Our first-ever collaboration, brewed with Jeppe from Evil Twin. Two Evil twist on gose with ingredients sourced from Iceland including Icelandic moss, rye, herbs, sea kelp, skyr and birch smoked sea salt.

The result of this adventure is Two Evil Geyser Gose: A classic sour/tart beer with a hint of smoke, light lemon color, dry finish and thirst quenching appeal.

The lightly hazy pale golden yellow colored beer pours out into a Duvel glass with a 3/4” fluffy white head that leaves a few scattered patches of lacing as it recedes slowly but visibly until it becomes a small ring around the glass and a thin irregular island on the surface. At first sipping creates a some scattered patches of lacing but eventually there are only widely scattered small patches of lacing on the sides of the glass.

The aromas have some lemony acidity, some herbal character, a lightly musty character (moss?) and a hint of bready malt. There’s also a very light but noticeable briny and seaweed smell (think iodine) along with a very light bit of smokiness.

The flavors which initially focus on the lemony tartness and a bit of citric zest are noticeably backed up by some complexities which are hard to unravel but seem to come from the moss (a bit of musty smell), some herbs and some brine. The sweetness from the malt remains in the background where there’s also a light smoky character and just a bit of iodine from the kelp but not much bitterness.

The mouth feel is on the light side of medium bodied and slightly crisp and prickly from the moderate carbonation and the acidic tartness. The finish is mostly about the slow fading of all of the flavors. The kelp, herb and moss flavors are mingled in with the tartness that dominates the salty, iodine tinged ending that shows just a bit of smokiness but little bitterness until this all disappears and the very long ending is eventually all about the even slower disappearance of the lemony tartness.

Overall this strikes me as being a reasonably well made beer that displays a strong tartness and just a bit of almost hidden salt but also has a good bit of subtle complexity added in from some herbs, some moss, some wheat and a bit if smoke. The beer is also temperature sensitive in that a lot of the subtle complexities began to show more as the beer warmed towards room temperature. That all said I’ll probably not be having this one again since I would prefer the tartness to be more in the background. (I should also add that if I had not had some of these ingredients before, there’s no way I would have been able to recognize they were there and identify them without knowing the ingredients list.)

First had poured from pint can into Weizen glass. I'm going to put this one in the "effort appreciated, but why the fuss" category. Anyway, it's an excellent gose, and I guess someone got a trip to Iceland.

Usually don't like collabs, but this looks neat. Canned 10/14/15

Pours a nice fizzy foamy 1 finger head that fades at a med pace, decent soapy lacing, clear pale tan color.

Nose explodes from the can and the pour, lemon zest citrus tartness, tangy, with bready doughy malts, grainy cracker, little salt, earthy briny note, a little vanilla cake, faint spices.

Taste starts tart and tangy, lemony citrus zest, tart little funk like, into grainy malts, raw bread dough, sour dough, vanilla cake and cracker notes, touch of spices. Background brings a hint of salt and touch of an earthy briny seaweed like flavor, very light though. Finish is dry, little flemmy, tart sour lemon and grainy dough lingering, touch of lemon rind bitterness.

Mouth is med to lighter bod, decent carb.

Overall pretty interesting for sure, a nice gose, good tartness, nice lemony, nice malt bready character, little salt and spice, perhaps a bit more salt would have made it a bit better. The kelp was interesting and thankfully very light.

This brew was served on tap at Tap and Mallet in Rochester, New York. It arrived in house snifters showing a muddle golden straw coloring. A quarter finger’s worth of a head was noted, but this was stifled due to high pours. This was white, fluffy, and showed nice retention before creamy gobs of lacing were left peppered around the glasses. A heavy, dense haze reduced clarity, but no outright sediment was seen. Carbonation appeared to be light. The aroma was clean, simple, and refreshing, offering up notes of wet straw and browned grass, white flour, soured lacto funk, dried lime and lemon peel shavings, wet and raw pale grain, soft wheaty edging, damp burlap, brass, and tissue paper. The flavoring to follow shared much with the aroma in simplicity, to the point of being almost shockingly simple, aside from the biting complexity of the yeast and fermentation. Notes here included savory salt lick, drying construction paper, cloying white sugars, orange zest, smoked sulfurs, iced mineral water, powdery vitamin C chewables, black pepper table crackers, dried nori, raw and slick graininess of pale, wheaty, and crystal varietals, and lemon pulp. The aftertaste showed a bit more depth, with dried floral and grassy hoppiness, white grape juice, and champagne yeastiness. The body was sharply medium, while the carbonation etched lines around the edges of your palate and tongue in high, tight arcs. Each sip gave decent slurp and smack, with pleasant, albeit transient, creaminess and frothiness beneath the surface. This quickly dissipated for a stickily drying finish. The abv was easy, and drinkability was stylistically appropriate, although it was not, as you would say, quaffable.

Overall, simply put, this was a pleasant gose. Simple words for a simple beer. We are actually kind of understating things a bit, as the beer did bulk up with warmth on the back end and through the aftertaste. All of those goofy additive ingredients had to go somewhere, and we were glad to see them come out at least a bit somewhere in the beer. The smoked salt they used comes across in a much more mineralized way than a salty way. Very rocky, earthy, and elemental, rather than an immense, classically flavored saltiness. This mixes well with the beer’s inherent tartness, making for a happily flavored beverage. Comparatively, the nose is muted throughout, but this is made up for in the other primary departments. Either way, you will feel refreshed by the end of your glass.

Nomads and novices come together for a collaborative ale that treads on the sour side. Borrowing the tricks of the trade from traditional northern German brewing regions, wheat, lactobacillus, salt, spice and a few other Icelandic ingredients make their way into the brewing regimen. And with these indigenous follies, their impact on taste are mild.

Geyser Gose pours with the common cloudy golden-straw color and capped with a fluid pillow of froth. The nose displays a breadth of wheat character as the scent of fresh baking bread and dough with a tangy citrus, brine and light perfume. Its creamy taste is soft with sugar cookie confection along with that doughy breadiness.

The tang of lactic fermentation shines on the middle palate as lemon, lime, crabapple and under-ripened citrus lay a piquant and sour layer upon the trailing wheat malt. As a notion of sea brine, balsa, burlap and musty citrus play out late, the sourness begins to pick up steam.

Medium bodied for Gose, the sour ale retains a firm bready taste and texture that never ferments completely away. While it adds to the balance and softens the palate, it's shy of the crisper, cleaner and ultimate refreshing endearments as do more fully fermented versions. But its finish of lime and apple is wrapped in an aura of citrus and perfume while the undercurrent of wheat glides slightly beyond in aftertaste. Much of the Icelandic kelp, rye, smoke and others, is largely lost on the palate.

16 ounce can into tulip glass, canned on 10/13/2015. Pours hazy golden straw color with a 1-2 finger fairly dense white head with good retention, that reduces to a thin spotty cap that lingers. Minimal spotty lacing on the glass, with some light streaming carbonation. Aromas of tart lemon, lime, green apple, pear, white grape, sea salt, wheat, cracker, bread dough, hay, straw, herbal, grass, light pepper/funk, and yeast earthiness. Damn nice aromas with good balance and complexity of fruity/acidic yeast, pale malt, and sea salt/spice notes; with good strength. Taste of tart lemon, lime, green apple, pear, white grape, sea salt, wheat, cracker, bread dough, hay, straw, herbal, grass, light pepper/funk, and yeast earthiness. Light-moderate fruity tartness and yeast spiciness on the finish; with lingering notes of lemon, lime, green apple, pear, grape, wheat, cracker, bread dough, sea salt, and herbal/yeast earthiness on the finish for a good bit. Damn nice robustness, complexity, and balance of fruity/acidic yeast, pale malt, and sea salt/spice flavors; with a nice malt/tart/spiciness balance and zero cloying flavors after the finish. Light-moderate dryness from acidity. Medium carbonation and light-medium body; with a very smooth and fairly creamy/bready/acidic balanced mouthfeel that is nice. Some slight salinity as well. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a damn nice Gose style. All around great complexity, robustness, and balance of fruity/acidic yeast, pale malt, and sea salt/spice flavors; and very smooth and easy to drink with the balanced acidity. A very enjoyable offering.

Can dated 10/19:
Little seaside note as I pop the can. Pour is hazy yellow-white, as if you can see the dissolved salt in the beer. Head is white, even against a light, faded body. No sustained lacing, but a little cling to the foam each sip.

Nose stays salty upon further inspection. A little musty sourness - more than tart but not indicating a puckering beer. Little bit of an herbal note as well.

Taste follows nose pretty well. This is even a little salt-forward, but the sour hits pretty early as well. Earthy, musty, herbal notes grow from under the sour and all three end up balancing out in the end.

Nicely done. It has sour, salt, and earth notes all coming together. A light pushing towards medium feel makes this a refreshing brew without being one I feel the urge to pound.

I know reviews are subjective (duh), but i'm shocked by how low the overall ratings are for this beer.

First, let's ignore the "it's not as per style" reviews that are there. it's a 21st century gose. I want tart and I want salt and I've love some funk. this has it all. so gose it is.

Appearance: no head retention. but hey, it's a lacto sour. not a shock. perfectly clear in my glass. no haze

Smell: some sulphur notes and metal. small hints of lacto citrus and there's definitely some sea and funk. overall, i like the smell.

Taste: great tartness with a nice citrus and apple finish. very clean. as in, no grainy finish. the level of funk on the palate isn't huge, but it doesn't matter. it works well with it. dry finish as well (someone said it was sweet. wha????). very refreshing. a great summer beer or start-of-the-evening beer. even a palate cleanser.

Mouthfeel: very effervescent on the tongue and palate. dry mouthfeel.

Overall: think this is one of the better goses i've had. amazing for food pairings as well. ceviche, sushi, a salad with ginger in the dressing.

Pours cloudy,bright yellow with 1/4 inch head and high carbonation. Taste is lemon, grain of paradise, grass, sour mix and a nice long and salty after taste. The aftertaste is my favorite part of the beer. Really good example of the style. Certainly one I will get again.

Poured a very cloudy yellow color with a fizzy white head that dissipated quickly. The smell is sour with some saltiness and a bit of citrus. The taste is slightly sour, with a bit of lemon, salt, and a small amount of malt. The feel is very crisp with a good amount of carbonation. This is a tasty collaboration but I was hoping for a little more sourness.

Gold in color with a light sedimentary haze. There's a trace of off white around pare of the rim and about a quarter of the top. I detect sea salt and what might be faint rosemary in the aroma. The taste is lightly acidic and there's a nice balance of sea salt and light malt. The mouth is lightly acidic, dry, and refreshing on a warm day.

Had from a can. L: A hazy gold pour rouses a 2” quickly dissipating off-white foam collar.

S: Lemony fruit, herbs, light grains, a light earthiness with a bit of seashore aroma. The smoke is very faint.

T: Lemony tartness with citrus, fruit, salt, herbs and a bit of spicy astringency on the finish.

F: Light, refreshing and highly carbonated.

O: Easy to drink and thirst quenching.

Pale straw yellow with streams of bubbles rising quickly up to a sizzly white head that dissipates immediately. Aroma of spice and lemon, essence of the sea. Tart flavors upfront, hints of lemon, grassy notes, jolly rancher, subtle yeast notes. Salt is understated, probably wouldn't pick it out had I not already known to look for it. Slick mouthfeel, but tingly finish. Interesting beer, my first foray into the style. This one is non-traditional, but tasty and local.

Had last night at Prime 16, pours a hazy straw color with a pretty big head, smells very herbal and sweet. Taste is a pretty layered mixture. Starts very sweet and tart, middle is a bit of garden herbs and salt, finishes with a lingering sour note. Very light bodied and lots of carbonation. I think this is a solid take on the Gose style, but a hair too sweet for me. Interesting addition of kelp there, too.
