Our Fated Farmer Series is a landmark step toward realizing our foundational vision for Trillium: Build a place that intuitively celebrates the intersection of New England farming, agriculture, brewing and an integrated community experience. The grist of each of the dynamic Fated Farmer wild ales is set on the structure of Valley Malt and is barrel fermented in 500L puncheons with our Native New England Wild Culture and aged for 5-7 months, before refermenting on freshly harvested fruit.
Fresh plums sourced from Lookout Farm in nearby Natick, Massachusetts lend this rendition of Fated Farmer an enticing nose of wildflower honey and plum, with a hint of lavender. A palate of tart plums is balanced by a crisp, lemony undertone. Appearance is an opaque, slightly hazy straw color.

This one poured hella interesting like looking at a piece from Dali while on LSD. It was super fizzy and effervescent, and then it settled into what looked like a silky/frothy head. Sure, why not? Taste is whatever like settling for Carl’s Jr. over In N Out. I mean, it will do the trick, but I’m not exactly thrilled here. It’s super light like your sister during her bulimic years. I mean, she was still hot, but I just wanted more beef on those bones. And right here, with Fated Farmer w/ Plum, the flavor just doesn’t pop like a jack in the box on steroids.

The pour on this is a hazy straw gold color, with a beautiful pillow soft head of foam. As it falls into the glass, there’s minimal patterns of lace that cling to the sides.
The nose is unmistakably plum. Tart yet sweet, plum skin and just a hint of must are the only characteristics you need to characterize the nose on this. Simple, very pleasant.
Tart, sour flavors of more plum, hints of earthy funk, bright citrus fruit, and a lightly floral backbone. Subtly complex, yet everything is so easily found.
Nice feel to this, with a full carb that is soft but noticeable. A very sour beer, as are all the Fated Farmer Series sours, but the sour feel is perfectly complimented by a medium acidity level and crisp, clean finish.

plum is one of, if not the hardest fruits i think, to get the flavor and essence to come through without the final beer being sweet. i think so much of its character is tied up in its fermentable sugars, so there is always a trade off, dry it out and lose some fruitiness, or keep the plum flavor there and have the beer be sweet. this seems to avoid that paradox altogether, which really is what makes it special for me, the beer is at once dry, even crisp with the acidic pucker and simple pils malty base, but it also is very plum forward, obvious and natural, at a higher level here than i have known in other beers to use them. i wonder what type of plums were selected, but they have a nice fleshy tang to them, and seem at the peak of ripeness in here. i like the beer being a little less sour than some others, i had this and the blueberry in a recent session and both were far less acidic and harsh than others had been in my experience before, which i think lets the fruit shine a little more, its not so distracting. a neat herbal and floral thing from the hops, white wine notes locked up in the oak, and a cleaner base, simple and cerealy and dry. plum is there from start to finish, a nice mature funkiness comes on as it warms which is great with the fruit too, and the carbonation makes this feel really lively. they did a great job with this, and i never thought i would say a trillium beer is underrated, but this one appears to be...

Poured from a 750ml bottle into a Trillium Fated Farmer wine glass. Purchased at the brewery, bottled Feb 2018.
Pours a hazy light orange body with a light pink hue. Big, frothy White head rises and falls slowly to leave substantial lacing and good retention.
Aromas are tart and lactic with stone fruit and citrus, crisp lemons, yeasty funk, a little grassy.
On the tongue, this develops pretty drastically as it warms. Initially I didn’t get much fruit at all and mostly lemon and lactic sourness, but as it warms the plums shine through. Very dry and more sour than the other fated farmers, leaves a dryness in the tongue. Medium light, crisp body with medium high carbonation.
Not my favorite of the series but still a solid beer, clean and refreshing on a hot day.
