I was always late to the party (if showing up at all).... and it is good to know that I haven't changed as I aged.
That's my segue to this very aged bottle of Bliss.... almost six years after the last BA review. (Beware Binny's inventory!)
Given Wild Beer's entering receivership (administration in England), there seems to be little point in reviewing a saison at least 4 years past its prime. But I will say that I greatly admire the copy on Bliss' bottle and I enjoyed all three of their saisons. Regrettably, Wild Beer's knowledge and passion is no longer integrated in one company. But like yeast, Wild Beer's people spontaneously could re-emerge and re-invent the Belgian tradition in the crafter's revolution.
Also I should note that I finally read through the portfolio of Wild's former importer, B. United International. I never knew how much I owed them. What a list! I encourage you to read through it for yourself. While I lost count, but I've had close to 100 unique beers they've imported. Are they the second greatest importer of all time ?

A 330ml bottle with no visible BB date. I reckon I've had this a long time, probably more than a year, but I'm not sure how old it is or whether it's still in date. Described on the label as a saison brewed with roasted apricots, secret spices and fermented with brett.
A: Poured into a Duvel tulip. Bottle conditioned. A deep, hazy marmalade-amber hue with fine floating sediment and good carbonation. Produces a decent head of creamy off-white foam that lasts for a few minutes before subsiding to a patchy surface layer. Slight lacing.
S: Aroma of mild sweet apricot with hints of subtle spice, a twinge of cinnamon, faint stewed leaves and earthy yeast. The overall impression is that the aroma has faded significantly.
T: Tastes of earthy yeast with notes of delicate spice, faint apricot, a touch of malt and vague stewed leaves/cardboard. A subtle vinous quality lurks in the background. No bitterness to speak of.
M: Mouthfeel is smooth, tingly and dry, with spritzy carbonation and good body. Aftertaste of earthy yeast, faint spice and a hint of fruitiness.
O: Hmmm - not sure what to make of this one, though I think the character has certainly faded with time. Looks OKish, while the aroma and flavour are delicate and verging on bland (when the ingredients are considered). Body is alright. The brett doesn't make itself noticed. I suspect this bottle is a bit too old but that said, it's hard to know what the brewer was aiming at. I might try and re-review if I can get a fresher bottle.

A- pours a murky brown color with a small creamy white head that reduces to a ring around the edge
S- sour apricots, spicy yeast, smarties candy, nutmeg, cinnamon, some vegetal notes, basically smells like a pumpkin ale with fruit
T- opens up with flavors similar to a pumpkin ale, very spicy with notes of nutmeg. Some spicy yeast, picking up a trace of apricot but it's overpowered by the spicing for the most part. The finish brings flavors of brown malts and tastes like a brown ale with a wheaty linger
M- medium body with very low carbonation leads to an almost flat mouthfeel that continues to the finish
O- not sure what the goal was with this one, but it was just all over the place. Tastes like a mix between a pumpkin ale, brown ale, saison & fruit ale.

not at all what i expected here, and definitely my least favorite beer from these guys so far, although i do appreciate how original it is, nothing quite like this on the market that i am aware of. on tap at back country pizza in boulder. it comes out real dark, burnt orange in color, with a short film of beige head. it smells decent, but crazy spiced. more of an autumn pumpkin ale spice profile, cloves and allspice it seems, and it definitely covers up the apricots, which was the element i was most stoked on since they are roasted and you dont see a whole lot of that. i get the fruity sweetness, but to place it specifically is impossible with all the spice. then on the wild side, i dont smell a whole lot of yeast, maybe a little funk, but its not sour in the least. the flavor is like the nose, not in the least unpleasant, just not as advertised. it almost tastes like a dubbel in its grain complexion, and the spices, which possibly compatible with the other elements, are so strong that they through the whole thing out of whack. could use a little acid on the back end to lighten it up, and the wild yeast part seems subtle at best. overall not a hard beer to drink through, not messed up in any way really, just a real strange combination of flavors. more roasted apricot would help too.
