Open floorplan and great light from the front wall of windows.
Decor is music based set with historical notes. It seems anachronistic now, but Chicago was the 'old west' a couple hundred years ago. The name stems from stories of the beverly area, in which the brewery sits. Pre-civil war rustling led to the eponymous name.
Beer selection is limited to in-house brews and two guest handles. No bud/coors. Solid house brews. The kitchen sink, mild ale, is almost a red ale. I also tried, and enjoyed, a mango flavored ale that looks like juice, but drinks like a nice balanced ipa.
Food is better than average pub food. Appetizers include the ubiquitous wings and southwest eggrolls, but the chicken slider trio hits the mark with out-of-the-box sauces. Salads are fresh. Sandwiches also surpass the obvious. Not just pork and lamb, but wild Illinois boar and Illinois sourced lamb. Great for the area and worth visiting.

Really like the food here, beers are okay (hit & miss) and there's not much of a selection; maybe 6 or so.

At first I wasn't really sold. But I've been here 4 times (I live relatively close) and I feel like it has improved each time. Hopefully they will get a little more ambitious. Beers are usually solid but not extraordinary.

Nice layout with tanks and aging barrels in view. Relatively quiet when I went in for a very lunch on a weekday. Everyone was siper nice. Ordered a couple beers and was offered a few tasters. Prices are pretty reasonable.

The outside is a nice clean unassuming building with a nice crafted wood and glass double door. Do be alarmed as you walk in and see a growler plummeting from the ceiling toward the hostess. It is actually part of the automatic door closer. The inside is a great open space brick walls and a barrel ceiling with local art work,and seating sections are broken up with the bar off the the right, and some barrels off to the left.
The beer is served in very nice stemware but don't be fooled these are 16 oz. beers and not 12 oz. beers, at least that's what is says on the website. So the value is even better. They have a very nice range of beers, and the few I got to taste were very solid and well built.
The food is large portions, and I do appreciate the kids menu on there as well with decent choices. The Banh mi sandwich was there own riff on the classic with lots of pulled pork and was very tasty.

Ok first thing first this place was packed which os to be expected on a saturday night.
They have a bar booth seating and tables. The ceiling is awesome and from the booth I was seated at I could see into the actual brewery.
The quality was outstanding the beer was flavorful with quirky names. The tables where clean. Everything was nice.
The service was good the waitress that we had was attentive.

Ok as for the food, im a big burger fan well I had a grass feed cow burgwr and it was hands down the best burger I have ever had. Also burgers/ chicken sandwich come with fries.
The price was easily affordable.

It's always difficult to review a brewpub the first week it opens so there will be a follow-up to this review a month or two from now.
Horse Thief Hollow is a welcomed business to the neighborhood and everyone is proud to have a place like this in Beverly. This could very well be the first restaurant/bar/brewpub on Western Ave that doesn't have Miller, Bud, or Guinness on draft. Finally!
It was 8pm on a Friday night and the place was quite busy, 45min wait to get a table. First come first serve at the bar and some chairs opened up within 20min. Horse Thief Hollow had two of their own beers and some impressive guest drafts. Most pours were $5-6 each and they also offered a flight option. The stainless conicals were alongside the wall and still to-be used. My suggestion to all is to re-visit the place 1-2 months from now when they have more of their own brewed beer on tap. There could also have been more options for bottled beer... the choices seemed limited to only what was on draft.
The food was reasonably priced for what was served. The burgers are average... better than most fast food establishments but can't be compared to places like Tribes or Three Floyds. Chicken Tenders were average as well, both came with a side of fries. They were also out of a few menu items which was expected.
Service from the hostess & bartenders stood out. They will definitely take care of you here and are happy doing so despite how busy the place was. If they continue leading with the great service then this place has lasting potential. The minor issues of running out of menu items or beer choices will work themselves out over time.
