Notes: This ale is made with Belgian noble hops and our Belgian yeast. This combination imparts a wonderfully complex, spicy, clove aroma and subtle dried apricot and biscuit-like flavor. This golden ale is a wonderful entry-level Belgian beer for anyone unsure of Belgian styles.

Some believe it moonstruck madness to craft Old World ales for modern palettes constantly clamoring for the extremes of "Hoppy" or "Sour." While our love for those extremitites is strong, we believe that subtlety, balance, and simplicity in beer are sacred necessities. It is precisely this kind of lunacy that keeps the craft world sane. It takes all kinds to make a world.

Bottle dated 9/2016:
A light tan tint to the yellow golden body with a white head that required a few pours to get the whole bottle into the glass. Receding ended with a thick collar and about 2/3 coverage of the surface with a thin sheen of bubbles.

The nose leans towards the fruity and floral side of a saison, in my mind. There is a light dry grass and peppery base to the nose, upon which wildflowers and a light sweet-tart note of green apple. That sweetness comes across stronger and more honey-like in some sniffs.

The honey note comes with the light biscuity malt up front. Adding to the sweet side is a pear/apple sort of flavor, along with the lightest hint of banana/clove. Effervescence doesn't seem to fully explain the prickly sensation upon my tongue, so there is likely a little peppery note in there as well.

Grassy bitterness is the main balancing component. As the beer warms, this seems to fade slightly, and there is a more tangy tart note that replaces it (the WW website indicates apricot - and I can see that). The end of the taste is fairly clean - maybe the lightest lingering of a grassy to even piney bitterness.

A very enjoyable offering that packed enough interesting notes in a balanced, medium light beer that was a joy to drink.

Bought a bottle at the Beer Shop in East Longmeadow. The beer had a pale straw yellow appearance with a little murkiness to it. Thin ring around the glass with little lacing. Bready aromas overall with some floral notes. Taste followed the nose with a somewhat bitter, but buttery bread flavored beer with earthy flavors. Crisp, medium body. Overall, not too bad.

Pale yellow body with a white collar.

Aromas of bread, lemon, light floral notes.

Some earthy hops, light bitterness, lemon zest.

Medium-light body with high drinkability.

A solid beer I would have again.

12 oz bottle from near the brewery in NC. Poured into a Belgian snifter.

A hazy apricot body is topped by a short white head that soon reduces to a thin ring. Minimal spotty lacing.
Aroma: bready malts, soft ripe fruits and funky yeast.
Flavor: as usual for style, better than the aroma; in this case, much better. Loads of bready malts, especially for style.
Feel: medium-light body; medium carbonation; dry finish. Very nice.

Appearance - Pours hazy and golden yellow in color with a white, finger width head. Good retention, then peels back to a thin, broken layer of suds.Mostly spotty lacing with a broken line or two.

Smell - Yeasty aroma that's lightly fruity and lightly funky; hints of green banana and spice. Slightly bready undertone.

Taste - Follows the nose. Lots of spicy yeast upfront with lesser notes of green banana. A touch of bread. Unfortunately not much else, as the flavor dies quickly, leaving just a touch of the spicy yeast to linger in the aftertaste. Kind of 'hollow' after the initial burst of flavor.

Mouthfeel - Light-bodied with bitey carbonation. Crisp at first, but gets a bit watery in the finish.

Overall - Decent brew, but lacks a solid, secondary undertone. Leans a bit too much on the yeast character to provide the flavor.

A- Mostly clear golden blonde pour from the 330ml into a goblet. The crown is white with a thick fluffy texture. Decent retention for the cap as a medium ring drizzles spotty lace down the glass.

S- Spicy and peppercorn especially comes to mind with both black and pink varietals coming out. Beyond that is coriander, general yeasty spiciness, pale cracked grains, orange peel and bread.

T- Takes after the aroma with the same basic layout as spice notes are up front with heavy peppercorn and coriander leading to orange peel, slight lemon and a touch of clove. General raw cracked base grains, bread, white grape, pear and phenolics.

MF- Light-medium body thickness with a texture riding between creamy and silky. Feels very crisp all around and the very high end carbonation is a bit effervescent. Bitter peppercorn ending.

Peppercorns and yeast spice come on strong in a smooth, yet bold Belgian blonde. Does not skimp on the flavor and really suits one of the first hot days of the year.
