Blonde Ale brewed with grapefruit.

On tap at the brewery over the weekend. Ruby pours a golden flax color with opaque cloudiness. Small head rises up and leaves some spots.
Smell is pretty grapefruit-forward. Bit of dough and malt sweetness, but grapefruit is on display here. Flavor starts with a crackery malt, but it's washed away by a grapefruit flesh wave, peppery and full of citrus. Semi-sweet and tart finish with a bit of bitterness, hoppiness relatively low.
Overall a tasty beer, but a bit one-sided. Would make for a good summer seasonal but not sure how it would translate to their regular lineup.
I also had this beer on cask at the brewery on the same day, with cherries and Citra hops and it was insanely juicy and easy to quaff, I would give that one a 4 out of 5.

Crowler from the brewery
Slightly hazy deep yellow color decent sized white head moderate retention. Grapefruit in spades in the aroma and and the flavor, light pilsner maltiness underneath. Quaffable.

I've been calling Ruby my "breakfast beer." It's extremely easy to drink, with a sweet-tart grapefruit taste the isn't bitter. I'm a sour fan so I really enjoyed this.

Very sour and very tart not to my liking and i would be surpised if anyone had a pallet for thos beer. My brother had a difficult time getting the 6 pack down.

A very nice standout among the many grapefruit beers lighter in body and hop really lets the citrus shine. had a growler on a summer night and it went in all of about five minute.
Crisp refreshing blond ale with nice hop presence. clean and fruity. then the grapefruit kicks in and really does a nice job accenting the citrus in the hop.
If you like Grapefruit and tart you will love it
UPDATE: bought a six pack and the recipe has changed. It has a sour side to it now. It seems like they have added some lacto B to sour. It is good but there are some real funky wild notes to it, not over the top but there. not the typical clean tartness many have these days.
UPDATE UPDATE: Its back. They have cleaned it up and it is again IMHO excellent. Crisp and tart and really excellent. Fan of Thimble.
