Our latest Dessert Series offering is inspired by a pastry that is enjoyed equally alongside an after-dinner cup decaf or with your morning shot of espresso. Brewed with cinnamon, vanilla, and brown sugar, Barrel-Aged Cinnamon Raisin Bun was laid to rest for a year in fresh bourbon barrels.
Pouring intensely black, warm aromas of raisin and dark fruit immediately greet the palate. Layers of cinnamon bark, dark chocolate fudge, gently sweet brown sugar, and vanilla frosting notes add complexity to each sip. Rich and creamy, with a warming barrel character, Barrel-Aged Cinnamon Raisin Bun is a bold and well-rounded treat.
Malt: American 2-Row Barley, Crystal Malt, Flaked Oats, Black Patent, C-120, Chocolate Malt, Simpsons DRC
Hops: CO2 Hop Extract
Additional Ingredients: Cinnamon, Vanilla, Brown Sugar

Pours dark brown. Aroma dominated by cinnamon with lots of vanilla sugary sweetness. Taste follows - intense cinnamon, vanilla, raisin, malts & booziness. Mouthfeel was medium and i wish it was thicker.

Medium bodied, dark brown appearance. Somewhat lighter in color and thinner in body than I anticipated. The shimmery looking liquid was topped by a few larger sized tan bubbles that quickly dissolved. A thin ringlet encircled the liquid.
The aroma was terrific and really lived up to the beer’s name. Cinnamon notes came through strong. Lots of fresh vanilla bean as well. Big raisin presence too. Brown sugar was also noticeable, along with a touch of almond. Quote boozy and sweet, but this was to be expected for a 15-plus percent ABV pastry stout.
The flavor profile was similar to the nose but perhaps bit not quite as rounded. Super malty and robust up front. Nice melding of roasted and caramel malts. Cinnamon and vanilla notes appeared next, but they were definitely not as potent here as in the nose. Lots of brown sugar sweetness. Boozy notes kicked in hard on the back end. Sweet and savory with some nice dark fruit qualities. An aged rum or a tawny port came to mind (more so than bourbon barrels). The alcohol really intensified on the finish. More lingering booze, roast and brown sugar after the swallow.
The mouthfeel was thinner than I anticipated and seemed rather over carbonated. A fine, aggressive effervescence made the liquid seem significantly lighter than it might have actually been. As the beer sat, the carb settled to a more appropriate level and the beer fluffed up very nicely on the palate. The body also seemed to gain some heft. By the drink’s end, the sugars in the beer left a slightly sticky film on my lips.
Barrel-Aged Cinnamon Raisin Bun definitely lived up to its name in both flavor and aroma. While enjoyable, the mouthfeel seemed a bit thin and the alcohol came across as somewhat excessive. I would definitely put this beer in the middle tier of Trillium’s limited release stouts.

So disgustingly sweet I had to pour it out. It was horrible. Liquid sugar. Definitely will not be buying these stouts again without tasting them first.

On tap at Fort Point
L -- Pitch black with 2 fingers of tan head that dissipate quite quickly. Minimal head retention or lacing, as expected given the ABV
S -- Raisin, cinnamon, prune, vanilla, bourbon
T -- Largely follows the nose. Definitely has a distinct cinnamon raisin bun character, definitely a lot of dried fruit character here alongside the cinnamon. Barrel character is there but not front and center
F -- Big mouthfeel, medium- carb. Not particularly velvety , but quite thick

Smells and tastes just like a cinnamon raisin bun, some bourbon sweetness, big raisin, prominent cinnamon, vanilla frosting notes, dark chocolate, medium-fuller bodied, thick and smooth
