For this collaboration, we took the grain bill for Trillium's Night & Day and combined it with the flavor sugar and spice additions from Prairie's BOMB! to create TrillBOMB! Brewed with cacao, coffee, Ancho chilis, and vanilla, TrillBOMB! has an intense dark chocolate and oatmeal cookie aroma, tastes of hot chocolate, sweetened cold brew coffee, and ends with a subtle warmth from the Ancho chilis.

500 ml bottle into a snifter. Believe it’s the 2023 release, had 12/9/23.

Pours near black and opaque, with a brief head and a little oily residue. Aromas of chocolate, vanilla, some coffee and bourbon, malt, brown sugar, some fig, light oak, a little smoke. Flavors of chocolate, chilies, vanilla, bourbon, malt, brown sugar, some coffee and fig. There’s a decent amount of heat from the chilies. Smooth, a very good full body, appropriately carbonated.

The chocolate and vanilla are most prominent, but the chilies show well in the flavor. The barrels are adequate, but would have liked a stronger presence. Expansive aromas and flavors, overall. Very enjoyable.

With a base malt flavor that's uniquely Trillium but a spice blend that's all Prairie, this collaboration ale drops a Bomb! on the palate.

Trillbomb!'s espresso black appearance and its skirt of creme allows for a spicy-sweet scent of burnt sugars, heavy toast, coffee, cocoa, cream and spice to greet the senses with curiosity and intrigue. An upstart of sweetness reveals malty flavors of blackstrap molasses, brown sugar, buckwheat honey and dark chocolate early and often on the palate.

As a fruity mix of flavors rise on the middle palate, the sweeter tone of the ale turns over to dark roast coffee, baker's chocolate and gentle smoldering embers. Hints of raisin, date and grape come in burnt form before the rise of woodsy hop bitterness and peppery capsaicin for balance and heat.

Full bodied, toasty and arid, the carbonized sweetness is slightly ashy and the peppery heat of the peppers dominate the finish for an unsettled taste that shifts the taste slightly out of balance for a fruit-and-field type of stout. A long linger of coffee and heat is, however, a welcomed sense of warmth to get us through the cooler weather.

Pours black with a finger of fizzy khaki tan foam. Aroma is roasty and toasty malts that gives it a very dark and deep start. Cocoa, coffee, vanilla, and spices are sprinkled throughout the heavy malts, adding in shades of sweetness, additional bitterness, and zest. Flavor profile forms a firm foundation via roasty, toasty, and caramely malts. Aside from the heavy malts are notes of vanilla, cocoa nibs, coffee, and mild spices. Despite vanilla and cocoa nibs, this beer does not lean sweet, instead those notes counterbalance the hearty malts to form a wonderful yin-yang relationship. Mouth feel is full, thick, and hearty with a light grit throughout, sorta like the second to last sip of coffee out of a French press. Overall, a full bodied stout that is elevated via some flavor additions, all the while retaining a steadfast focus on being a thick, full, and hearty stout.

Bought from the brewery on release and stored mostly in cellar conditions, drank 06.30.19.

Poured dark and sludgy out of the bottle, left a wisp of dark brown head. Didn't get much smell but didn't try too hard. Taste was really nice but all of the adjuncts were somewhat muted which makes sense after the time in bottle. There was a hint of chili but no vanilla or coffee. There was definitely a darker roasty cacao presence which may have come from the cacao or may have been from the grain bill; I'm thinking the former as I don't recall that taste in any of Trillium's other stouts, or Night and Day, which this was modeled after. Mouthfeel was medium to thick - always a standout for a Trillium stout.

Overall, a really good beer and one that, as with all adjunct stouts I would love to be able to have the luxury to drink one fresh, and then drink one aged as I did with this. Cheers!
