Collaboration with The Veil Brewing Co.
We teamed up with our friends at The Veil Brewing Co. to brew our first Wild Ale together. Primary open fermentation in our coolship with a classic saison strain and a long secondary fermentation in stainless with both brettanomyces claussenii and our native New England mixed culture.
Stroka pours an enticing deep cherry hue with a foamy violet head. Vibrant aromas of wildflowers meet the nose alongside a bold note of strawberry with a hints of raw honey and earthy funk. A berry forward palate calls to mind flavors of freshly picked dark cherries and raspberries, with subtle cranberry leading into a delicate, vinous red wine grape profile. Lightly floral with the suggestion of hibiscus and rose hip, Stroka has a gentle level of acidity with a light body and clean finish.
ABV: 7.3%
MALT: Valley Malt Pilsner, Malted Spelt, Flaked Wheat, Wheat
HOPS: Aged Hops

Pours deep purple with a purple head. Retention is short-lived with zero lacing. Currants, red grapes, wine, and clovey phenolics in the nose. Medium bodied with a tacky, jammy mouthfeel. Ripe dark fruits on the palate and tart. Currants, blueberry, blackberry and red wine. Finishes jammy with a mildly acidic dryness.
Great beer, reminds me of St. Lamvinus.
