Notes: A collection of our most fruit forward beers to date, Super Duper Soaks are the next step in our series of Sour Wheat Ales. Focusing on single fruit profiles and pushing passed the fruiting rate of our Super Soaks, these beers offer limitless depth. Less sour than our other Soaks, their amped up malt bill serves to moderate lactic acid formation allowing the extra dose of fruit to take center stage.

Like our other Soaks, we ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we re-ferment fruit in the base beer after primary foeder fermentation to “soak” for a deep extraction of unique colors, aromatics, and flavors.

The next entry into this exciting new series, peaches lend this beer a vibrant golden maize color and provide excitable aromas of peach cobbler, fresh apricot preserve. The fruitiness of the nose is braced by undertones of wet oak along with a touch of barnyard and earthy funk. A bold palate matches the nose with rounded, deep, and mildly sweet stone fruit flavors flavors. Medium bodied with a fully restrained sourness and refreshing carbonation, Peach Super Duper Soak has a mouthwatering finish that leads into another sip.

Full pour at the BNA Party in Providence.
Light lemon yellow in color with lot of haze and little in the way of head. Big fruity notes against a lightly tart malt base.

Poured from an 11.2 oz bottle into a tulip glass. Deep yellow/peach color with vibrant head that quickly receded with no lacing. Some funk and mild peach scents. Taste is mostly lactic acid, sour, but some juicy peach undertones and funky barnyard finish. Lively effervescence on the palate. This one’s a solid fruited wild ale. Was expecting a bit more sweetness to balance the sour base but still very nice and refreshing.

10oz pour at Trillium canton tap room.

Pours a super cloudy bright yellow-orange body with a fizzy head that quickly reduces to leave no lacing or retention.

Aromas are juicy and peachy, overripe stone fruit, freshly squeezed peach juice, tart fruit skins, so damn fresh and inviting.

On the tongue it’s sour with overripe peaches, lactic tartness, peach pie, oak on the finish. Medium carbonation
