La Bonté is open fermented with our house Brettanomyces culture. This beer is then blended with a portion of Golden Sour and onto a half pound per gallon of French Pears. La Bonté is then aged in our foeder until it reaches perfection.

La Bonte Pear from Wicked Weed. Received 10/8/20 from @nc41 in BIF 12. Reviewed 11/7/20.
12 oz bottle marked on neck “BOTTLED 02/18/19 102-034 12:12:44”. Stored at home at 42 degrees and served at 60 degrees in a hand washed and dried Jester King snifter. Final temperature 62.4 degrees.
Appearance – 4.
First pour – Lighter than Pale straw (SRM 2), clear.
Body – Straw (SRM 3), hazy and opaque. When held to direct light, same. Some lumps of sediment form nucleation points for some heavy effervescence.
Head – Small (Maximum two cm, aggressive center pour), white, high density, fizzy with average retention, reducing to a three to four mm crown, (fed at multiple points by aggressive effervescence) and a complete cap of varying thickness.
Lacing – Excellent! Wide band of tiny bubbles with an occasional small bubble.
Aroma – 4 – Begins with slightly salty aroma like a gose and some Brettanomyces mixed aromas along with some mild Noble hops-like aroma. No malt.
Flavor – 4 - Slightly acidic with a not-particularly-pear aftertaste. No malt, no hops. No alcohol (5.5 % ABV, as marked on container) taste or aroma. No dimethylsulfide or diacetyl.
Palate – 4.25 – Medium, watery, soft carbonation.
Final impression and summation: 4 Pear has always seemed a mild fruit to me, not assertive in either flavor or aroma. Here it blends well with the Brettanomyces flavors to produce a delightful brew enhanced with an excellent mouthfeel. This is one I want to savor, but it goes down much too quickly.

This beer pours pale yellow and pretty clear. It is topped with an inch of off white head that leaves spotty lacing.

The smell is sour with copious amounts of ripe pear.

The taste matches the smell. It is sour with complimentary pear. It has a lingering sour finish.

Thin bodied with a dry finish

I think pear is a natural compliment to a sour ale. It's almost like a sour perry. I have had very few pear beers, and this one is great. Plus I like the NASCAR connection since they are from NC. It's nice that Bobby and Terry Labonte, a pair of nascar drivers, have a beer named after them.

Gorgeous appearance. The nearly crystal clear, golden yellow body was topped by an inch-tall, soapy, bone white crown that slowly dropped to a bubbly mass. Streaks and dots of lacing stuck along the glass.

The aroma was outstanding and totally reminded me of a cross between an authentic Belgian Gueuze and a saison. Excellent farmhouse-like character. Bone dry and really Brett forward but not overly tart or acidic. Super oaky. Loads of dry, powdery yeastiness too. Champagne came to mind. Nice crackery malt base. Crisp and wheaty with a touch of sweetness.

The flavor profile followed the nose to a T. Super crisp, dry and Bretty. Uber oaky. Wheaty and lemony in the center. Moderately tart. Fairly yeasty. Again, Champagne yeast notes came to mind. Touch of sweetness. More lemon, lemon peel and oak on the back end and the finish. Bit of lingering, noble hop bitterness.

Terrific fluffy, lighter bodied mouthfeel. Really crisp and dry. The liquid contained a medium bubbled, greater-than-average effervescence that turned creamy on the palate. Perhaps a bit more carbonation would have bumped the score up a few notches.

I have typically found many Wicked Weed sours to be overly tart and acidic, but this beer was spectacular in nearly every way. Both the aroma and the flavor demonstrated a fantastic melding of traditional Belgian Gueuze and saison-like characteristics, while still incorporating balance, restraint and drinkability. Although the pear was completely nonexistent, I definitely did not miss it.

Purchased at a little store in Nashville in April 2019. No date. Poured into Aslin anniversay glass.

L: Nice white foamy head, maybe 2F. Very good retention, leaves a nice fluffy cap and ring and lots of white fluffy lacing. Beer is a somewhat clear pale gold.

S: As you might expect the Brett dominates. Fruity as well. Not sure I would recognize it was pear per se, but stone fruits.

T: Slightly sour, fruity, and funky. Easier to pick out the stone fruit as pear in the taste. Not too puckering.

F: Light-bodied, reasonably carbonation but not too aggressive. Nicely crisp and refreshing and super-drinkable. Construction and balance are solid with flavors controlled.

O: Solid fruit sour.

Great head production, retention, and lacing. Lively and lightly hazy brew, translucent, and a dark lemon yellow color.

Lemon, honey, and pear on the nose; lightly tart and moderately fruity, with slight honey and hay. Any Brett features tend to get washed along with the pear.

Quite sour on the palate, surprisingly so. Apple, lemon, pear, grape, and mild vinegar up front. Pear, oak, and Brett combine on the second half for a fruity, funky, musty effect.

Moderate puckering; a touch sticky. Relatively short finish. Heavier body than the ABV would suggest.
