look: 3.75 | smell: 3.5 | taste: 3.5 | feel: 4.5 | overall: 3.5

Appearance: Pours a very hazy straw color. Plenty of carbonation is noted. A full 1.5" of white head forms, which has excellent retention and lacing. Pretty nice looking brew aside from the turbidity.

Smell: Significant white pepper and spicy notes in this beer. Some bitter grapefruit rind as well. Seems like a unique take.

Taste: Aligns pretty closely with the smell. A small amount of citrus and fruitiness up front, followed by significant white pepper and spicy notes, as well as some grapefruit bitterness on the back end.

Mouthfeel/Overall: Mouthfeel is nice and light, and carbonation is just about perfect. Very nice mouthfeel. Overall, I thought this was a pretty good saison. I am not a huge fan of the heavy white pepper and spicy sharpness, so downgraded it a bit. I like more well roundedness out of my saisons, but I definitely still enjoyed it.

look: 3.5 | smell: 3.75 | taste: 1.75 | feel: 2.5 | overall: 2

Appearance: pours a dull straw yellow color. one finger plus of a bubbly white head that fades quickly and leaves nothing behind. Perfectly clear

Smell: tropical fruit juice, white grapes and wine yeast. some tart tropical fruits.

Taste: opens with lots of white grape and vinous character. lots of earthy, leathery brett notes. ends full of grass and slight fruit.

Mouthfeel: super dry but with a strong carbonation. leaves earthiness behind

Overall: smells pretty good but tastes nothing like it in a very bad way. I found this beer very hard to drink due to the harsh earthy acidic flavor and bad dry aftertaste.

I didn't know anything good came out of Oklahoma, then I tried this beer at When Pigs Fly. What a nice beer!

In a snifter the beer was a cloudy dark yellow color with a large bright white head. There was a small amount of lace.

Earthy aroma, some spice and citrus.

A wow! for the taste. Earthy hops. Coriander. Grapefruit and orange peel. Tropical fruit/melon.

Tart, refreshing. I could drink a lot of these.

NYE bottle share at Proof courtesy of Rachel. Pours an opaque creamy yellow. Tons of white frothy head. Head holds really well and by the time I finished the sample, the head was still holding. Aroma is straight floral hops and grass. Such a great, but unique smell. Taste is floral hops with a good amount of banana behind it. Nice high carbonation and medium-thick body.
