Very Good
Mosaic Double IPAMosaic Double IPA
Notes: I’ll be dammed, this is a great double IPA! Brewed with 100% Mosaic hops this beer is packed with complex aromas showcasing crushed grapes, citrus, passion fruit and grape fruit. The finish is dry and slightly sweet.

16oz canned 12/4/19. Opened 1-24-20.
1" white head on a deep golden and fairly clear/clean DIPA. The head is dense and creamy with very good retention - early signs of lacing to come.
Blueberries (lots of berry character) and pineapple over a lightly sweet, bready malt base. Lemon aroma late.
Berry and tropical fruit, mango / mild pineapple flavor. Honey. Grainy malt and some sweet alcohol heat.
Bright entry and a medium body with similar carbonation level. Medium length hoppy finish with some boozy heat towards the end.

Can, fairly fresh, at home. Deep golden colour with very tiny particles. Rocky off white head with good retention. Aroma's of tropical fruit (pineapple, passionfruit, mango), with additional sweetness and light resin retronasal. Flavour is moderate sweet and moderate bitter. Medium bodied. Long resinous bitter finish, not too astringent. Solid DIPA.

Canned 12/13/18.
L: Pours a straw yellow/amber in color. Transparent, clear, delightful. I poured the beer slow, but still somehow facilitated a 3 fingers width cap that is dense and frothy. The cap dissipated to a bubbly ring around the perimeter. The lacing, oh my, is delightful. Soapy, sudsy, spotty and enticing. The beer looks great.
S: As soon as you shove your nose into it, you know this a mosaic beer (even though the name gives it away). Tons of citrus and berry aromas with plenty of malt breadyness on the nose.
T: Classic mosaic. The malts provide a foundation that the other flavors build upon. Notes of blueberry, melon, grapefruit, and pine. Of course, it wouldn't be mosaic-featured if it left out the dankness. Its dank and the equivalent of a stanky taste. It is a good flavored beer and enjoyable.
F: Light in body, medium in weight with low to moderate carbonation, somewhere flirting among the middle line. No booze presence, which is an achievement for an 8.8% brew.
O: I am not the biggest fan of solo mosaic beers, but this one is enjoyable. I think I would prefer it even more in a single variant. Knock that abv down a rung into the 6-7 range and scale back the malt profile a tad and it would be even more up my alley. I am very grateful to have tried. Cheers!

SLightly hazy, color of ripe hay. Thick, white head with good retention.

Aroma is bready and fragrant. Hops lend a nice, floral almost perfumey aroma. THe aroma's finish is la nice, leafy sort of hoppiness.

On the tongue, Mosaic is smooth and yet well carbonated. Bready malt leads into a slightly fruity center. Fruity center leads into a dry, hoppy finish.

Overall, very pleasant IPA. It's simple, straightforward, and carries its alcoholic strength very well.

Pours a nearly clear golden with 1-2 fingers white head.
Aroma slightly dank - pine, tropical/pineapple, citrus.
Taste mildly hoppy - pineapple, mango with some weedy dankness in back.
Mouthfeel is a bit thin with muted carbonation. Alcohol is well hidden but at expense of the body. Really easy to drink but slightly underwhelming.

16oz can - all right, bring on the Mosaic if you must!

This beer pours a slightly hazy, pale golden amber colour, with four fingers of puffy, loosely foamy, and bubbly dirty white head, which leaves some stellar soap scum pattern lace around the glass as it lazily recedes.

It smells of gritty and grainy cereal malt, some blood orange, red grapefruit, and lemon citrus rind, a further muddled tropical fruitiness, and some leafy, weedy, and dead floral hop bitters. The taste is grainy and crackery caramel malt, canned pineapple rings, mixed domestic citrus peel, some damp minerality, and more leafy, herbal, and resinous piney verdant hoppiness.

The carbonation is adequate in its palate-coating frothiness, the body a solid medium weight, and generally smooth, with perhaps a soupcon of alcohol edginess starting to create inroads here. It finishes trending dry, the hop bitterness seizing any lingering swag.

Overall - once again, this particular hop varietal shows that it has the balls to not only carry a whole brew by itself, but a DIPA at that. Crisp, easy to put back despite the elevated ABV, and highly recommendable as a salve on another day where I have to shovel the fucking sidewalks.

16 oz can dated 01/03/19 so nice and fresh. Has the look of a proper IPA with no haze. Awesome Mosaic hop aroma with its pungent, weedy dankness. Must of used extensive dry hopping as there is a lot of hop flavor, but just moderate bitterness. Definitely not West Coast levels of bitterness. Malt is slightly sweet and the beer finishes clean with just a lingering dankness. Medium body and very nicely carbonated. Not harsh at all.

Look: Bright amber color. My semi-aggressive pour yields 1.5 fingers of frothy white head. Head retention and lacing are pretty typical for the WC style.

Smell: The smell is bright and tropical, with lots of grapefruit and papaya, just like you would expect from a single-hop Mosaic IPA. Quite pungent for a WC-style beer, and definitely pleasant in terms of aroma.

Taste: Doesn't taste nearly as good as it smells. All your typical Mosaic notes are present, but something is off. I'm not sure if it's the malt-hop interplay or something else, but the taste somehow feels disjointed. Sweetness is apparent.
Those were my initial notes, but as this beer warms, much more of the Mosaic flavor comes out, in a good way. It's still far from perfect, but moves up to 4, rather than the 3.5 I wanted to give it initially.

Feel: This one is a pretty typical WC DIPA in this category, but perhaps a bit under-carbonated. Alcohol is well hidden, which is always a plus.

Overall: This starts as a very mediocre WC IPA, but gets better as it warms. Mosaic notes are pretty heavy in this beer, so if you're not a big fan of this hop (though who doesn't like Mosaic?), you won't want it. Still, it's far from the best beers in this category.

Poured from 12 oz bottle into chilled glass mug. Hazy golden colour with a nice white head and some nice lacing. Smells of mild hops and some tropical fruits and citrus. Tastes much like the aroma with some grapefruit creeping through. Some bitter aftertaste but still nice mouthfeel. Prost!

Bottle from Boise Co-op. Medium golden, hazy, small, tight creamy head. Aroma doesn't give much away, some nice caramel malts perhaps. Taste starts off with a swift kick to the tongue, sharp bitterness, but still kind of sweet. Nice feel throughout. Seems boozy without being too warm.

The beer pours out a lightly hazy golden orange color, with 2 fingers of off white head--------------- the aromas are of over ripe tropical fruit, oranges, pineapple and papaya---------------- the flavors are of pine, grapefruit, dank weed, tart orange, under ripe pineapple and a bready malt backbone, the beer has a medium mouthfeel with a lingering pithy bitterness on the finish----------------- overall this beer was nice, it had great aromas and flavors just a little to bitter for my preference

Type: 12-oz. bottle
Glass: Clear 16.5-oz. Belgian ale tulip
From: Bine & Vine Bottle Shop in Normal Heights (San Diego), Calif.
Price: $2.15 (with 10 percent off for variety 6 pack)

Reviewed as: American Double / Imperial IPA
Misc.: Bottled on Dec. 11, 2017

Picked his up on a recent trip to Bine & Vine. Not usually a big fan of Belching Beaver IPAs, but the last two I tried were pretty damn good in Hoppy Hoppy Night IPA (3.995) and Deftones Phantom Bride IPA (4.310). The rest I’ve tried were fairly average. Mosaic is my favorite hop, though, and expecting this one to be solid. Bottle description read, “DAM! That’s a whole lot of hops. This juicy and well balanced Double India Pale Ale is loaded 100% with the highly sought after Mosaic hop. Tropical and fruity yet not too bitter, this big bad beaver brew will have you shouting “DAM!” with every sip.”

Poured a gold hazy color with 2-to-3 fingers of frothy white head. Lots of fast moving bubbles coming up along the sides of the glass. World-class even layered foamy lacing. World-class retention. (Sight - 4.50)

Smelled big dose of Mosaic up front. Also grapes, blueberry, passion fruit, floral, grass, buttery malts, tropical zest, light pine and maybe even some Simcoe. (Smell - 4.00)

Tasted better than the nose. Got the obvious Mosaic, as well as passion fruit, grapes, blueberry, floral, papaya, tangerine, grass, pine and still those hints of Simcoe. (Taste - 4.25)

Medium body. Oily texture. Average carbonation. Long finish. (Feel - 4.00)

This was pretty solid overall. Will be having it again for sure. (Overall - 4.00)

Bottled 12/07/17 (3 days old). Looks great in the glass - opaque golden yellow with a fair amount of white head. Leaves some decent lacing as it goes down. Fruity citrus aroma. Tropical fruit up front dominates with notes of pine, citrus and minor hints of grass and stone fruit. Feel is clean, crisp, and slightly dry on the finish. This brewery has really been impressing me lately and this beer continues that trend.
