Notes: Dialed-Up builds upon the foundation of our series of Double IPA’s brewed with grape must, Dialed-In. For this rendition, we amped up the ABV to 11% and paired aromatic Mosaic hops with complementary fresh Riesling juice.

Pouring an alluring gold with deep haze, Dialed-Up Riesling offers an intense nose that balances a vinous white grape character with saturated tropical fruit aspects. Notes of orange peel, mango, pineapple, and white wine intermingle on the palate. Finishing mildly sweet with a well-hidden alcohol presence, Dialed-Up Riesling is a welcomed addition to our family of beer/wine hybrids.

Pours an opaque milky orange with a small short lived head.

Smells of pineapple and hops. Tastes of grapefruit with a lightly bitter finish. The 11% ABV is dangerously hidden.

An excellent NE IPA!

Completely opaque, burnished yellow-orange appearance. The body was capped by a small, frothy, off-white crown that quickly fell to a thin collar. Some streaky lacing trickled along the glass.

The aroma was amazingly dank and fruity. Fresh cannabis notes came through big time. Mosaic hops were definitely in full effect. Loads of overripe stone fruits as well. Stewed peach and apricot notes perhaps. Sweet but not excessively so. A white wine-like quality (Riesling?) was also detectable, but I doubt I would have picked this out without prior knowledge. As the beer warmed, the Riesling intensified.

The flavor profile was also outstanding. Big citrus presence up front. Freshly squeezed orange juice for sure. Ripe peach and apricot notes followed. The weedy dankness that was so prominent in the nose also came through in the flavor, but to a lesser degree. Touch of white wine in the center. White grapefruit appeared on the back end and the finish. Subtle pithy, bitter, grapefruit rind-like notes were also detectable. Some boozy heat made its presence known after the swallow, but the alcohol was shockingly subtle given the remarkably high ABV. Like the nose, the Riesling notes intensified as the beer sat.

As fantastic as the aroma and flavor were, the mouthfeel was ever better. Full bodied for the style. Super creamy, fluffy and smooth on the palate. The liquid contained a fine and fairly zippy (yet ultra soft) effervesce that gave the beer a fantastic pillowy softness.

Trillium seem to release a new triple IPA every week, and while some are great, many are excessively boozy and/or sweet. Dialed Up w/ Mosaic & Riesling Juice was perhaps their best take on the style to date. The Mosaic hops lent the beer big fruity notes and an amazing weed-like dankness, the alcohol was remarkably well hidden, and the Reisling grape juice added to the complexity. All in all, this is an amazingly well crafted beer and one that I would definitely seek out again.
