Notes / Commercial Description:
Super Soak: our Soak series amped up with a bigger malt bill, increased ABV, and twice the amount of fruit as Soak. While still sour, the higher ABV in Super Soak serves to moderate the lactic acid formation.

We ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the foeders to “soak” for a deep extraction of unique colors, aromatics, and flavors and a refermentation. Blackberry Super Soak is the first in a new series of big siblings to our smaller Soak variants.

Blackberries lend a tart, rich flavor profile, and a deep plum purple hue. The nose pops with succulent aromas of jam and pie, followed by a full blackberry palate.

Like most have said, a straight up blackberry bomb. Big rich blackberry/ mixed berry jam on the nose that’s echoed in the taste. Funk is minimal, light on the oak, with a lively lactic and acetic acidity. Sour for sure, but not too sour. If complexity is your be-all-end-all, this might not be for you. If you want a super juicy sour, this hits the mark

750ml bottle, served in a snifter glass. Pours a dark reddish purple body, like a red wine, one finger white head, short retention and no lacing. Smell is tart blackberry fruit, mild-moderate acetic and lactic acid, a bit of light oak, wheat grist. Straightforward, mouth-watering delicious blackberry aromas. Flavour follows as well- its a fruit-forward wild ale with full-throated blackberry fruit flavour and tartness, not quite thick jam, but the fruit is expressed fully here- with a mild citrus sort of tartness, acetic or citric. Light funky oak, and perhaps a little wheat sweetness. That's all it's about- the blackberry, and it's in some ways a one-dimensional, though super tasty, beer. Mouthfeel is medium bodied, slightly dry like a red wine, light on the carbonation but sufficiently carbonated, with a blackberry tartness lingering on the finish. This is a heavy blackberry bomb, with tons of the blackberry flavours but not too acidic like some blackberry wilds can be. Super drinkable with a tsunami of blackberry flavour, though that's really the main thing you get here.
