Permutation is our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our brewing and cellar crew

For Permutation 69, we blended an imperial stout that had spent a year in bourbon oak barrels with an imperial stout newly brewed in stainless fermenters. The result was already delicious, but to add complexity and depth to the flavors of the blend, we added peanut butter, vanilla, and Barrington Coffee.

Out of the bottle, the beer pours a dark brown color with ruby highlights and a hazel-khaki head. Aromas of freshly baked fudge brownies swirl from the glass along with notes of ground espresso, brown sugar, and peanut butter cups. These flavors deepen on the palate revealing layers of chocolate pound cake, raisinettes, chewy peanut butter cookies, and vanilla-bourbon icing. Underpinned by a touch of oak, Permutation 69 has a luscious, creamy mouthfeel with a rich, full body and rounded smooth finish akin to a peanut butter frappe.

Unimpressed. I get no peanut butter. It was rather flat, no head.

Bottle purchased at Trillium Brewing Company in Boston, MA.

This one pours a very dark black color, with a small head, and a little bit of lacing. The bottom of the bottle, and the last pour out of the bottle were pure sludge.

The peanut butter and coffee intertwine perfectly in the aroma - with nutty and roasty peanut butter, chocolatey and decadent coffee, and some vanilla coffee creamer as well.

This is pastry stout at its most absurd and delicious. It's brownie batter dunked into freshly brewed coffee and then drizzled with peanut butter vanilla icing. There's a nice roastiness to keep it balanced against the sweetness overload that the added flavorings provided. There's not a ton of barrel here, as part of the blend is a new stout that didn't see any time in oak. There's a touch of oak, but no real bourbon character.

This is thick bodied, and fairly luscious, with a creamy and velvety mouthfeel all the way through. This is a delight to drink.

This is really quite good. Trillium stouts range from confusingly average to absolutely top tier - this beer is quite easily the latter.

Dark cola brown appearance. The beer poured thick and syrupy with absolutely no head nor any lacing. The liquid looked completely still but I later discovered it was not. Oily swirls could be seen on top of the body, most likely from the peanut butter.

Peanut butter dominated in the aroma. This reminded me of how a tub of the freshly ground stuff smells. Dark chocolate notes were also apparent. Fairly sweet. Slight roastiness. While the peanut butter really popped initially, it definitely decreased with time. Both the chocolate and the roast intensified however. As other reviewers have mentioned, I also picked up some banana notes by the drink’s end.

The flavor profile was also very peanut butter forward. Nutty and sweet but not excessively so. Big dark chocolate presence. Strong raisin notes too. Vanilla came through strong in the center. Malty and rich. Nice balance of roasted and sweet caramel malts. Bit of creamed coffee. The beer finished moderately boozy with just a hint of bourbon. For 14.4% ABV, however, this drank exceptionally well.

Ultra rich, thick, syrupy mouthfeel. Completely full bodied for the style. The liquid contained a super fine, frothy, tongue blanketing effervescence that fluffed up beautifully on the palate.

Permutation Series Nimber Sixty-Nine is a monster of a pastry stout that takes the intense peanut butter notes of Peanut Butter PM Dawn and combines it with the body and decadence of Adjunction Junction. Overall, a fantastic beer that drinks far too easily for 14-plus percent.

L- Looks like flat soda. Dark brown head fizzled away immediately. Pitch black body.

S - Huge Peanut butter. Subtle chocolate and coffee. No vanilla. Banana? Char and oak. Minimal bourbon.

T - PB is in your face and I love it. Bourbon is more pronounced. Noticeable booze that you get used to. More oak from the barrels.

F - Thick and viscous. Coats your tongue and flavors linger forever.

O - While lacking vanilla and coffee was muted, the sheer amount of PB made up for it. Tastes like PB PM Dawn on steroids.

On tap at Thompson place.

Presents in the glass opaque dark brown with zero head or lacing. Chocolate, bananas, coffee, and fudge in the nose. Full bodied with a viscous, chewy mouthfeel. Chocolate-covered bananas dripping in bourbon on the palate. Hints of vanilla and espresso follow through. Finishes with boozy bananas.

Very sweet with no apparent peanut butter character and the vanilla, coffee components are subdued as well. Not sure why so much banana?
