Appearance: Pours clear and amber, with a prodigious head; impressive retention as the head turns rocky with clumps of foam clinging

Smell: Earthy aromatics, with vegetal tones from the sweet potatoes and grits and a touch of sweetness from the honey; slightly funky

Taste: Earthy and slightly herbal (perhaps a hint of marjoram or oregano), up front, with the sweet potato and grits discernable through the middle; a hint of honeyed sweetness, after the swallow, but the finish is more reflective of the leathery and funky Brett (not overwhelming, though) and other yeast elements

Mouthfeel: Medium body with moderate to high carbonation

Overall: Over the last few years I have been overwhelmed by the number of Wicked Weed offerings and have found it hard to keep up; this one flew under the radar but is really quite good in its own modest way

Appearance: Hazy orange.

Aroma/Flavor: Slightly fruit-forward brett funk with a touch of acid on the nose. Sweet potatoe and grits come out as pleasant balanced fermentable notes. Little to no hop presence to speak of.

Mouthfeel: Bone dry, good carbonation.

Overall: Exactly what a saison made in the southeast US should taste like.

Pretty complex flavor combo here, like a doughy, malt grainy flavor with a touch of sweet and almost zero sour. The wood smoke flavor I did not expect. Cool beer

Poured from a bottle into a snifter, the beer is a hazy, muddled, orange-ish brown coloring with a fluffy, bubby, off-white head that settles out into a clingy, sparse surface coating. Aromas of earth and dirt, tangy honey, toasted grains, bitter greens, subtle farmhouse funk, berry fruit sweetness, cotton candy, floral highlights, and subtle medicinal notes. Pretty dynamic nose. Flavors are fairly muted, with some earthy sweetness and tang forward, and a subtle blend of pepper, oregano, evergreen, floral notes, and all spice. Some funky highlights, with sugary sweet notes peeking out here and there, but an underlying bitterness keeps things grounded. The body is light and effervesced, keeping everything crisp throughout. The aftertaste is more earthy and subtly sweet, with a crisp, clean, slightly sharp finish.
