Notes: We drew our inspiration from wood for this year's anniversary beer, its natural beauty as well as its building and lasting strength, provides layers in the depth of character in a concentric annual growth cycle. Color & Grain serves as an apt representation of our continued growth at our five year milestone.

Color & Grain: Oak & Chocolate is an Imperial Stout that presents with a deep impression of complex and layered chocolate. Best served at cellar temperatures to reveal all the details! Aromas of chocolate malt balls and bruleed sugar fill the glass. Luxuriously silky mouthfeel reminiscent of melted chocolate bars with an oak derived vanillin subtlety. The flavors continue to extend with subtle roasted malt, then dark, charred figs, dates, then finally with a rich molasses and dry, dark cacao. A minimal, balancing bitterness with subtle warming alcohol reveals a finish expressive, bright and fruity lightly roasted coffee notes. The palate ends with oak tannin structure. Sat on this beer for a year and cracked it right around Trillium's subsequent anniversary. Heard the buzz that this beer was on the fence, hit or miss with the Tril crowd.

I loved it. Best stout I've had from them since BA Outside the Lines. I am not a fan of their highly regarded pastry stouts so there you go.

Black (but probably dark brown) body with a thick khaki head that lingers. Loved that. Nothing like feeling that foam-kiss after multiple sips.

Aroma was more bitter chocolate, roasted grains and dark ground coffee than dark fruit. Earthy, oaky with a kiss of vanilla on the back end. Fudgey but not sweet. Smokey but not meaty. Beautiful imperial stout base layered with additional complexity that just sings.

Soft and thick; slightly bitter, slightly sweet, right sized ABV that keeps the alcohol well covered.

Opaque black with a tan head. Dark chocolate in the nose with plenty of roast and a hint of vanilla. Full bodied with a creamy, pillowy mouthfeel. Rich chocolate on the palate with some warming boozy notes and oaky vanilla tannins. Finishes with lingering dark chocolate.

Very chocolate -forward with some complexity from the oak.

Congrats on 5 years!

The syrupy, oily, dark brown/black body was topped by a thin film of saddle brown froth. Within seconds, the head completely dissolved and a tiny ringlet encircled the liquid. A few small dots of lacing stuck along the glass.

The aroma was really rich and rounded. Nice mix of roasty, smoky and chocolatey notes. An oxidized/metallic quality was apparent initially but it eventually dissipated. As the beer sat, brown sugar and molasses notes appeared. Moderately sweet. Some raisin character too. Touch of bourbon as well. The sweet, fragrant bourbon notes later intensified. A hint of vanilla came forth. The chocolate presence also turned richer and fudgier.

The flavor was quite roasty and a bit harsh at first. There was also a fairly strong metallic quality, but it later disappeared. Loads of rich, roasted and caramel malts up front. Brown sugar and molasses notes were apparent. Some raisins and dark fruits too. Touch of bakers chocolate. Moderately sweet. More roast on the back end and the finish. Boozy, bourbony notes came through strong. This drank somewhat hotter than the ABV might suggest. Touch of lingering oak and tannins. Later, beer turned smoother and more rounded. The sweetness also intensified and the alcohol calmed down a bit.

Phenomenal mouthfeel. Luxuriously thick, rich and viscous. Completely full bodied. The liquid contained a fine, frothy effervescence that turned pillowy soft on the palate.

Many stouts today use adjuncts in excessive quantities to transform the base beer into an entirely different beast, but Color & Grain seemed to utilize them in a much more nuanced manner. The chocolate lent the beer a nice fudgey accent and the oak chips contributed some vanilla, woody tannins and a bourbon-like quality. This is a terrific beer that deserves more attention than it receives.

Had on tap. Pours opaque dark brown in color with minimal head. Taste is oak, dark chocolate, oak, coffee roast, and a good deal of nuttiness. Heavy bodied, roasty, and low carbonation. A beer worthy of an anniversary.

Imperial Stout aged on white oak & chocolate. Smooth and creamy. Lightly roasted malt, tons of chocolate and vanilla. Not too sweet. Rich and thick feel. Coats the mouth. Shorter finish. Phenomenal. Happy 5th anniversary

L - Pitch black body, small amount of ruby red on the edges, a finger of tan head with dark brown spots

S - Rich and decadent chocolate, char, tobacco, licorice, coffee, vanilla, dark fruits, cherries, peanut butter, cocoa powder, smoke. Wow.

T - Just as amazing as the nose. All the same flavors. Some added caramel and toffee. Has a piney hop finish,

F - Thick and viscous. No alcohol anywhere.

O - An amazing dessert stout. It isn't a sugar parade like other big Trillium beers which makes it more pleasing to the palate. The best stout Trillium, has produced.

Pours a dark deep brown, some chocolate on the nose. It's super chocolatey, rich, decadent, like fudge brownies. There's some molasses tinted heat as well. A minimal amount of oak on the finish. This was very well done by Trillium, but I fear a full bottle of this would be too much.
