prime, sort of vibe to it, i cant help but be impressed. its so much less goopy thick in texture and sticky sweet than a lot of these, less of a kitchen sink thing, more calculated and artful than that. the oats give it plenty of body, but the heaviness isnt there at all, especially with this level of carbonation. glad i hung onto this one so long, it made an excellent preshow beverage before dead and company last night up in broomfield. i wish i had another one, but now keen to try this fresh. do they still make it?
