Released just once a year on our brewery's anniversary, this American wild ale is aged on whole Cabernet Sauvignon Grapes and Black Currants in Cabernet Sauvignon and Bourbon Oak Barrels.

One of our boldest, most dynamic beers, Cuvee de Tetreault expresses powerful vinous forward flavors of black currant, sour cherry, and cabernet fruit supplemented by hints of tobacco, vanilla, and a fleeting, light roast. An underlying tannic structure from the whole cabernet grapes adds complexity and balance to the fruitiness and acidity.

As the beer ages, the fruit character will gracefully evolve, opening up nuances provided by the grist, our native New England mixed culture and the select barrels. Cuvee de Tetreault is a celebratory beer, intended to be shared with friends and loved ones to commemorate life's milestones and achievements. Bottle dated 10.28.15, drank 08.02.20 out of a Trillium Permutation flute. Really kinda blown away by this after saving it for so long. Beautiful dark cherry brown pour with a garnet hued head that hung around generously at the edges of the glass throughout the pour. Distinct grape and black currant taste that I'm pretty sure developed over time. Not overly tart or acidic. Thick mouthfeel. Love the fact that this is an 11% cuvee versus a 5% - makes you really want to sip and savor it.
Need to buy a new bottle to compare. Really enjoyed this.

Served in a tulip

The beer poured a glossy, deep burgundy color and was topped by a frothy, half-inch tall, light mauve crown that fell to a thick, lasting collar. Dots of lacing stuck along the glass.

The nose was deep, dark and complex. Cabaret Sauvignon barrel notes came through big time, as did the black currents. Loads of oaky barrel and dry woodiness. Black cherry was also apparent. Bit of raisin character too. Slightly sweet but also fairly savory. Some oxidation was noticeable initially and intensified as the beer warmed.

The flavor profile was similar to the nose but even more impressive. Huge Cabernet barrel presence right from the start. Big and oaky. Black cherry notes also came through strong. Touch of raisin. Fairly savory. The beer turned more sour and acidic in the center. Sour cherry and currants came to mind. Some oxidation was again noticeable but definitely not as much as in the aroma. Lemon notes appeared on the back end and carried into the finish. Woody tannins and more bright lemon lingered after the swallow.

Solid mouthfeel. Medium-full bodied for the style. The liquid contained a medium bubbled, greater-than-average effervescence that fluffed up nicely on the palate. At 11% ABV, the alcohol was surprisingly nowhere to be found.

Trillium has a tendency to make their fruited wild ales extremely tart and acidic, but Cuvee De Tetreault was surprisingly balanced and far more complex than any of their previous offerings. The Cabernet barrels and black currents were front and center in both the flavor and aroma and perfectly integrated into the base beer. Barrel-aged wild ales rarely get any better than this.

Dark burgundy with some visible tan sediment floating in the body and a fluffy pinkish light tan head persisting as a thick blanket on top. If not for the floaters this would have a real enticingly unique look to it.

Taste is roasty and toasty sesame seed with sour cherry and balsamic characteristics via a soft medium body with a sharp acidic finish.
