Continuing our exploration on the base of our bold American Imperial Stout infused with cold-brew coffee, we are proud to present Vanilla PM Dawn. We took our base recipe then slightly dialed back the ratio of cold brew Italian Roast from Barrington to allow the heavy dose of vanilla bean to balance the beer and perfectly accentuate its flavor profile.
Vanilla PM Dawn presents an opaque black with brown head and lacing. On the nose, an inviting freshly, roasted dark coffee aroma draws you in as highlights of Madagascar vanilla and burnt sugar syrup entice the palate. The flavor profile displays vanilla lattes, pot de crème, dried red fruit, molasses, and bitter baking chocolate. As with all of our PM Dawn variants, Vanilla PM Dawn offers a medium to heavy body with a luscious mouthfeel and a light bitterness for a balanced and smooth finish.

Not an actual rating but I didn't want to skew the numbers too much. I drank one of these that had been in my cellar for over 1 1/2 years and it didn't age well. It was canned in June of 2020 so it's over 2 years old at this point.
Certainly wasn't horrible, but the similarly aged PB version was much better in all aspects, so it's specifically this vanilla version.
In any case, this is just a public service announcement: Drink these fresh!

On tap. Tan head. Black color.
Really nice coffee here. Kind of cold press like. Not roasted. Nice vanilla but not too sweet. Chocolate. Caramel. Full bodied.

Another PM gem. Jet black pour with little head present. Smooth, silky pour and mouthfeel. Vanilla mingles with chocolate malt flavor, and coffee gives this stout a bit of a tannin bite to keep things interesting. This is superior brewing.

Pours a deep mahogany brown with a dark tan head that dissipates pretty quickly. The coffee is immediately noticeable on the nose, and there’s also
milk chocolate and vanilla notes as well.
The vanilla really shines on the taste, mixing with the milk chocolate flavor to balance the coffee flavor, which is abundant. The mouthfeel is on point, a bit creamy and substantial enough to provide the backbone this 9% ABV beer requires.
What a pleasure it is to drink this beer.

L - pours a loud, crackling, fizzy sodapop head and somewhat thin body coming out of the glass. Mostly brown with the itsy bitsy teeny tiniest crimson magenta ring around the bottom of the glass where the light hits it just right.
S - deep, roasted coffee beans and dark fruits. Dates, cherries, figs. Regular Coffee brings me vibes of Carton's RC series and a few of the variants like Irish Coffee and Cafe Y Churro. Sticky molasses and caramel sugar.
T - vanilla hits hard up front with a nutty burst of smooth, Fluff-esque marshmallowiness and brown sugar. Seems to be fighting, or keeping at bay, the looming bitter ground coffee bite. Like a game of Whack-A-Barley with your vanilla hammer. Ultimately blends together at the end as the vanilla syrup seeps away and the coffee dissolves (coffee can do that right?)
F - not as thiccc as a beer like this probably should be, but features medium-ish fullness with a peppery carbonation that seems a little misplaced, but does serve to accent the bitter bean bite.
O - a nice rendition of PM Dawn. The flavor is excellent and intriguing even if the vanilla adjunct doesn't jive too well with the base beer. Drinks more like a porter than a stout with its restraint on sweetness.
