Cutting Tiles is an exploratory series of Double IPAs featuring a range of aromatic single hop varietals brewed with raw local wildflower honey, which allows for a remarkably deft and dry body while simultaneously providing an earthy backbone.

As we continue to push the boundaries of hopping rates, we're excited to debut our first double dry-hopped addition to the Cutting Tiles lineup. Brewed with an amplified amount of PNW Mosaic hops, DDH Mosaic Cutting Tiles presents a warm orange with a soft, glowing haze. The nose offers a potent blend of sweet stone fruit, with interwoven notes of peach rings, candied apricot, and juicy pineapple. A delicate earthy honey character pokes its head out on the palate, resting upon a full and fluffy body. Finishing mildly sweet with a kick of piney bitterness, DDH Mosaic Cutting Tiles is a welcomed evolution of our beloved Honey IPA recipe.

ABV: 8.7%

This DDH take on cutting tiles is a great one in my view. Great balance of fruity, spicy, piney hoppy goodness. This one is more on the earthy, piney scale than juice bomb territory, which I appreciate. There’s a solid amount of lingering hop oils and bitterness on the finish- it really lingers. Glad I picked this one up, the cutting tiles series is one of my favorites. With the DDH treatment it really knocks it out the park.

Served in a tulip

The beer poured a cloudy, dark yellow ochre hue, not too dissimilar from peach nectar. A small, finely bubbled, off white crown topped the liquid, but it quickly fell to a thin collar. No lacing whatsoever.

The aroma was outstanding. Super fruity and bold. Ripe mango dominated. Loads of juicy peach too. There was a subtle weed-like dankness as well that became more prominent as the beer warmed. Citrus was also noticeable. Tangerine for sure. Bit of orange. Sweet overall but not excessively so for the style.

The flavor profile was also fantastic. Citrus notes came through big time. Loads of juicy orange and tangy tangerine. Ripe peach and mango notes were also noticeable. Pineapple appeared in the center. More orange and pithy orange rind on the back end and the finish. Hint of lingering bitterness.

Excellent fluffy mouthfeel. Medium-full bodied for the style. The liquid contained a fine, zippy effervescence that turned ultra frothy and smooth on the palate.

All the beers in Trillium’s Cutting Tiles series have been impressive, and this Mosaic double dry hopped variant is one of their best to date. While the Mosaic presence was a bit more understated than in many of Trillium’s other IPAs, the juicy, fruity hop character was off the charts.
