Great head production, retention, and lacing. Lively and lightly hazy brew, translucent, and a dark lemon yellow color.

Lemon, honey, and pear on the nose; lightly tart and moderately fruity, with slight honey and hay. Any Brett features tend to get washed along with the pear.

Quite sour on the palate, surprisingly so. Apple, lemon, pear, grape, and mild vinegar up front. Pear, oak, and Brett combine on the second half for a fruity, funky, musty effect.

Moderate puckering; a touch sticky. Relatively short finish. Heavier body than the ABV would suggest.

La Bonte is then aged in our Foeder until it reaches perfection." Brewed in the style of an Farmhouse Ale, soured with pear added. Available in 500ml. bottles and on limited draft.

Poured from a 500ml. bottle to a tulip glass.

(Appearance) Pours a crisp, foamy head of a pastel white over a medium hazy golden yellow body with mild, varied sediment in tow and light carbonation. Retention is good and lacing is light and patchy. 4

(Smell) Farmhouse yeast notes, generating characters of light spicy effervescence and gentle fruit esters, a gentle funkiness and the evident imparting of bright pear juice character. Potency is modest. 4

(Taste) The flavor largely follows the aroma, with moderate acidity and tanginess from start to finish, drying saison yeast notes of peppery spice and gentle spring fruit, further accented with the inclusion of Pear fruits, for a nicely rounded fruit juice finish. Just about the perfect intersection of flavors and character, and right on the balance with tangy acidity and sweetness. The pear is also evidently displayed in full color here. Outstanding. 4.5

(Mouthfeel) Texture is slick, lightly residual, peppery, tangy and moderately dry. Carbonation is moderate, generating a modest frothiness and a mildly crisp finish. Body is medium for the style, shy of medium overall. Balance is nearly even tangy and acidic to sweet, with a slight lead in respect to the former. Alcohol presence is light and there are no off characters. 4

(Overall) An outstanding quality soured farmhouse ale, with an incredible presence of sour character and flavor diversity, with a great fruit presence that plays boldly on the pear addition but nicely compliments the base yeast profile's light, effervescent spiciness and spring fruit liveliness. I am looking forward to trying the Plum and Fig iterations of this beer in the coming days. 4.25

Hazy light gold with a fizzy loud white foam that somehow increases in density as it settles, becoming a creamy blanket with a solid, uniform white wall of curtains.

Smell is actually somewhat bready for a sour, with pear, lemon, light wheat and corn all fairly subdued.

Taste is mellow and balanced, only slightly tart of lemon and pear, with the faintest hint of hay and barnyard funk, and a finish of corn and bread.

Body is soft and frothy, of medium heft, with a crisp, quenching tartness and a semi-wet finish.

Pours yellow-orange with a rim of slight foam into a snifter. Smell is sour fruit. Taste is sour pear, bread, and a hint of peach or apple or some other fruit in there. Feel is well-carbonated but not excessive; this feels refreshing. Overall, a very good sour and I hope to have it again at some point.
