Brekeriet Brillant is a Scandinavian saison that gets its elegant character through fermentation with a mixture of different yeast strains, particularly those of the genus Brettanomyces. The beer is carbonated naturally in the bottle, leaving a thin layer of yeast on the bottom.

From Degustasur. Ultrafoamy, requiring 2 pours. Light sour notes, dry finish. At the end of the bottle becomes strongly bitter and acidic. Rather dull and bland in flavors

Pretty good saison, pours with a massive head, looks like dish soap. Beer is hazy and straw with light golden highlights. Smell is nice but restrained, yeast, citrus, clove and spice, grass/hay, and dough
Taste is also nice, had a slight tang at first but sort of fades. Spicy, lots of nice malt notes, like a spiced bread of sorts. Only qualm is its somewhat thin or bland. Great flavors but lacking an ummph.
Really smooth and easy drinking beer none the less.

Drank side-by-side with a glass of Saison Rue, the original non-Belgian crafter to use Brett prominently in a saison.
Saison Rue's recipe probably has had little change in ten years and Brekeriet Brillant was introduced probably five years ago. So, I got to thinking.... If the amount of Brett in these two ales indicates a trend, then saisons are becoming very Brett-like... But, Brillant makes me pucker a bit too much. I'd be curious to know if this Brett-trend is reducing how much people pair Brett-like saisons with food. I had Brilliant with soup. But, Saison Rue was the better pairing.

Very light body. Aroma combines subtle brettanomices with citrus and herbal hops and a hint of smoke. Dry but not very dry, suitable for a saison, it has a strangely long sweet aftertaste.

Poured from 11.2oz bottle into tulip glass
A 2" sudsy white head falls quickly with mild lacing. Color is very cloudy yellow-orange with tons of sediment in suspension. Plenty of streaming carbonation. Aroma of floral, tart lemon, barnyard, bread dough. Light and frothy mouthfeel with a champagne like dry finish. Flavors of tart lemon, cranberry, yeasty rolls, with some hop bitterness lingering in the finish. Overall: very good.

Bottled Jan 2016, from Tin Bucket.

The first pour is clear as crystal and a large white head before the yeast adds a little haze. The nose is quite marvelous. With a bright, snappy, doughy and grainy malt base with a wonderful blend of saison yeast and Brett funk, this is fantastic. Lightly spicy, light white wine, a little bit of white pepper and some clove are present. The grain character is rather wheat-like. On the palate, this opens crisp and with a blend of grain and light tartness, a little bit of honey, along with grass, hay and mellow Brett funk. A definite wheat note is present here. Drying, crisp and refreshing on the finish, this is excellent stuff and brings to mind a Barrel-aged Four from Upright.

ive been seeing bottles from these guys around for awhile now, but somehow it has taken me this long to leap into it. this is an awesome place to start, a brett fermented saison thats really simple and elegant, really well made. very pale, not much haze, and a really prominent and thick white head thats got perfect retention. sexy even in a hotel room plastic cup! the aroma is great, some unique brett to me, seemingly a mix of strains, really farmy and musty and earthy and interesting. super complete work too, this is absolutely cracker dry, funky, and effervescent. these bottle conditioned wild beers like this really get the mouthfeel dialed in more often than not, especially the european ones. i need to learn more about that, seems unstable with temperature changes during transport, i dont know. straw and hay and wheat and white wine notes, brett is definitely something a little different, and overall this beer is wonderful, more or less affordable, and a really pleasant surprise. it needs to come in six packs though, i wanted so much more than one! some really cool yeast driven beers coming out of the scandinavian countries right now. i will definitely be purchasing more stuff from these guys after this awesome first experience. beautiful beer!

Pours a cloudy, maize color. 1/2 inch head of a white color. Great retention and good lacing. Smells of strong Euro yeast, pale malt, slight citrus hops, hint of smoke, grass, and a hint of bacterial funk. Fits the style of a Saison / Farmhouse Ale. Mouth feel is sharp and crisp, with an average carbonation level. Tastes of strong Euro yeast, pale malt, slight citrus hops, hint of smoke, grass, and a hint of bacterial funk. Overall, good appearance, aroma, body, and blend; mostly smoky and grassy.

When pouring the beer, you get a clear bright yellow color. The foam is white and somewhat thick. The foam has small bubbles and disappear at a leisurely pace, leaves small traces. The nose is fresh and tangy. A little sour tones then comes a little lemon and apricot. A little bit of white bread, noticeable yeast. A little funky. The taste is fresh and tangy. Fairly dry taste that has much lemon. Then comes a little apricot and some pepper. The taste is a bit sour, there is little light bread and a slightly fermented. Very carbonic acid, and towards the end it will a little pepper. Light body. Carbonation is high. Dry with high acidity.

Cloudy, yellow body; very aggressive carbonation; thin, bubbly head. Dull, funky aroma; grape and citrus; yeasty. Lemony flavor; somewhat sour and tart; apple cider. Medium body; coarse on the palate; tangy with an overall dry finish.

A basic, solid farmhouse ale. It exudes a tangy fruitiness and leaves you with a semi-intense pucker factor at the finish. Nothing bad, nothing amazing. Decent.

From a 330 ml bottle to a tulip. No date that I could see.

A-The beer gently foamed up when I opened it and the carbonation is quite active in the glass. Those bubbles keep a thick collar of foam hanging around the entire time I'm drinking. The beer is light yellowish in color. It looks good.

S-The aroma is pretty heavy on the yeast. I also sniff a good amount of slightly funky, fruity, floral brett smells. Despite the yeast aroma, the beer tends toward dry and there are some grassy, leafy notes too.

T-The taste is quite dry with lots of grassy, herbal leafy notes. The fruity brett flavors are less prevalent on the palate than on the nose and the flavor is more astringent. A little bit of lemon flavor and acidity provides a bit of tartness, but this beer isn't sour.

M-The body is medium in heft, but there is a lot of chunky carbonation that breaks things up.

O-This is a pretty nice effort and a nice-drinking saison. It looks and smells slightly better than it tastes, but once the carbonation dies down a bit, this makes for a good, interesting beer.
