Persistence is a sour red ale aged in our foeder. One pound per gallon of Montmorency Cherries contributes a leathery accent to this Flanders-inspired ale. Once this beer reaches its peak, we blend the batch to attain the perfect balance of our house sour culture and North American cherries.

Deeply acidic, here comes the heartburn! Drinks like a Flanders red ale, I get cherry notes both from beer and from the fruit additions...I think. Lots of layers here but I don't have the vocabulary for beer like this, I just like 'em sometimes.

500ML bottle born on 12/7/17, poured into a pint glass at 40-43 degrees F:
L - cherry red and murky, head dissipated quickly
S - smells Wild!! You can smell the bacteria and the sourness as well as the cherries
T - This is truly a wild ale, the sour bacteria leap onto your taste buds! Cherries are a bit understated after nearly 3 years in the bottle but they aren't gone. The funk really hits you on the first sip
F - light mouthfeel, not too much carbonation
O - This beer seems a bit more tart than the taster I had at the Wicked Weed Funkatorium last month. Also less cherry taste, probably because this bottle is nearly 3 years old. Somewhat enjoyable but still rough getting down a whole bottle of sour...

Bottled 12/06/17.
Deep rust-hued crimson pour. Hazy, without much head or lace to speak of. Everything settles neatly into the glass.
Bursting with sour cherries on the nose. Hints of oak barrel compliment, but basically a nice simple, tart cherry sour.
More of the same, sour cherries and just the slightest hint of oak and funk. Balanced and puckering.
Puckering, good level of acidity and soft carbonation. A very clean sour.

A 500ml bottle of batch # 1122, bottled on 30th September 2016. Poured into a 3 Fonteinen stemmed glass.
Appearance: A murky brownish red colour with a one and a half finger off white head that dissipated fairly quickly and left only sparse to no lacing.
Aroma: Tart, cherries, mixed berries, light leather with a strange but interesting hit of cinnamon.
Taste: Very similar to the aroma, tart, sour, cherry, some mixed berries, oak, leather and cinnamon.
Mouthfeel: Medium bodied with moderate carbonation.
Overall: This was quite interesting as I enjoyed the cherry flavours coming from it, and you don’t feel the 9% ABV at all, but the cinnamon that appears on the finish was just not really my thing. I don’t even know where the cinnamon like flavours come from...

L: Poured from a bottle to a tulip glass. Had a dirty brown color and a somewhat murky consistency. There was a half inch of foamy head that quickly dissipated. Not much lacing.
S: A very nice aroma of cherries, a vinous quality, malt, and some other fruits.
T: Tasted of a moderate amount of the advertised wine (as well as the barrel it was in), a whole heap of cherries, a bit of malt (particularly in the finish), a bit of funk, and random fruits (blackberries?). A very sour, and oddly complex beer. Sweet powerful, and tasty.
F: A highly carbonated beer with a lively finish. Medium-bodied.
O: This is an incredibly likable wild ale. It's light, easy to drink - good for the summer months.
