Poured from bottle into tulip, 2 finger cream colored head, hangs around a while and gives off nice lacing. Hazy golden in the glass, some yeast, but I wasn't careful when I poured. Smells of sweet malt, juicy fruit gum and something floral I can't put my finger on. Taste is initially malt sweetness mixed in with the fruity esters from the yeast. The sweetness isn't as much as some tripels, but it is there. The middle of this is real creamy on the tongue, and it has a somewhat dry spicy finish. I am guessing the 42 IBU drags down some of the apparent sweetness here.

Appearance: Straw yellow glass doesn't hold a head or lace. Good clarity.
Aroma: Esters run peach and apricot, bit of alcohol, heady perfume quality.
Taste: Malt driven, earthy hops keep it from being sweet, mild farm, mild alcohol, tastes like a tripple.
Mouthfeel: Dry, medium body, fairly flat carbonation.
Overall: A nice beer. Mild soapy note in the beginning but it didn't last. If you like tripples, worth a try!

really surprised people havent liked this more than they have, we all found it to be quite tasty at the taproom here in dallas. maybe a little lighter on the malt base, and definitely less sweet than some, but i like both of those factors in this one. the yeast is great, really floral and spring timey, with a blooming sort of blossoming element, not lavender or jasmine or anything, there isnt that perfume aspect going on, but its floral nevertheless. i taste a little less wheat than i often do in the style, but there is a neat honey aspect to it. dried out rather well by the finish, and i get a sort of culinary herb thing too, sage and thyme, herbs rather than spices, different but still within the style guidelines. i think this makes a lot of sense in the context of texas heat, somewhat lighter on the weight and sweet. still quite strong though, even though you cant taste it at all, it definitely is loosening me up. i very much enjoyed the wide range of styles pouring here at community, they seem to have a solid grip on a whole bunch of different brewing traditions, and this belgian one is nicer than its getting credit for.

From BeerAdvocate Magazine #84 (Jan 2014):
We were really looking forward to this American-brewed Tripel, but unfortunately the sample we obtained was flat and unfinished; it’s a bottle-conditioned beer. It also poured very hazy, but did drop bright once the beer warmed up considerably. The entire experience missed the mark for us. We’ll have to revisit it one day.
STYLE: Tripel
ABV: 9.0%
AVAILABILITY: Year-round
LOOK: Hazy peach, no head
SMELL: Fruity, medicinal, pepper, biscuity
TASTE: Firm, flat, bubble gum, spicy, soft, bready malts, fruity, peppery, yeasty, semi-astringent finish
