5.6% “Bretted” Pilsner spending 3 - 9 months in barrel with a variety of Brettanomyces strains.

This is the harmony of a refreshingly bitter pilsner and barrel-aged soft, complex, bretted character. Fermented and then racked into separate oak barrels with several strains of Brettanomyces yeasts and left to mature for between 3 and 9 months before being blended to taste, allowed to lager further and then bottled. Expect fresh notes of chamomile, tangerine peel, light citrus, barnyard hay, puff pastry and a hint of oakyness.

Perfect to drink fresh or for you to hold on to and allow to age and develop further in bottle.

Pours slightly unclear, pale yellow with a midsized white head. Stable. Settles as thin but consistent layer of foam just covering the surface of the beer. Moderate lacing.

Aroma is medium intense with a light malty sweetness soon overpowered by a stronger sourness with a pronounced funky touch. Sweet pale malts. Lemon, tart gooseberries, light touch of vinegar. Musty gym bag and sour cheese.

Medium strong carbonation. Slightly thick, oily, a bit greasy, lightly tingling texture.

Flavor is medium intense with a light sweetness followed by a medium strong sourness. Aftertaste is a tad watery and tart. Lingers for a bit. Semi-dry finish.

Fine funky nose but a little thin in flavor.
