an absolutely beautiful golden wild beer in oak barrels. its enormously unique, dry, funky, and drinkable, not too sour at all, and a perfect morning beer. on tap at goed zuur, where else?! it glows sunny yellow in the glass but its not perfectly clear. a thin but persistent white head rests on top. aroma here is heavy oak and funk, fresh zested and juiced fleshy lemons, crisp tropical white wine, and dried herbs, grass, and hay. its farmy and almost leathery earthy to me at first, but as it warms it comes alive, more fresh then, with a neat lemon verbena sort of botanical vibe. there is also like a banana or plantain note in the middle when i hold it in my mouth, and then a peppery sort of rustic yeasty finish, more brett than acid, but both are present, and it finishes dry and fast and very clean for a wild beer. the oak is there all the way through it but its never heavy. it imparts light vanilla notes to the mix, and with the lighter grain base creates quite a unique foundation for this. enormously unique fermentation profile on this, which is what i love about these guys, always something different and distinctive. a wonderful pairing with their sunday ramen in here, which is one of the best around. id love to get a bottle of this to try...
